ASPARAGUS, HAM, AND CHEESE MELTS



Asparagus, Ham, and Cheese Melts image

1/2 cup freshly grated Parmesan (about 1 1/2 ounces)
1/4 cup mayonnaise
1 pound thin asparagus
4 slices Italian or other white bread
2 teaspoons unsalted butter, softened
1/4 pound sliced cooked ham

Steps:

  • Preheat broiler.
  • In a small bowl stir together Parmesan and mayonnaise. Trim asparagus to fit bread and arrange asparagus in a skillet just large enough to hold it in one layer. Add 1/2 inch salted cold water and cook asparagus, covered, over moderately high heat 5 minutes, or until just tender. In a colander drain asparagus well.
  • Arrange bread on a baking sheet and butter top of each slice. Broil bread about 6 inches from heat until golden, about 2 minutes. Turn bread over and arrange ham on each slice, folding or trimming to fit if necessary. Arrange asparagus on ham and spread with Parmesan mixture. Broil sandwiches about 3 inches from heat until golden, 1 to 2 minutes.

1 (16.3 ounce) can Pillsbury® Grands!® refrigerated biscuits (any variety)
8 slices American cheese
8 ounces thinly sliced deli ham
1 egg
1 teaspoon water

Steps:

  • Heat oven to 375 degrees F. Press 4 biscuits into 5-inch rounds on ungreased large cookie sheet. Top each with 2 slices cheese and 2 ounces ham.
  • Press remaining 4 biscuits into 6-inch rounds; place over ham. Press edges with fork to seal. Beat egg and water with fork; brush over biscuits.
  • Bake 13 to 18 minutes or until golden brown. Cut each in half. Serve warm.

Rachael's note: Serrano ham is similar to prosciutto and available at deli counter or in pre-sliced packages near the deli. If you can't find it, go for the prosciutto. Preheat grill pan or outdoor grill to medium-high. Manchego is the most commonly found Spanish import cheese in markets today. Look for it with the imported cheeses offered in your market. Look for giardiniera (hot veggies salad) at the salad bar station in your market or, in jars on international foods aisle.

8 slices crusty bread from a good-sized loaf, 1/2-inch thick, at least 5 inches across and 3 inches wide
1/3 pound thinly slices serrano ham
1/3 to 1/2 pound manchego, thinly sliced with sharp knife or cheese plane
1 cup hot pickled vegetable salad of cauliflower, carrots, celery and hot peppers (giardiniera) drained,
1/2 cup sweet pickled red pepper relish or sweet pickle relish
2 cups mixed good quality olives
2 tablespoons fresh thyme leaves, finely chopped
1 tablespoon lemon zest
1 teaspoon cumin seeds
1 teaspoon red pepper flakes
Extra-virgin olive oil, for drizzling

Steps:

  • Layer serrano and cheese in equal amounts on 4 slices of bread. Grind the hot pickled vegetables and the sweet pickle relish in food processor and pulse chop to make a relish. Spread the relish evenly on sandwich tops and set into place.
  • Place olives in a foil pouch and season with thyme, lemon zest, cumin seeds and red pepper flakes. Drizzle with extra-virgin olive oil and seal the pouch. Place pouch on grill and cook a few minutes on each side to heat the olives, herb and spices.
  • Preheat grill or grill pan to medium high.
  • Place sandwiches on grill and weight down with heavy skillet or a brick covered in foil. Char and heat the sandwiches through, about 2 to 3 minutes on each side.
  • Cut sammies in half and serve with "Hot" Olives alongside.

My followers may have noticed by now that my family loves anything we can make with Grands biscuits. This is another great way to use these biscuits to take the dull out of a sandwich.
