TRADITIONAL SLOVAK HALUSKI

Traditional Slovak Haluski image

This has been in my family for generations coming from Czechoslovakia. Traditionally, it is mixed with goat cheese from Czechoslovakia but since it's not available here in the States, we use brick cheese or feta. We eat this as a main meal but can be served as a side. Serve as is or add kielbasa on the side or slice up kielbasa and mix it in with haluski! Serve with warm crusty bread.

Number Of Ingredients 7

1 pound bacon
4 small potatoes, peeled and coarsely chopped
1 cup all-purpose flour
2 eggs, beaten
½ teaspoon baking powder
1 pinch salt
2 cups shredded Wisconsin brick cheese

Steps:

  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When bacon is cool, crumble and set aside.
  • Place potatoes into a food processor and process until pureed, 2 to 3 minutes. Transfer to a bowl and stir in flour, eggs, baking powder, and salt to make a sticky dough. Set dough aside.
  • Fill a large pot about half full of lightly salted water and bring to a boil. Ladle large spoonfuls of the sticky dough to a small cutting board and use a knife to chop the dough into tablespoon-size pieces; as you cut off a piece, drop it into the boiling water. Let the dumplings boil over medium heat until they float, 2 to 3 minutes. Remove dumplings with a slotted spoon to a large serving bowl.
  • Sprinkle bacon crumbles and a handful of shredded brick cheese over each batch of dumplings; continue to make, boil, and transfer dumplings to the bowl, sprinkling each batch with bacon and brick cheese. When all dumplings are made, gently stir the haluski to mix all ingredients.

SLOVAK HALUSKI

Slovak Haluski image

Often used during Lent, this meatless recipe has been passed down generation to generation in my family. This recipe makes a generous amount, which is great because Haluski tastes even better the second day. My Bubba (grandmother) made potato dumpling noodles to go with her cabbage. Also great served with any fish!

HALUSKI (PAN-FRIED CABBAGE AND NOODLES)

Haluski (Pan-Fried Cabbage and Noodles) image

Haluski is a pan fried dish that both of my grandmothers used to make of butter, onion, cabbage and noodles. It makes a delicious main or side dish, whatever you're in the mood for. I personally like to let my cabbage get a little brown, but adjust your cooktime as necessary to your preference. The serving sizes will depend on how you are serving it.

2 teaspoons brown sugar
6 cups cabbage, sliced thin

1/4 cup unsalted butter
1/2 pound thinly sliced pancetta, diced
2 large onions, sliced 1/4-inch thick
1 medium head green cabbage, cored and sliced 1/2-inch thick
1 cup carrots, cut in 1/4-inch julienne
1 tablespoon chopped fresh thyme
1 teaspoon kosher salt
2 teaspoons freshly ground black pepper
8 ounces wide egg noodles
3 tablespoons minced garlic
3 tablespoons capers, rinsed and drained
1 cup green peas, preferably fresh, shelled, but can substitute frozen
1/4 cup white wine
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped fresh parsley leaves

  • Increase the heat to high and cook, stirring, until the cabbage and onions are golden, 10 to 12 minutes. Add in the garlic and capers and cook for 1 minute. Add the peas, deglaze the pan with the white wine and add the lemon juice. Add in three-quarters of the pancetta, combine well and remove from heat.
  • Drain the noodles and add to the pot with the cabbage. Toss well to coat the noodles with the cabbage and onion mixture. Sprinkle with the parsley, remaining pancetta and remaining pepper. Serve immediately.

BABAS AUTHENTIC POLISH HALUSKI RECIPE WITH POTATO DUMPLINGS

Babas Authentic Polish Haluski Recipe With Potato Dumplings image

Entered for safe-keeping for ZWT. Posted by Cherihannah on grouprecipes.com, who claims the potato dumplings instead of egg noodles are the "Old Country" way and egg noodles are the (American) Pennsylvanian way. I am still in shock over 1 1/2 cups of butter (3 sticks)!

