CHEESY HAM CASSEROLE
This easy cheesy ham casserole is the perfect way to use up your leftover ham and stretch it to feed a crowd!

Steps:
- Preheat oven to 400°F. Mix together topping ingredients, set aside.
- Cook shells al dente according to package directions. Drain well.
- Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.
- Slowly add in cream and milk while whisking after each addition. The mixture will seem thick at first but will smooth out with each addition.
- Once all of the cream/milk is added, whisk while bringing to a boil over medium heat. Allow to boil 1 minute.
- Remove from heat and stir in 2 ½ cups cheddar, gruyere cheese, and parmesan until smooth.
- Mix cheese sauce with cooked pasta and ham and place in a 9x13 pan. Add topping and remaining ½ cup of cheese.
- Bake 22-26 minutes or until heated through and topping is browned. Cool 5 minutes before serving.

MOTHER'S HAM CASSEROLE

- Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. Bake until heated through, 25-30 minutes.

This is one of our favorite ways to use up leftover Easter ham.

- Cook pasta according to directions. Drain. Set aside.
- Cook veggies according to directions. Drain. Set aside.
- Prepare sauce according to directions.
- Place pasta, ham, veggies and mushrooms in a large microwave safe bowl.
- Add sauce and soup. Stir gently to mix well.
- Microwave on high for 2 minutes or until heated through.
HEARTY HAM CASSEROLE
I first made this filling casserole for a camping trip with friends, adding potatoes and soup to stretch the recipe. It was a big hit. It's a great all-in-one meal that's sure to please your hungry eaters all year-round.

- Cook potatoes in boiling salted water until tender; drain. Peel and cube; set aside. Cook the broccoli according to package directions, omitting salt; drain and set aside. , Preheat oven to 350°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add flour and pepper; stir until smooth. Gradually add milk; cook and stir until mixture boils and thickens. - Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes, celery, and carrot in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer to a 2-quart baking dish.
- Melt 3 tablespoons butter in a large skillet over medium heat; cook and stir ham, green bell pepper, and onion until vegetables are tender, about 5 minutes. Transfer ham mixture to baking dish and mix with potatoes.
- Melt remaining 1/4 cup butter in a clean skillet; cook and stir flour in melted butter until smooth, about 3 minutes. Gradually stir in milk and season with salt and black pepper. Bring to a boil, stirring constantly, until thickened, about 2 minutes. Add Cheddar cheese; stir until melted. Pour cheese mixture over ham and potatoes. Sprinkle with bread crumbs.
- Bake in preheated oven until bubbly, 25 to 30 minutes. Allow casserole to rest for 5 to 10 minutes before serving.
