3 tablespoons butter
1/4 to 1/2 teaspoon curry powder
1/4 cup all-purpose flour
3/4 cup whole milk
2 to 3 teaspoons prepared mustard
1 teaspoon grated onion
2 cups coarsely ground fully cooked ham
2/3 cup dry bread crumbs
1 large egg, room temperature, beaten
2 tablespoons water
Oil for deep-fat frying
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
Dash pepper
1-1/4 cups whole milk
1/2 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese

Steps:

  • In a saucepan, melt butter; stir in curry powder and flour. Gradually add milk. Bring to a boil; cook and stir until thickened, 2 minutes. Remove from the heat. Stir in mustard and onion; add ham and mix well. Cover and chill thoroughly. , With wet hands, shape mixture into 10 balls. Roll balls in bread crumbs; shape each into a cone. Whisk together egg and water. Dip cones into egg mixture; roll again in crumbs. , Heat oil in an electric skillet or a deep-fat fryer to 375°. Fry croquettes, a few at a time, until golden brown, 2 to 2-1/2 minutes. Drain on paper towels; keep warm. , For the cheese sauce, melt butter in a saucepan; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, 2 minutes. Reduce heat. Add cheeses; stir until melted. Spoon over croquettes.

1-1/2 teaspoons vinegar
1 tablespoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
4 drops hot pepper sauce
1 cup heavy whipping cream, whipped

Steps:

  • In a small bowl, combine first six ingredients. Gently fold in whipped cream. Chill. Serve with sliced ham, ham loaf or ham balls.

2 cups cold mashed potatoes
2 cups ham, diced
1/2 cup cheddar cheese, grated
1/4 cup scallion, sliced
1/4 teaspoon salt
2 teaspoons vegetable oil
1/2 cup sour cream
2 teaspoons prepared horseradish
2 teaspoons grainy mustard
1/4 teaspoon black pepper

Steps:

  • Mix patty ingredients in a medium bowl.
  • Form into 8 1/2-inch thick patties.
  • Heat 1 teaspoon oil in each of two medium nonstick skillets (or cook 1 batch at a time in 1 pan).
  • Add 4 patties to each pan and cook over medium heat, turning over patties 2-3 times until golden brown, about 5 minutes.
  • Meanwhile, stir sauce ingredients together in a small bowl until blended. Serve with patties.

I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

½ cup all-purpose flour
1 cup milk
½ teaspoon salt

1 tbl butter
1/2 cup onion (chopped)
3 green onions (medium, chopped)
1 tsp garlic powder
4 c ham chopped fine
2 cups shredded cheddar cheese
3 cups dried breadcrumbs (divided)
4 eggs (divided)
salt and pepper to taste
oil for frying
MUSTARD SAUCE
1/2 c mayonnaise
2 tbl horseradish or to taste
2 tbl honey mustard
salt and pepper to taste

Steps:

  • 1. Melt butter in a large skillet over medium heat. Stir in onion, green onions, and garlic; cook until tender, about 10 minutes. Transfer contents of skillet to a large bowl. Stir in ham, Cheddar cheese, and 1 1/2 cups of bread crumbs. Beat 3 eggs; stir into ham mixture. Sprinkle with salt and pepper. Using your hands, make golf ball-size balls out of the ham mixture. Heat vegetable oil in a large skillet over medium heat. Spread remaining bread crumbs onto a plate. In a large bowl, beat 1 egg; stir in water. Dip balls into egg mixture, and roll in bread crumbs. Place balls in hot oil being careful not to crowd. Fry until golden brown. Remove to paper towels to soak up grease.
  • 2. for the mustard sauce mix all ingredients together. serve with the ham croquettes