Provided by KateL

Categories     Potato

Time 32m

Yield 8 serving(s)

Number Of Ingredients 7

2 cups mashed potatoes, cooled
2 eggs, well-beaten
salt, to taste
pepper, to taste
1 head of cabbage (medium or large, chopped)
1 1/2 cups butter (or more)
2 large onions, chopped

Steps:

  • PREPARE POTATO DUMPLINGS:.
  • In a large bowl, add mashed potatoes, eggs and blend thoroughly.
  • Add enough flour with a little salt to knead into a soft pliable dough that will not stick.
  • Make into rolls and slice in about 1 inch pieces.
  • Drop dumpling slices into boiling water and boil about 12 minutes. To test for doneness, break one open with fork after you take out of boiling water.
  • Drain in small hole colander. (You can rinse if you prefer. I don't.).
  • SAUTE CABBAGE AND ONIONS:.
  • While boiling the dumplings, sautee (in large fry pan )butter, cabbage and onions until golden brown.
  • Add drained dumplings to fry pan and fry a little longer. Mix it all well while frying but don't overdo so dumplings stay together.

AMERICANIZED SLOVAK HALUSKI

Americanized Slovak Haluski image

I added a twist to our family traditional Slovak meal. This can be served as a side but we usually eat it as the main course. Usually, it's just potato dumplings with cheese and bacon but Americanized. Traditional Haluski has goat/sheep cheese from Czechoslovakia that is not available here in the States, so can be mixed with brick cheese or feta.

Categories     One Dish Meal

Time 1h45m

Yield 8 serving(s)

Number Of Ingredients 10

1 cup flour
2 eggs (beaten)
4 potatoes (small, peeled and pureed)
1/2 teaspoon baking powder
1 pinch salt
1 lb bacon
1 vidalia onion, chopped
6 slices smoked provolone cheese
1/4 cup chives (fresh, chopped)
salt and pepper

Steps:

  • For potato dumplings (Haluski):.
  • In a medium bowl, mix flour, eggs, potato puree, baking powder, and salt together throughly, mixing it into a sticky dough. Set aside.
  • Take a large pot, fill it a little over half full with water.
  • Add a dash of salt to the water. Boil water on high heat.
  • On medium heat in a skillet, fry up the bacon until crisp; remove bacon from the pan and allow it to drain on paper towels.
  • Cool bacon and crumble.
  • Keep bacon fat in the skillet for caramelizing onions and frying up dumplings.
  • In the same skillet, caramelize chopped onions on low heat. This should take about 30 to 45 minutes, occasionally stirring. When they are done, drain onions in a strainer over a small glass bowl reserving bacon fat and the set aside. Keep the same skillet to fry the dumplings.
  • In the meantime, on a small cutting board, ladle Haluski dough and with a knife, cut about 1 teaspoon sized pieces while holding the board over the boiling water; drop the dough pieces into the water. You might want to do this in batches; a ladle sized amount of dough pieces at a time.
  • Let each small batch boil until dumplings are throughly cooked and floating to the top of the boiling water. (They sink when first dropped in). Repeat with another batch of dough until you've used it all.
  • Strain dumplings out of the water and add them to a medium bowl to drain for a moment.
  • Take each batch and add them to the skillet. Add a little bacon fat over the dumplings and fry on both sides on medium heat until brown.
  • Repeat with the remaining batches of dough as they finish boiling.
  • Place dumplings into a large serving bowl.
  • Sprinkle bacon crumbles, two slices of cheese, a Tablespoon of caramelized onions at a time for each layer.
  • Repeat the layering process as you finish cooking additional batches of dumplings - frying in the pan, layering into the large serving dish with bacon, onions and cheese until full batch is done (approximately four layers).
  • When complete, take a large spoon and throughly mix Haluski with all of the other layers to incorporate all the ingredients thoroughly.
  • Serve as is or add Kielbasa on the side, or slice up Kielbasa and mix it in with Haluski!
  • Garnish with sprinkles of freshly chopped chives on top, add a dollop of sour cream to each serving and serve with a nice warm crusty bread!

