CREAMY HAM AND PENNE PASTA



Creamy Ham and Penne Pasta image

Zesty diced tomatoes, ham and peas combine with penne pasta in a creamy sauce

Number Of Ingredients 6

8 ounces dry penne pasta, uncooked
1/2 cup frozen green peas
1 can (10 oz each) Ro*Tel® Mild Diced Tomatoes & Green Chilies, undrained
1 pkg (8 oz each) 1/3 less fat cream cheese (Neufchatel), cubed
1/2 cup shredded sharp Cheddar cheese
3/4 cup chopped fully cooked lean ham

Steps:

  • 1. Cook pasta according to package directions, omitting salt; add peas last 2 minutes of cook time. Drain; set aside and keep warm.
  • 2. In pan used for pasta, combine all remaining ingredients. Cook and stir over medium heat until cheese melts and mixture is bubbly. Stir in pasta and peas.

1 package (16 ounces) penne pasta
1/4 cup olive oil
3 tablespoons butter
3 cups cubed fully cooked ham
1 large sweet red pepper, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 can (14-1/2 ounces) chicken broth
1 tablespoon lemon juice
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half. Add pasta; toss to combine. Sprinkle with cheese.

1 pound fresh asparagus, cut into 1-inch pieces
1 large onion, chopped
1/4 cup butter

Shredded Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute asparagus and onion in butter for 5-8 minutes or until asparagus is crisp-tender., Add the ham, cream, pepper and salt; bring to a boil. 16 ounces penne pasta, cooked and drained (measure 16 ounces uncooked, I use half of a 900-gram package)
3 cups cubed cooked ham (or use as much as desired)
5 tablespoons butter
1 teaspoon mustard powder
1 teaspoon ground black pepper
1 teaspoon seasoning salt (or 1/2 teaspoon white salt)
1/4 teaspoon cayenne pepper (optional or to taste)
1 small onion, finely chopped
1 tablespoon fresh minced garlic (or to taste)
1/4 cup all-purpose flour
3 cups half-and-half cream (or use half milk and cream)
2/3 cup grated parmesan cheese, divided
4 1/2 cups grated cheddar cheese (a little more won't hurt)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Place the cooked penne and the ham into a large bowl; set aside.
  • In a medium saucepan melt butter over medium heat.
  • Add in mustard powder, black pepper, seasoned salt and cayenne pepper and onion, stir and cook for about 4 minutes.
  • Add in garlic; cook stirring for 2 minutes.
  • Add in flour and mix continously for 2 minutes.
  • Slowly add in the cream and 1/3 cup Parmesan cheese; cook stirring over medium-low heat until bubbly.
  • Reduce heat to low and stir in the cheddar cheese until completely melted.
  • Pour the sauce over the cooked pasta and ham; toss until well combined.
  • Transfer to a greased baking dish.
  • Sprinkle the top with about 1/3 cup or more Parmesan cheese.
  • Cover and bake in a 350 degree F oven for about 45 minutes or until hot and bubbly.

I make this dish with leftover ham from Christmas and Easter. Everyone always looks forward to it. I've tweaked it from the original recipe but found that my tweaks made it taste out of this world!

1 lb uncooked penne pasta
3 c cubed fully cooked ham
1 large sweet red pepper, diced
1 medium onion, chopped
1/4 c minced fresh parsley
2 clove garlic, minced
1 1/2 tsp minced fresh basil or 1/2 tsp. dried basil
1 1/2 tsp minced fresh oregano or 1/2 tsp. dried oregano
1/4 c olive oil
3 Tbsp butter
1/2 Tbsp ham flavored soup base
2 c water
1 Tbsp lemon juice
1/2 c shredded parmesan cheese

Steps:

  • 1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute the ham, red pepper, onion, garlic, parsley, basil and oregano in oil and butter for 4-6 minutes or until ham is browned and veggies are tender.
  • 2. Stir in ham base, water and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until liquid is reduced by half. Drain pasta; stir into ham mixture. Sprinkle with parmesan cheese.

"Al Baffo" is said to be the abbreviated version of an Italian expression "da leccarsi i baffi," which translates to "it is so good you'll lick your whiskers," because the sauce is abundant, thick and creamy. Tomato, ham and cream come together in this simple pasta sauce to form a comforting and easy weeknight meal. Cooked ham (as Italians call it, "prosciutto cotto"), is a hearty addition, as it provides texture and necessary salt. This recipe calls for deli ham, but you can substitute prosciutto or even pancetta if the mood strikes. An extra shower of Parmigiano before serving is a must for this filling meal.

3 tablespoons extra-virgin olive oil
1 shallot, minced
2 garlic cloves, thinly sliced
1 teaspoon red-pepper flakes
8 ounces sliced deli ham, cut into little squares
1 (28-ounce) can tomato passata (purée)
1 pound penne
3/4 cup heavy cream
1/2 cup grated Parmigiano-Reggiano, plus more for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add the olive oil to a large skillet and heat over medium. Add the shallot, garlic and red-pepper flakes. Cook, stirring often, until shallots and garlic soften but are not yet brown, 2 to 3 minutes. Add the ham and stir to coat, 1 to 2 minutes.
  • Add the tomato purée. Add ¼ cup of the boiling salted water from the pot to the can, stir to loosen any purée, then add the liquid to the pan. Season the sauce with salt. Increase the heat to medium-high and bring it to a boil, and then reduce the heat to medium-low and simmer for 10 minutes.
  • While the sauce simmers, cook the pasta in the boiling water according to package instructions until al dente; drain well.
  • Reduce the heat to low and then add the cream, cheese and salt; stir to combine. Add the drained pasta, and toss to coat. Transfer pasta to a serving dish and top with more cheese.
