EASY BROCCOLI AND HAM QUICHE
This quiche has great flavor and can be used for breakfast, lunch, or dinner. It tastes just as great the next day for leftovers! Use your favorite cheese!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Press the pie crust ito a 9-inch pie plate; set aside.
- Place broccoli in a glass bowl. Cover bowl with plastic wrap. Cook broccoli in microwave in 1-minute intervals until evenly heated through, about 5 minutes total; set aside.
- Melt butter in a large saucepan over medium heat. Saute onion and garlic in melted butter until slightly translucent, about 5 minutes.
- Stir ham and broccoli into the onion mixture and transfer to the pie crust.
- Beat Cheddar cheese, milk, eggs, and black pepper together in a bowl; pour over the ham mixture. Sprinkle paprika over the entire quiche.
- Bake in the preheated oven until a knife inserted into the center of the quiche comes out clean, 30 to 45 minutes.

HAM AND BROCCOLI QUICHE
Steps:
- Heat oven to 375 degrees F. High Altitude (3500-6500 ft): Heat oven to 375 degrees F.
- Make pie crust as directed on box for one-crust filled pie using 9-inch glass pie pan.
- Layer ham, cheese and thawed broccoli in pie crust-lined pan. In medium bowl, beat all remaining ingredients until well blended. Pour over broccoli.
- Bake 35 to 45 minutes or until knife inserted in center comes out clean.
- High Altitude: Bake at 45 to 55 minutes; during last 15 minutes of baking, cover edge of crust with strips of foil to prevent excessive browning.
- Let stand 5 minutes before serving. Cut into wedges.

- Preheat oven to 400 degrees F (200 degrees C). Remove pie crust from the refrigerator and allow it to come to room temperature, about 15 minutes.
- Unroll the unbaked crust and press it firmly without stretching into the bottom and sides of a glass pie plate. Prick the crust all over with a fork.
- Bake in the preheated oven until lightly browned, 11 to 13 minutes. Remove from oven and reduce temperature to 375 degrees F (190 degrees C).
- Place broccoli in a microwave-safe bowl and cook in the microwave to desired tenderness, 3 to 5 minutes.
- Layer ham, Swiss cheese, and broccoli in the crust-lined plate. Combine eggs, milk, dry mustard, salt, and black pepper in a bowl; pour over broccoli.
- Bake in the hot oven until a knife inserted in the center comes out clean, 35 to 45 minutes. Let stand 10 minutes before serving.

HAM AND BROCCOLI QUICHE WITH HASH BROWN CRUST
This ham and broccoli quiche recipe is partially my own and partially from Barbie Anderson of my cooking club group. It's creamy, flavorful, and not too fattening! The recipe calls for deli ham, but I used leftover ham from Christmas and I think the thicker, diced ham made it taste great.

- Coat a 9-inch microwave-safe pie plate with cooking spray. Spread hash browns over the bottom and up the sides to form a crust. Press potatoes down lightly and dust with 1/4 teaspoon cracked black pepper. Cook in the microwave on high for 2 minutes; remove from microwave and again press potatoes down lightly.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a large nonstick skillet over medium heat. Add onions and cook until soft, 5 to 6 minutes. Add broccoli and garlic; reduce heat to medium-low. Cover and cook until broccoli is crisp-tender, 4 to 5 minutes. Remove from heat and allow to cool.
- Beat eggs in a bowl using an electric mixer on medium speed until blended. Add cream cheese and beat until almost smooth. Stir in ham, Cheddar cheese, mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and remaining 1/4 teaspoon cracked black pepper. Stir in cooked broccoli mixture and pour into hash brown crust.
- Bake in the preheated oven until edges are puffed and a knife inserted in the center comes out clean, 45 to 50 minutes. Let stand 10 minutes before slicing.

- Preheat the oven to 400 degrees F (200 degrees C).
- Lightly flour the bottom of a 9-inch pie or quiche pan and fit crust into the pan, all the way up to the edge. Lightly prick the bottom and sides of the pastry, 1 1/2 inches apart.
- Cut parchment paper to fit the bottom of the pan, place parchment on the pastry, and put pie weights or dried beans on top of the parchment.
- Bake on the center rack of the preheated oven for 10 minutes. Place pan on a wire rack, remove the weights and the paper, and allow to cool completely, about 30 minutes.
- Meanwhile, fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add broccoli and cook uncovered until softened, about 5 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
- Reduce oven temperature to 375 degrees F (190 degrees C).
- Break eggs into a large bowl and whisk until yolks and whites are combined. Add milk, salt, nutmeg, and pepper, whisking until well combined.
- Sprinkle broccoli, ham, Gruyere cheese, and chives evenly over the crust. Pour egg mixture over the filling.
- Set quiche on a baking sheet and place on the center rack of the oven. Bake until egg mixture is set, 45 to 50 minutes. Insert a knife in the center of the quiche to test for doneness; quiche is done when the knife comes out clean. Pace pan on a wire rack to cool for about 10 minutes. Serve warm.

Steps:
- Preheat oven to 425 degrees.
- Line quiche dish or large glass pie pan with unbaked pie crust.
- Combine ham, cheese onion and broccoli and put in quiche dish. Beat remaining ingredients in separate bowl and pour mixture into quiche dish. Gently stir.
- Bake at 425 degrees for 15 minutes then reduce heat to 300 degrees. Bake for 30 minutes longer or until slightly golden and inserted knife comes out clean. Let stand for 10 minutes before cutting.
HAM AND CHEDDAR BROCCOLI QUICHE
Steps:
- 1. Heat oven to 350 degrees and put one of the pie crust into a pie plate.
- 2. Combine milk, eggs, dry mustard and pepper; set aside.
- 3. Layer ham, cheese, broccoli and onion in pie crust. Pour egg mixture over pie and bake for 40-50 minutes.
- 4. Substitute turkey or chicken for a change. Freezes well. I always double the recipe and we eat one and freeze one.
