CROCK POT CHEESY SCALLOPED POTATOES AND HAM
We made the Kicked Up creamy version of this recipe and that is just exactly what it was. We like that this is cooked in the Crock Pot... makes for a very easy meal. Great if you have leftover holiday ham. The cheese sauce is just enough... it's so good!

Steps:
- 1. Regular version: In a large bowl mix the two soups and feel free to add a tiny splash of milk, then add the onion, hams and seasonings. Slice the potatoes in half and then into slices; add to soup and mix well. Put into the crock pot, and add a sprinkle of paprika. Cook on high 4 hours or low 7-8 hours. Sprinkle the cheddar on top during last 10 min.
- 2. Kicked Up version: Place peeled potatoes in a bowl of water. Melt the butter over med-high heat, cook and stir a few mins. Then whisk in the flour and stir. Add 1 cup of the evaporated milk and stir over med-high heat until bubbly and thickened; you may need the whole can.
- 3. Stir in the cheddar soup, Swiss and cheddar cheese and seasonings, stir till melted and creamy. (You will not use the mushroom soup in this version :)
- 4. Slice potatoes in half and then into slices. Place in a large bowl, along with onions and ham; mix well. Place in crock pot and cook the same as regular version. Let stand 10 min prior to serving.
- 5. Some people like to layer the ingredients, instead of mixing in a bowl. I like it all mixed so the flavors marry. Use your preference!

- Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
- In a saucepan over medium heat, toast flour until golden. Stir in cornstarch, lemon pepper and onion powder. Gradually whisk in milk, then chicken bouillon. Cook, stirring, until sauce is thickened. Remove from heat, and stir in Cheddar cheese until smooth.
- Layer potatoes and ham in prepared baking dish. Pour sauce evenly over potatoes and ham.
- Bake in preheated oven for 1 hour. Let sit 5 minutes before serving.

- Spray crock pot with Pam.
- Mix soup and milk together in a bowl.
- Layer some of the potatoes, some of the salt + pepper, some of the onions, some of the soup, some of the cheese, and some of the ham.
- Repeat layers using equal amounts of each.
- Cook on high for about 2 hours, then turn to low and cook about 5 hours more or until potatoes are tender.
- Make sure to stir occasionally.
- May need to add more milk if necessary.
- All crock pots are different, this is the cooking time for mine, cooking times may vary.

- Preheat oven to 350.
- Cut ham into small cubes and set aside.
- Peel and slice potatoes, put them in a bowl with enough water to cover them.
- Heat the butter in a medium sized pan over medium heat.
- Add the onions and cook until soft but not brown.
- Add the flour and stir to make a roux.
- Add the milk and stir constantly.
- Once it comes to a gentle boil turn heat down and let the sauce cook for 2 minutes, stirring occasionaly.
- Stir in the italian seasoning, salt, pepper, and nutmeg.
- In a greased 2 quart baking dish put a layer of half the potatoes followed by half the ham.
- Pour half the white sauce followed by half a cup of cheese.
- Make another layer of potatoes and ham and pour the remaining sauce over the top.
- Cover and bake at 350 for 50 minutes.
- Remove from oven and top with remaining cheese and bake for another 20 minute or until the potatoes are tender.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
- Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. SLOW COOKER CHEESY POTATOES AND HAM
I made this on accident when I realized the ham had produced too much water and was turning my baked potatoes into a soup. The table was quiet the night was ate this!

- 1. Wash and chop potatoes. The bigger the pieces, the longer it will take to cook.
- 2. Chop the ham. You can use lunch meat or leftover ham. Whichever you have on hand :) add as much as you want.
- 3. Layer in the following order in the crock pot: potatoes, Italian dressing mix, ham, bacon bits, handful of cheese. Repeat until all ingredients are used.
- 4. Pour cream of chicken soup on top. Stir it a little. Let it cook for at least 6 to 8 hours on low, 5 on high until potatoes are soft. Stir it every now and then.

- Heat oven to 400°F. Spray 18x13-inch rimmed sheet pan with cooking spray. Place 12x10-inch piece of foil in center of pan.
- In large bowl, mix 2 tablespoons of the butter, the garlic and 1/4 teaspoon of the pepper. Make 12 thin cuts in ham, leaving bottom 1/2 inch uncut. Place one halved slice of cheese in each cut. Brush ham all over with butter mixture. Place on foil in center of pan. Pull up all four sides of foil around ham. Cover ham tightly with another piece of foil. Roast 18 minutes.
- In same large bowl, mix 1 tablespoon of the butter, the salt and remaining 1/4 teaspoon pepper. Add potatoes; toss to coat. Place potatoes skin sides down in single layer in pan around ham. Roast 26 to 30 minutes or until tender when pierced with knife. Remove from oven; stir.
- Add asparagus and remaining 1 tablespoon butter to same bowl, and toss to coat; arrange in single layer in pan next to potatoes. Roast 12 to 15 minutes longer or until ham is heated through (140°F), potatoes are browned and fork-tender, and asparagus is tender. Remove foil from top of ham, and drizzle with honey. Sprinkle chives over entire pan. Spoon juices from ham over ham slices when serving.
CHEESY HAM AND POTATOES
My family loves having this on a cold day, it really warms them up. It's thick like a stew so I love to serve it with homemade dinner rolls, so they can dip them in the gravy. Oh so yummy and it is easy on the pocket book.

- 1. Mix the first six(6) ingredients together in a six to eight quart slow cooker until well blended.
- 2. Stir in your cubed ham and potatoes.
- 3. Turn your slow cooker to low and cook for 6-8 hours.
- 4. When done turn off your slow cooker and stir in your cheddar cheese until it's all melted. Serve with rolls,toast or biscuits!
