This is really good and can be made ahead and popped into the oven half an hour before eating! You can also change the type of creamed soups used to your liking.

- Preheat oven to 375 degrees.
- Cook onions in oil over a medium-low heat until soft.
- In a large bowl mix the milk, soup, seasonings and cheddar cheese together until combined. Gently stir in the cooked rice, ham, broccoli, corn and onions.
- Dump broccoli mixture into a large casserole dish.
- In a small bowl combine the melted margarine with the breadcrumbs and parmesan cheese using a fork until it becomes an even consistency.
- Spread breadcrumb mixture over the top of the casserole and bake uncovered for 30 minutes.

- Preheat oven to 350°. In a large saucepan, bring stock to a boil; stir in orzo. Cook, uncovered, until orzo is al dente and broth is absorbed, 8-10 minutes ., Meanwhile, in a large saucepan, heat butter over medium heat. - Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Melt butter in a large skillet over medium heat. Add onion; cook until fragrant and almost translucent, about 4 minutes. Sprinkle flour over onion, then cook and stir for 3 minutes. Add milk gradually, whisking constantly to keep mixture from becoming lumpy. Cook and stir until the mixture is thick and smooth, about 15 minutes.
- Add Colby-Jack cheese and cook and stir until cheese is melted and sauce begins to bubble, 4 to 5 minutes. Remove from heat.

CHEESY HAM AND BROCCOLI HASH BROWN CASSEROLE

- Preheat oven to 350°F. Coat 9x13 baking dish with nonstick cooking spray. Chop frozen broccoli (thaw in microwave a bit if needed, but don't cook through). Chop/dice ham. In a large bowl, mix together soup, sour cream, and pepper. Stir in cheese (1.5 Cups), hash browns, broccoli, and ham until well combined. Spoon evenly into baking dish. Top with remaining 1 Cup of cheese. Bake uncovered for 45 to an hour (until bubbly & the cheese starts becoming golden brown). Allow to rest for at least 5 minutes before serving. Season with additional salt and pepper to taste. Garnish with additional sliced green onion if desired.
HAM AND BROCCOLI BISQUICK CASSEROLE
One of my favorite recipes that uses my homemade Bisquick. This is a great meal that makes that baked ham go a little further. Definitely a comfort dish that my husband loves to take to work for lunch the next day.

- 1. Preheat oven to 350°
- 2. Steam chopped frozen broccoli till just fork tender. Cover the bottom of a prepared 9x13 baking dish with the broccoli.
- 3. While steaming the broccoli, add the olive oil to saute in frying pan over med-high heat. Soon as the oil begins to smoke, add the chopped onion and stir several times as it cooks. You want it to lose it's opaque coloring and be a little brown on the edges. Layer this over the broccoli.
- 4. Layer the chopped baked ham over the sauteed onion and then cover the onion with the shredded cheese.
- 5. In a mixing bowl add the Bisquick, beaten eggs, milk and Mrs. Dash seasoning. Mix together with a whisk til thoroughly blended. Pour over the top of all the layers in the casserole dish.
- 6. Bake for one hour and let set outside of oven for 10 minutes before serving.

I had the broccoli, ham and cheese, but no cream soup, so I took a couple existing recipes and improvised. Also, I used Jarlsberg cheese, but Swiss or any favorite cheese could be used.

- Preheat oven to 350 degrees F.
- Cook onions in butter until almost soft, add garlic and cook all until soft.
- Sprinkle flour over butter/onion mixture, stir to form a roux.
- Slowly pour in milk and broth. Stir until somewhat thickened. Add cheese, salt and pepper. Continue to stir until thickened.
- Spread ham, broccoli and rice in 9x9 glass casserole pan (or similar).
- Pour cheese mixture over top.
- Bake for 15 minutes.
- Sprinkle fried onions on top. Bake for another 15 min until cheese is bubbling but not burnt!
- Note: I was out of milk and didn't want to cook rice or broccoli ahead of time. I did the onion - flour steps the same, then upped the liquid (3 Cups broth) and just added the raw rice and broccoli to the pan, let the mixture of stuff come to a boil, then simmered for a few minutes; stirred in the cheese; sprinkled the onions on top; baked for 20min. Yum!

