This is really good and can be made ahead and popped into the oven half an hour before eating! You can also change the type of creamed soups used to your liking.

1 medium onion, chopped
1 tablespoon oil (I use extra virgin olive oil)
3 cups cooked rice
2 cups cooked ham, diced
3 cups broccoli florets, steamed
1 (10 ounce) can corn
1/2 cup milk
2 (10 ounce) cans cream of mushroom soup
1 dash salt
1 dash pepper
1 dash garlic powder
2 cups cheddar cheese, shredded (I prefer extra-aged)
1/2 cup fine breadcrumbs
1/2 cup parmesan cheese (use breadcrumbs if you don't have parm on hand)
1/4 cup butter, melted or 1/4 cup margarine

Steps:

  • Preheat oven to 375 degrees.
  • Cook onions in oil over a medium-low heat until soft.
  • In a large bowl mix the milk, soup, seasonings and cheddar cheese together until combined. Gently stir in the cooked rice, ham, broccoli, corn and onions.
  • Dump broccoli mixture into a large casserole dish.
  • In a small bowl combine the melted margarine with the breadcrumbs and parmesan cheese using a fork until it becomes an even consistency.
  • Spread breadcrumb mixture over the top of the casserole and bake uncovered for 30 minutes.

2 cups uncooked orzo pasta
3 tablespoons butter
1/4 cup all-purpose flour
2 cups 2% milk

2 cups chopped fresh broccoli

  • Preheat oven to 350°. In a large saucepan, bring stock to a boil; stir in orzo. Cook, uncovered, until orzo is al dente and broth is absorbed, 8-10 minutes ., Meanwhile, in a large saucepan, heat butter over medium heat. Stir in flour until blended; cook and stir until lightly browned, 4-5 minutes. Gradually whisk in milk, salt and pepper. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in 1-1/2 cups cheese; cook until cheese is melted., Add orzo, ham, broccoli and kale. ½ onion, chopped
4 tablespoons all-purpose flour
5 cups milk
2 cups shredded Colby-Jack cheese
salt and ground black pepper to taste
3 cups chopped, cooked broccoli
2 cups chopped, cooked ham
2 cups cooked white rice
1 cup crushed buttery round crackers
½ cup sliced almonds
6 slices cooked bacon, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Melt butter in a large skillet over medium heat. Add onion; cook until fragrant and almost translucent, about 4 minutes. Sprinkle flour over onion, then cook and stir for 3 minutes. Add milk gradually, whisking constantly to keep mixture from becoming lumpy. Cook and stir until the mixture is thick and smooth, about 15 minutes.

2 Cups Sour cream
¼ Teaspoon Ground black pepper
2.5 Cups Shredded cheddar cheese
1 Package (30 oz.) Ore-Ida® Shredded Hash Brown Potatoes
1 Cup diced ham
2 to 3 Cups chopped broccoli (1 small frozen bag)

Steps:

  • Preheat oven to 350°F. Coat 9x13 baking dish with nonstick cooking spray. Chop frozen broccoli (thaw in microwave a bit if needed, but don't cook through). Chop/dice ham. In a large bowl, mix together soup, sour cream, and pepper. Stir in cheese (1.5 Cups), hash browns, broccoli, and ham until well combined. Spoon evenly into baking dish. Top with remaining 1 Cup of cheese. Bake uncovered for 45 to an hour (until bubbly & the cheese starts becoming golden brown). Allow to rest for at least 5 minutes before serving. Season with additional salt and pepper to taste. Garnish with additional sliced green onion if desired.

One of my favorite recipes that uses my homemade Bisquick. This is a great meal that makes that baked ham go a little further. Definitely a comfort dish that my husband loves to take to work for lunch the next day.

2 c baked ham, chopped
14 oz chopped frozen broccoli
1 medium onion, chopped
1 1/2 c extra sharp cheddar cheese, shredded.
1 c bisquick
3 c milk
4 eggs, lightlybeaten
2 tsp mrs. dash regular seasoning
2 Tbsp olive oil

Steps:

  • 1. Preheat oven to 350°
  • 2. Steam chopped frozen broccoli till just fork tender. Cover the bottom of a prepared 9x13 baking dish with the broccoli.
  • 3. While steaming the broccoli, add the olive oil to saute in frying pan over med-high heat. Soon as the oil begins to smoke, add the chopped onion and stir several times as it cooks. You want it to lose it's opaque coloring and be a little brown on the edges. Layer this over the broccoli.
  • 4. Layer the chopped baked ham over the sauteed onion and then cover the onion with the shredded cheese.
  • 5. In a mixing bowl add the Bisquick, beaten eggs, milk and Mrs. Dash seasoning. Mix together with a whisk til thoroughly blended. Pour over the top of all the layers in the casserole dish.
  • 6. Bake for one hour and let set outside of oven for 10 minutes before serving.

