Deep-Dish Hash Brown Ham and Cheese Quiche image

How to improve on ham-and-cheese quiche? Bake it in an uber-crispy hash brown crust for the perfect breakfast dish for a crowd.

1 1/2 sticks (12 tablespoons) unsalted butter, melted, plus more for greasing the pan
32 ounces frozen, shredded hash browns, thawed, drained if needed
7 large eggs
1 1/2 cups half-and-half
1 1/2 cups shredded mixed Gruyere and Swiss cheese
1/3 cup chopped fresh chives
4 ounces sliced deli ham, diced
Kosher salt and freshly ground black pepper

Steps:

  • Position an oven rack in the bottom third of the oven and preheat it to 425 degrees F. Generously grease a 9-inch springform pan with butter.
  • Toss the hash browns with the butter in a large bowl until well coated. Evenly press the hash browns into the bottom and up the sides of the prepared pan. Bake until deep golden brown and crispy, 40 to 45 minutes. Reduce the oven temperature to 350 degrees F.
  • Meanwhile, whisk the eggs and half-and-half in a large bowl until combined. Fold in the cheese, chives, ham, 1 teaspoon salt and a few grinds of black pepper. Pour the egg mixture into the potato crust and bake until the eggs are set, 40 to 45 minutes more.
  • Let cool in the pan for 10 minutes. Run a knife around the edge of the pan, unmold the quiche and transfer to a serving plate or cutting board.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Press hash brown potatoes between paper towels to remove excess moisture. Transfer potatoes to an 8-inch pie dish and press into the bottom and up the sides of the dish to form a crust. Drizzle with melted butter.
  • Bake in preheated oven until golden, about 25 minutes. Remove from oven and reduce heat to 350 degrees F (175 degrees C).
  • Combine ham, Cheddar cheese, onion, and bell pepper in a bowl; spread mixture over potato crust. Beat eggs, milk, salt, and black pepper in the same bowl; pour over ham mixture.
  • Bake in oven until eggs are set, 25 to 30 minutes.

3 cups (about 10 ounces) frozen hash browns, thawed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 small zucchini, diced (about 1/2 cup)
1/2 small red bell pepper, diced (about 1/2 cup)
1 ounce (about 1 slice) ham, chopped
1/3 cup shredded sharp Cheddar
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives
Large pinch cayenne
3 large eggs

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.
  • Meanwhile, melt the remaining tablespoon butter in the same skillet over medium-high heat. Add the zucchini and bell pepper and cook, stirring, occasionally, until slightly softened, about 3 minutes.
  • Spoon the vegetables into the crust and sprinkle with the ham and Cheddar.
  • Whisk the cream, chives, cayenne and eggs together in a bowl with 1/4 teaspoon salt. Pour the mixture into the crust. Bake the quiche until golden brown and just set in the center, 20 to 25 minutes.
  • Cool at least 10 minutes before serving. Serve warm or at room temperature.

This ham and broccoli quiche recipe is partially my own and partially from Barbie Anderson of my cooking club group. It's creamy, flavorful, and not too fattening! The recipe calls for deli ham, but I used leftover ham from Christmas and I think the thicker, diced ham made it taste great.

2 cups frozen shredded hash brown potatoes, thawed
½ teaspoon cracked black pepper, divided
2 tablespoons butter
2 sweet onions, chopped
2 cups frozen broccoli florets
1 tablespoon minced garlic
5 eggs
6 ounces garden vegetable cream cheese, softened
4 slices deli ham, chopped
¾ cup shredded Cheddar cheese
¾ cup shredded mozzarella cheese
1 ½ tablespoons shredded Parmesan cheese
1 teaspoon Italian seasoning
¼ teaspoon salt

Steps:

  • Coat a 9-inch microwave-safe pie plate with cooking spray. Spread hash browns over the bottom and up the sides to form a crust. Press potatoes down lightly and dust with 1/4 teaspoon cracked black pepper. Cook in the microwave on high for 2 minutes; remove from microwave and again press potatoes down lightly.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a large nonstick skillet over medium heat. Add onions and cook until soft, 5 to 6 minutes. Add broccoli and garlic; reduce heat to medium-low. Cover and cook until broccoli is crisp-tender, 4 to 5 minutes. Remove from heat and allow to cool.
  • Beat eggs in a bowl using an electric mixer on medium speed until blended. Add cream cheese and beat until almost smooth. Stir in ham, Cheddar cheese, mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and remaining 1/4 teaspoon cracked black pepper.   • DIRECTIONS: Pre-heat the oven to 400. Lightly mist a 9" pie plate with cooking spray and set aside. Place the shredded potatoes in a large mixing bowl and drizzle with the melted butter. How to make Hash Brown Ham and Cheese Quiche!

3 cups shredded hash browns
4 Tbs. butter, melted
1 cup chopped ham (or you could use browned sausage or crisp cooked bacon)
1 1/2 cups shredded cheddar cheese
1 cup half and half
4 eggs, beaten
1/2 tsp. salt
1/2 tsp. black pepper
dash seasoned salt
dash Tabasco sauce

Steps:

  • Thaw hash browns and then press between paper towels to remove any excess moisture. If you don't do this, the crust will be a little soggy. Just get the extra moisture out of them, they don't have to be completely dry.
  • Melt the butter in a deep pie plate or a quiche dish.
  • Toss the hash browns with the butter to coat and then press in the pie plate like a crust. Make sure to go up the sides. Pat until it is tight. Place in a preheated 450 degree oven for about 25 minutes until it is just browning and crispy. Watch in the last 5 minutes and don't let it burn or brown too much.
  • Saute the chopped ham in a about 1 Tbs butter until it's just slightly browned.
  • Place the browned ham in the potato crust once you remove it from the oven.
  • Mix all of the other ingredients and pour over the ham. Make sure the cheese is distributed evenly over all. I place the pie plate or quiche dish on a cookie sheet or pizza pan before filling it. This will catch any spillovers and make it easier to take it in and out of the oven. Reduce the temperature of the oven to 350 degrees. Bake the quiche for 30 minutes. It should be just browning on top when done.