- Cook pasta according to package directions, drain and set aside.
- Steam broccoli until fork tender. Chop into small pieces.

CREAMY HAM BROCCOLI AND MUSHROOM CASSEROLE

- Set oven to 350 degrees.
- Butter a 2 or 3-quart casserole dish.
- Cook the broccoli florets in boiling water until just tender; drain very well, then place on paper towels to dry further.
- Melt butter in a medium heavy-bottom saucepan over medium heat; add in the onions, garlic and cayenne, saute until tender (about 3-4 minutes).
- Add in flour whisking constantly until mixture thickens (about 2 minutes, do not brown the flour, if the mixture is too thick just add in more cream to thin out).
- Slowly add in half and half cream or full-fat milk, whisking constantly until the mixture begins to thicken.
- Add in cheddar cheese and sour cream; stir until the cheese melts (do not boil).
- Season with salt and black pepper to taste.
- Add in broccoli florets, ham and mushrooms into the cheese mixture; mix to combine.
- Transfer to prepared casserole dish.
- In a small bowl mix together the breadcrumbs with Parmesan cheese (if using) and melted butter until combined; sprinkle on top of casserole.
- Bake uncovered for about 45 minutes.

It's still just a Ham and Broccoli casserole, but It's also a quick and easy dinner. I sometimes add waterchestnuts to give it a little crunch or sliced mushrooms. Feel free to add whatever you like and enjoy.

- In a Large Bowl, Combine all of the casserole ingredients and mix until blended.
- Spoon into a large, buttered casserole dish.

I was at a church brunch recently and the ladies at my table started talking about egg casseroles. It was fun to hear everyone's take on them...for both sides...the cooking them and the eating them. After listening contentedly for a few minutes, I chimed in with a few thoughts myself. "I love to add some flare to my egg casseroles...whether it be a particular spice, or a bold and delicious cheese." I went on to tell them about this one dish egg casserole that I brought and why I chose the extra-sharp, how it took me what felt like 9 minutes to locate the extra-sharp cheddar cheese in the cheese department, and how I used the English muffins because it's what I found in my freezer. I loved the balance of flavors and textures in this egg casserole. The crushed red pepper gives a hint of heat. The paprika brings a bit of smoky sweetness, and the ham and broccoli work perfectly with the rich and deep flavor of the extra-sharp cheddar cheese. I hope you enjoy the rich flavor that the extra-sharp cheddar cheese brings to this one dish egg casserole!

- Lightly grease a 9x13-inch glass baking dish with non-stick cooking spray.
- In a mixing bowl, toss together the cut English muffin pieces with the broccoli florets, diced ham and about 3/4 cup of the shredded extra-sharp cheddar cheese. Once tossed, pour into the baking dish.
- In the same mixing bowl, whisk together the eggs, milk, paprika and crushed red pepper. Add in a few dashes of salt and pepper as well.
- Pour the egg mixture over top of the ingredients in the baking dish. Cover with foil and refrigerate overnight.

- 1. Gather ingredients. Preheat oven to 350 degrees F.
- 2. Cook broccoli until just fork-tender; drain well. (Hint: I use the 12 oz. broccoli florets that come in a microwavable pouch.)
- 3. Place drained broccoli in a mixing bowl. Use kitchen shears to cut/chop the broccoli.
- 4. To the chopped broccoli, add ham and onions; set aside.
- 5. In a medium mixing bowl, mix together soup, mayonnaise, melted butter and salt & pepper (to taste.)
- 6. To the soup mixture, add 2 slightly beaten eggs; mix thoroughly.
- 7. Pour soup mixture over broccoli in bowl; mix well.
- 8. Add 3/4 cup shredded extra-sharp cheddar cheese; mix to combine.
- 9. Pour into 8"x 8" baking dish.
- 10. Top with remaining 3/4 cup cheese and crushed crackers.
- 11. Bake, uncovered, in preheated 350 degrees F oven for 1 hour. Let stand for 5 to 10 minutes before serving. Serve hot or warm. Cover and refrigerate leftovers.
- 12. *NOTE: *You may use fresh or frozen broccoli; drain well before proceeding. *Cream of chicken soup works well, also. *Plain Ritz crackers may be used if the "Everything" Ritz crackers are unavailable. About 30 crackers. *If you have black truffle salt, use it! So good!