1 garlic clove, minced
3 tablespoons butter or 3 tablespoons olive oil
3 tablespoons flour
1 cup milk

1 cup ham, diced (can use more)
3 cups broccoli florets, steamed
1 cup broth, chicken (or vegetarian)
1 cup cheese (shredded or cubed, I use Jarlsberg, your choice)
1 cup onion rings, french fried

Steps:

  • Preheat oven to 350 degrees F.
  • Cook onions in butter until almost soft, add garlic and cook all until soft.
  • Sprinkle flour over butter/onion mixture, stir to form a roux.
  • Slowly pour in milk and broth. Stir until somewhat thickened. Add cheese, salt and pepper. Continue to stir until thickened.
  • Spread ham, broccoli and rice in 9x9 glass casserole pan (or similar).
  • Pour cheese mixture over top.
  • Bake for 15 minutes.
  • Sprinkle fried onions on top. Bake for another 15 min until cheese is bubbling but not burnt!
  • Note: I was out of milk and didn't want to cook rice or broccoli ahead of time. I did the onion - flour steps the same, then upped the liquid (3 Cups broth) and just added the raw rice and broccoli to the pan, let the mixture of stuff come to a boil, then simmered for a few minutes; stirred in the cheese; sprinkled the onions on top; baked for 20min. Yum!

It's still just a Ham and Broccoli casserole, but It's also a quick and easy dinner. I sometimes add waterchestnuts to give it a little crunch or sliced mushrooms. Feel free to add whatever you like and enjoy.

2 cups cooked ham, Diced (I often use pre-packaged ham as a timesaver)
1 (10 ounce) package frozen broccoli florets
2 (10 ounce) cans broccoli cheese soup or 2 (10 ounce) cans cream of broccoli soup
1/2 cup milk
1 cup cooked white rice or 1 cup brown rice
1/4-1/2 cup onion, chopped Fine (or to taste)

After listening contentedly for a few minutes, I chimed in with a few thoughts myself. "I love to add some flare to my egg casseroles...whether it be a particular spice, or a bold and delicious cheese." I went on to tell them about this one dish egg casserole that I brought and why I chose the extra-sharp, how it took me what felt like 9 minutes to locate the extra-sharp cheddar cheese in the cheese department, and how I used the English muffins because it's what I found in my freezer. I loved the balance of flavors and textures in this egg casserole. The crushed red pepper gives a hint of heat. The paprika brings a bit of smoky sweetness, and the ham and broccoli work perfectly with the rich and deep flavor of the extra-sharp cheddar cheese. 4 whole wheat English muffins, cut into bite size pieces
2 cups broccoli florets
2 cups leftover ham, diced
8 ounces extra-sharp cheddar cheese, shredded and divided

1 cup milk
1 teaspoon paprika

Steps:

  • Lightly grease a 9x13-inch glass baking dish with non-stick cooking spray.
  • In a mixing bowl, toss together the cut English muffin pieces with the broccoli florets, diced ham and about 3/4 cup of the shredded extra-sharp cheddar cheese. Once tossed, pour into the baking dish.

Steps:

  • Arrange sliced potatoes in 13x9 baking dish. Melt 1/4 cup butter in saucepan; stir in salt, paprika and pepper. Drizzle over potatoes. Bake, uncovered at 425 degrees for 45 minutes or till browned and tender. Cook broccoli according to package directions, drain and set aside. For cheese sauce, melt butter in saucepan, blend in flour, salt, mustard and pepper till smooth. Gradually blend in milk; heat to boiling, stirring constantly. Boil 1 minute. I first tried this casserole at a church dinner years and years ago. It's really good and can also be made with diced ham instead of chicken or omit the meat all together and serve as a side dish. So yummy!

1 c white rice, uncooked
1 lb cooked, chopped ham
1 bag(s) frozen chopped broccoli
1/2 stick butter, softened
1 small onion, diced
1 can(s) cream of chicken soup
1 can(s) cream of broccoli soup
1 bag(s) (12 oz.) shredded cheddar cheese

Steps:

  • 1. Cook rice according to package directions and boil or steam broccoli just until softened.
  • 2. Saute onion in 2 Tbsp. of butter.
  • 3. Mix together, rice, chicken, onions, broccoli, soups, remaining butter and 2 cups of the cheddar cheese.

2 cups brown rice, cooked
2 cups diced cooked ham
1 1/2 cups broccoli, cooked
1 (10 1/2 ounce) can cream of broccoli soup
1/2 cup milk
1 cup breadcrumbs
2 tablespoons margarine, melted

Steps:

  • Preheat oven to 325.
  • Combine everything except bread crumbs and margarine in a baking dish.
  • Top with buttered bread crumbs.
  • Cook for 30min.

