Delicious cheesy ham and onion pie. Great if you have leftovers.

Number Of Ingredients 14

2 cups all-purpose flour
1 teaspoon salt
⅔ cup shortening
4 tablespoons ice water
1 ½ cups diced ham
2 onions, thinly sliced
1 clove garlic, minced
½ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup butter
3 baking potatoes, thinly sliced
3 cups shredded Jarlsberg cheese
2 eggs
⅓ cup light cream

Steps:

  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse meal. Gradually add water. Blend with fork until mixture forms a ball and leaves the sides of the bowl. Roll out half of the pastry on a lightly floured board to fit a deep dish 9 inch pie plate. Cover and refrigerate. Wrap remaining pastry in plastic wrap. Refrigerate.
  • Saute the ham, onion, garlic, salt, and pepper in 2 tablespoons butter or margarine until tender. Cool to room temperature.
  • Saute potatoes in remaining 2 tablespoons butter or margarine until crisp and tender. Season to taste with salt and pepper.
  • Layer half of the cheese, ham mixture, and potatoes into the prepared crust. Repeat. Blend eggs and cream, and pour two-thirds over potatoes. Roll out remaining pastry on a lightly floured board to cover pie. Brush rim of crust with the egg and cream mixture. Top with second half of pastry. Trim and pinch edges to seal. Flute. Brush the top with remaining egg mixture, and trim with the pastry trimmings.
  • Bake at 350 degrees F ( 175 degrees C) for 45 minutes, or until pie is golden.

This is a new recipe I created tonight by taking my Potato Onion Pie recipe, changing it up and making it into a delicious main dish meal. All you need is a tossed green salad, some crunchy bread and butter, and dinner is served. It is truly company worthy. Enjoy!

**no crust is needed!
2 pounds of red potatoes, sliced very thin
1 medium onion, peeled, cut in half and sliced thin
salt and pepper to taste (go light on the pepper)
4 teaspoons minced garlic
1 cup of good grated cheddar cheese
1/4 cup grated pepper jack
2/3 cup heavy cream
1/4 cup grated parmesan cheese
4 or more slices of boiled deli ham, cut into one inch narrow strips.

Steps:

  • 1. GET READY: Pre-heat oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
  • 2. LAYER THE PIE: Scatter 2 teaspoons of garlic evenly on the bottom of a Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Add 1/2 of the ham. Sprinkle 1/2 cup of the cheddar cheese and the pepper jack cheese over the onions evenly. Repeat the layer of garlic, potatoes, onions, salt, and pepper, and ham. Add the cream evenly over the top, and then add the remaining 1/2 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese. Cover the pie plate with foil. Bake 35 minutes, then remove foil and bake 35 minutes more until golden brown and the pie is set.
  • 3. TO SERVE: Lightly tent the pie for a few minutes and then cut into wedges to serve. Enjoy!

Filling
¼ cup butter
2 thinly sliced yellow onions
1½ cups diced ham
½ teaspoon salt
⠛ teaspoon ground black pepper
1 minced garlic clove
3 cups shredded Swiss cheese plus more for topping
3 thinly sliced large baking potatoes
⠓ cup light cream
2 eggs
Pastry
2 cups all-purpose flour
⠔ cup shortening
4 tablespoons ice water
1 teaspoon salt

Steps:

  • Filling Sauté the onions and ham with the garlic in 2 tablespoons of the butter in a skillet until tender, then let the mixture cool. Preheat the oven to 350 degrees F. Sauté the potato slices in the rest of the butter until tender, then add salt and pepper Layer half of the cheese, potatoes and ham mixture in the pie crust, then repeat. Whisk the cream and eggs, then pour over the pie filling. Top with more grated swiss cheese Bake for 45-50 minutes until crust is golden brown and cheese throughout is bubbly.
