1 package (2-1/2 ounces) thinly sliced deli ham, chopped
1 small onion, chopped
1/2 cup shredded Swiss cheese
1 large egg
1-1/2 teaspoons Dijon mustard
1/8 teaspoon pepper
1 tube (8 ounces) refrigerated crescent rolls

Steps:

  • Preheat oven to 375°. Combine the first six ingredients. Divide crescent dough into 24 portions. Press into greased mini muffin cups., Spoon 1 tablespoon ham mixture into each cup. Bake until golden brown, 13-15 minutes.

My family used to make these for special occasions, or random visitors! Basically a gougere! They can be baked and frozen then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste so I double the dry mustard. I'm guessing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha.

1 cup water
1/3 cup butter
1/2 teaspoon salt
1 cup flour
5 eggs
1 1/2 cups edam cheese or 1 1/2 cups gruyere cheese, shredded
1 cup ham, chopped (can be leftover baked ham or deli ham)
1/4 teaspoon dry mustard

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Combine water, butter, and salt in a saucepan and bring to a boil.
  • Add the flour all at once, stirring vigorously, until the batter leaves the sides of the pan and a ball of paste forms.
  • Remove from heat and allow to cool for about a minute.
  • Add eggs, one at a time, beating vigorously after each one until the dough is smooth.
  • Stir in cheese, ham, and dry mustard.
  • Place heaping teaspoonfuls on a lightly greased baking sheet.
  • Bake for 15 to 20 minutes until firm and golden.
  • IF FREEZING: Allow to cool completely and store in an airtight container between layers of wax paper.

1/2 cup mayonnaise
3 tablespoons 2% milk

3 tablespoons chopped sweet red pepper
1 tablespoon minced chives
1 tablespoon minced fresh parsley
1 garlic clove, minced
CREAM PUFFS:
1 cup water
1/2 cup butter, cubed
1/4 teaspoon seasoned salt
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1 cup all-purpose flour
4 large eggs
1 cup shredded cheddar cheese
1 tablespoon minced fresh parsley
1 tablespoon minced chives
Additional minced fresh parsley and chives

Steps:

  • In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. Cover and refrigerate until ready to use., In a large saucepan, bring the water, butter, seasoned salt, garlic powder and onion powder to a boil. Add flour all at once and stir until a smooth ball forms., Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in the cheese, parsley and chives., Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 20-25 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , Just before serving, fill cream puffs with ham mixture. Sprinkle with additional parsley and chives.

4 cups frozen broccoli florets, thawed and finely chopped
1 carton (8 ounces) spreadable chive and onion cream cheese
1 cup shredded Swiss cheese
1/4 pound thinly sliced deli ham, finely chopped
1/2 cup finely chopped fresh mushrooms
1/4 teaspoon salt
1 package (17.3 ounces) frozen puff pastry, thawed
2 large eggs, beaten

Steps:

  • In a large bowl, combine the first six ingredients. On a lightly floured surface, unfold puff pastry. Roll each sheet into a 12-in. square. Cut each into 16 squares. , Place a heaping tablespoonful of broccoli mixture in the center of each square. Brush edges of pastry with eggs. My friend Jane in Denver first served this to me in the 80's and I've been making ever since. Different way to use cooked ham, and very nice for a brunch-type serving. Mini ham and cheese souffles are baked until golden, then served with a mushroom sauce. You may substitute the mushroom sauce with another sauce if you wish.

8 ounces shredded Cheddar cheese
1 small green bell pepper, chopped
1 small onion, finely chopped
1 ¼ cups milk
½ cup crushed buttery round crackers
2 egg yolks
2 egg whites
1 (1 ounce) packet mushroom sauce mix

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease six (6 ounce) ramekins.
  • In a medium bowl, toss together the ham, Cheddar cheese, bell pepper, and onion. Stir in the milk, cracker crumbs, and egg yolks. In a separate bowl, whip egg whites with an electric mixer until stiff. Fold into the ham and cheese mixture. Spoon the mixture into the prepared ramekins. Place the ramekins on a baking sheet.
  • Bake for 40 to 50 minutes in the preheated oven, until puffed and golden. Prepare the mushroom sauce according to package directions.

A versatile, easy recipe for leftover mashed potatoes and ham. Serve with steamed green beans, cauliflower, corn on the cob, or broccoli. Concerning the seasonings, the exact cheese, the use of green onion, or maybe bacon instead of ham, feel free to experiment. 1 cup ham, cubed fully cooked
2 cups mashed potatoes, leftovers
1 cup cheddar cheese, shredded and DIVIDED
1/2 teaspoon parsley flakes
1/4 teaspoon garlic powder
1 teaspoon green onion (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 12 count muffin tin with cooking spray.
  • Mold biscuits to the shape of each biscuit cup. You will need to snip a bit from each in order to get 12 altogether-the biscuits I buy only have 8 in them.
  • In a large bowl, combine the ham, potatoes, 3/4 cup cheese, parsley, and garlic powder if using and green onion if using.
  • Divide ham mixture between the 12 cups.
  • Bake for about 25 minutes, or until done. (Use a toothpick to check if biscuit is done, then use a spoon to see if underside is brown enough, if not bake longer).
  • Sprinkle with remaining 1/4 cup of cheese and continue baking until cheese on top melts. (I put a large cooking sheet underneath so that the melting cheese does not mess up my oven).
  • Serve warm.
  • Refrigerate leftovers, or freeze.

2 package s (17.3 oz. each) frozen puff pastry, thawed

Steps:

  • 1. Preheat oven to 400 degrees F. Mix all ingredients except pastry.
  • 2. Cut pastry into circles with 2 1/2 to 3 inch round cookie cutter or pastry wheel. Spoon about 1 rounded teaspoon ham mixture on center of each circle; brush edges with water. Fold each circle over filling, pressing edges to seal.
  • 3. Place in ungreased jelly roll pan, 15 1/2 by 10 1/2 by 1 inch. Bake 18 to 22 minutes or until golden brown. Serve warm.

Deviled Ham Puffs image

2 drops tabasco sauce
1 tsp worcestershire sauce
4 1/2 oz deviled ham
8 slice white bread
1/2 lb cheddar cheese, shredded
3 eggs, slightly beaten
2 c milk
1 Tbsp pimentos, chopped
1 green pepper, chopped
salt and pepper, to taste

Steps:

  • 1. Grease shallow baking dish or 2 qt. casserole well.
  • 2. Blend Tabasco and Worcestershire sauce with deviled ham. Spread evenly onto each slice of bread. Cut bread into 1-inch squares.
  • 3. Place layer of bread in baking dish. Sprinkle with 1/2 of the cheese. Repeat. Blend eggs, milk, pimento, salt and pepper; pour over bread and cheese. Let stand for about 15 minutes.
  • 4. Bake in a 350ºF oven until puffed and brown, about 20 minutes.

2 tablespoons plus 2 teaspoons all-purpose flour
1/2 teaspoon salt
8 eggs
1 cup heavy whipping cream
2 cups cubed fully cooked ham
4 medium tart apples, peeled and thinly sliced
1/4 cup butter
1/4 cup sugar
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine flour and salt. Beat in the eggs until smooth. Divide ham among six greased 10-oz. custard cups. Top with egg mixture. , Bake at 450° for 15 minutes or until a knife inserted in the center comes out clean. Meanwhile, in a large skillet, saute the apples in butter. Sprinkle with sugar and cinnamon; cook until sugar is dissolved. Spoon into the center of each puff.