1 (16 ounce) bag frozen chopped broccoli
2 cups cooked ham (diced)
1 (15 ounce) can small whole potatoes (Canned midget potatoes-drained, cut into quarters)
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon steak sauce (A-1 steak sauce)
2 teaspoons mustard
1 cup cheddar cheese (shredded cheddar cheese-packed firmly)
1 dash salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 425 degrees.
  • Cook broccoli until just tender, then drain well.
  • Combine broccoli with ham and potatoes in shallow 1 1/2 quart baking dish.
  • In a sauce pan, melt butter and blend in 1/4 cup of flour slowly.
  • Gradually add 2 cups of milk and stir constantly. Stir mixture until thickened. (Stir with a wisk for about 10 minutes until very thick).
  • Add remaining ingredients and season with salt to taste.
  • Bake for 30-35 minutes at 425 degrees uncovered.

2 cups macaroni pasta
8 oz sour cream
3-5 Tbsp Kraft Ranch Dressing, to taste
3 Tbsp water
2 cups broccoli, cut into small bites
1 cup leftover lunch ham, cut into small bites
2 cups pizza cheese, shredded

Steps:

  • Cook macaroni and rinse with cold water. While cooking, mix sour cream, ranch and water together in a small bowl. Once mixed, add broccoli and ham. Set aside.
  • Place cooked macaroni in a greased 13x9 casserole dish. Top with ranch mixture and then cover with cheese.
  • Bake at 350°F for 45 minutes or until just golden on sides and top.

1/2 lb angel hair pasta, cooked and drained
2 c fully cooked cubed ham
1 can(s) (10 ounces) cream of chicken soup, undiluted
1 can(s) (10 ounces) cream of mushroom soup, undiluted
2 c frozen thawed broccoli florets, cooked
1/3 c milk
1 can(s) (4 ounces) mushrooms, drained
1-1/2 c shredded sharp cheddar cheese
1/3 c toasted slivered almonds (optional)
salt and pepper to taste

Steps:

  • 1. In a large bowl, combine ham, soups, broccoli, mushrooms, milk. and 3/4 cup of cheese. Toss cooked pasta to coat with the ham mixture.
  • 2. Put mixture into greased 9 X 13 inch baking dish. Sprinkle with remaining cheese. Sprinkle with almonds. (optional). Bake uncovered at 350 degrees for 20-25 minutes.

One of my grand-kids is not fond of vegetables, but she loves my broccoli casserole! I love it too, though it's not for those who are strict calorie counters. It makes a great side dish for holiday meals, but it can be served as a main dish also. For vegetarians, omit the ham, and use cream of onion soup instead of the chicken...

4 c broccoli florets, cooked fork tender (see *note)
1/2 c cooked smoked ham, chopped
1/3 c sweet onion, diced small
1 can(s) cream of chicken & mushroom soup (see *note)
3/4 c mayonnaise
4 Tbsp butter (1/2 stick), melted
salt & pepper to taste
2 large eggs, slightly beaten
1 1/2 c shredded extra-sharp cheddar cheese, divided
1 sleeve ritz "everything" crackers (see*note), crumbled

Steps:

  • 1. Gather ingredients. Preheat oven to 350 degrees F.
  • 2. Cook broccoli until just fork-tender; drain well. (Hint: I use the 12 oz. broccoli florets that come in a microwavable pouch.)
  • 3. Place drained broccoli in a mixing bowl. Use kitchen shears to cut/chop the broccoli.
  • 4. To the chopped broccoli, add ham and onions; set aside.
  • 5. In a medium mixing bowl, mix together soup, mayonnaise, melted butter and salt & pepper (to taste.)
  • 6. To the soup mixture, add 2 slightly beaten eggs; mix thoroughly.
  • 7. Pour soup mixture over broccoli in bowl; mix well.
  • 8. Add 3/4 cup shredded extra-sharp cheddar cheese; mix to combine.
  • 9. Pour into 8"x 8" baking dish.
  • 10. Top with remaining 3/4 cup cheese and crushed crackers.
  • 11. Bake, uncovered, in preheated 350 degrees F oven for 1 hour. Let stand for 5 to 10 minutes before serving. Serve hot or warm. Cover and refrigerate leftovers.
  • 12. *NOTE: *You may use fresh or frozen broccoli; drain well before proceeding. *Cream of chicken soup works well, also. *Plain Ritz crackers may be used if the "Everything" Ritz crackers are unavailable. About 30 crackers. *If you have black truffle salt, use it! So good!
