2 chicken breasts
2 slices ham (large slice)
1/4 teaspoon pepper
1/4 teaspoon five-spice powder
1 garlic clove, crushed
2 spring roll wrappers
flour, for dusting
1 egg
2 tablespoons milk
oil, for deep frying

Steps:

  • Place one chicken breast between plastic wrap or freezer bags and bash it until it is nice and thin -- repeat with the other breast.
  • Mix the pepper, five spice and crushed garlic.
  • Sprinkle the mixture over both breasts.
  • Roll up one slice of ham and place it on the chicken breast.
  • Roll the chicken up firmly and fold the ends under.
  • Whisk the egg and milk together.
  • Coat the chicken with flour (easiest in a freezer bag) shake off the excess.
  • Dip in the egg mixture -- shake of the excess.This step will stop the chicken from separating from the spring roll wrapper.
  • Place the chicken "roll" diagonally across the spring roll wrapper. Brush some of the egg mixture on the ends of the wrapper.
  • Roll the chicken, tucking the ends in as you roll.
  • Deep fry in oil until golden brown and cooked through. Don't have the oil too hot -- otherwise the spring roll wrappers will brown before the chicken is cooked.
  • Drain on paper towels and then cut on the diagonal.
  • Serve on a bed of lettuce with dipping sauces.
  • Serve with your favourite sauce.

4 boneless, skinless chicken breasts, 6 to 8 ounces, butterflied into large cutlets*
Salt and pepper
2 tablespoons chopped sage leaves
8 slices prosciutto, other deli sliced meat that is not smoked may be substituted
1/2 pound fontina cheese, thinly sliced, Italian or Danish, available in specialty cheese case usually located near deli section of larger markets
1/2 cup all-purpose flour, plus 1 tablespoon
1/4 cup extra-virgin olive oil
2 tablespoons butter
8 baby portobello (crimini) mushrooms, sliced
1 cup chicken stock, available in boxes on soup aisle, chicken broth may be substituted
2 cloves garlic, chopped
1 pound triple washed spinach

Steps:

  • Heat a large nonstick skillet over medium heat. Preheat oven to 400 degrees F.
  • Place cutlets on a plastic cutting board and season with salt and pepper. Top with chopped sage, 2 slices prosciutto each and a few thin slices of fontina. Roll tightly and secure with toothpicks. Season outside of rolls with more salt and pepper, then dredge in flour.
  • Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan and 1 tablespoon butter to the pan. Add chicken and raise heat to medium high. Brown the rolls evenly, 5 minutes, then place on a nonstick cookie sheet and transfer to oven to roast for 15 minutes longer. Add another tablespoon butter to the pan and melt it. Add mushrooms to the pan and cook, stirring frequently, until just tender 3 or 4 minutes. Add flour and cook another minute. Whisk in stock. Season pan gravy with mushrooms with salt and pepper and turn off heat. Reheat with moderate flame when you remove chicken rolls from the oven and you are ready to serve.
  • Preheat a second skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and the garlic. Add the spinach to the pan in bunches and turn to wilt. Add more spinach as it wilts down until all the spinach is in the pan. Season with salt and pepper, to taste and serve warm.
  • To plate, leave rolls whole and spill sauce over top, spinach alongside, or, slice rolls and fan them out over a bed of spinach and top with mushroom sauce.
  • *Ask butcher to butterfly the breasts into large cutlets for you. This is a real time-saver! If a butcher is not available to you, cut into each breast from the fatter side and work across the breast, leaving them attached at the opposite side. Open the breast up and pound lightly with a mallet to about a 1/4-inch thickness. Also, in many supermarkets chicken cutlets are available in packages. They are small pieces of thinly sliced breast meat. Simply adapt the method and make 2 small roll-ups rather than 1 large roll up per portion.

Ingredients
3 large skinless chicken breasts, de-boned
10 pcs. sliced sweet ham, each slice divided into 4 strips
1 block quickmelt cheese, sliced into 1/4″ strips
white pepper powder
salt
lumpia, spring roll wrappers, about 40 pcs.
1/2 cup flour
2 cups bread crumbs
cooking oil
2 tbsp butter
2 tbsp cornstarch
1 cup milk

Steps:

  • Preparing the chicken: Slice chicken breast into thin slices. Place chicken slice in between waxed kitchen paper and using a kitchen mullet pound the chicken slices to make it thinner. Cut the chicken slices to about 2" X 4"sheets, keep aside. To Assemble: In a large plate place one piece of lumpia wrapper. Place on top 1 sheet of chicken followed by ham then the cheese strips. Roll lumpiawrapper halfway, fold both ends, now fully roll and wet the end of flap with water to seal. Repeat process with the rest and keep aside. Wrapping batter: Dilute the flour with water just enough to form a sauce like batter. Frying:Heat generous amount of oil in a wok. Now dip each roll in the wrapping batter then roll in the bowl of breadcrumbs until evenly coated. Deep fry at medium to low heat for 2-3 minutes or until it turns to golden brown. Dipping sauce: To make the roux heat butter in a pan until it start to smoke, stir in the cornstarch until it forms into a lump. In a separate sauce pan heat the milk until it start to boil. Add in the roux and simmer for 1 to 2 minutes stirring occasionally until sauce thickens. Season with salt and white pepper to taste.