HALUSKI

Haluski image

About 17 years ago or so I ate haluski for the first time and loved it and have been making it ever since then. It is cost effective if you have a family because the ingredients are cheap and it goes a long way. It is also very easy to make so it is not time consuming.

Categories     Pasta

Time 1h50m

Number Of Ingredients 6

2 small heads of green cabbage
16 oz egg noodles, uncooked
1 large onion
2 stick butter
2 tsp black pepper
1 tsp salt

Steps:

  • 1. Chop the cabbage into small pieces and add to stock pot. Add chopped onion and 1 stick of butter and saute with lid on, stirring in between until the cabbage and onion is soft.
  • 2. In another pot, boil water and add 1 tbsp of vegetable oil so noodles won't stick. Add egg noodles and boil according to package directions. You can use bow tie or elbow noodles instead of egg noodles. When done, drain and rinse in cold water and drain again.
  • 3. Add cooked noodles to pot of sauteed cabbage and onions and add another stick of butter. Add pepper and salr and cook on low heat stirring in between until the butter is melted and it is all mixed well together and hot.
  • 4. If you want to you can also add cubed up ham or kielbasa. Both taste very good in the haluski.

HALUSKI, TRADITIONAL & GLUTEN FREE

Haluski, Traditional & Gluten Free image

Have some cabbage you need to use up and a package of egg noodles in the pantry. Well alrighty then, let's cook up a happy side dish! I first tried this dish as a teenager and had to learn how to make it. My kids' Nanny taught me how to make this. You can make it with or without bacon, or kielbasi. I usually use bacon. (I didn't...

Provided by Megan Todd

Categories     Other Main Dishes

Time 40m

Number Of Ingredients 9

1/2-1 lb bacon, thick cut or pancetta
1 medium head cabbage, cut in half and sliced thin
2 large yellow onions, cut in half and sliced
2 c carrots, sliced 1/4 inch
4 clove garlic, minced
1- 12 oz package egg noodles or gluten free tangliatelle noodles
1/2 c butter
1 tsp fresh cracked sea salt
fresh cracked black pepper to taste

Steps:

  • 1. In a large cast iron skillet, or a non stick skillet will work great too. Melt two tablespoons of butter over medium high heat, add optional bacon (or Kielbasi if using) and cook until crisp. Remove from skillet and place on paper towels to drain off excess fat.
  • 2. Meanwhile, In a separate pan, prepare egg noodles or gluten free tangliatelle noodles as per package directions. Cook al-dente, do not over-cook. Drain and rinse with cold water. Set aside. ** For GF, I bring water to a boil, add noodles and boil 3-4 minutes. Then turn off heat and cover. Stir every minute or so. They cook fast and tend to over-cook quickly. When they reach al-dente, drain, and rinse with cold water quickly to stop the cooking process. This method works very well to prevent soggy GF noodles.
  • 3. In the skillet you prepared the bacon in, drain all but 3-4 tablespoons of bacon grease. (If you didn't use bacon or kielbasi, just use the full amount of butter to begin this step.) Add remaining butter & Heat again over medium heat. Add the cabbage, onions, & carrots to the pan & season with fresh grated sea salt and pepper to taste. Cook over medium heat, stirring frequently to cook down cabbage. When cabbage has softened and cooked down, increase heat to high and cook until cabbage, onions, and carrots are slightly browned or golden. Add garlic, & cooked egg noodles or GF noodles and continue to cook until noodles are heated through and slightly golden, stirring constantly. Add crisp bacon last and toss with cabbage/noodle mixture to mix thoroughly. Add additional fresh cracked sea salt and pepper to taste. Garnish with fresh parsley and serve. ** This photo is the traditional haluski with egg noodles. Recipe photo is that of the Gluten Free, vegetarian version.

GRANDMA'S POLISH "HALUSKI"

Grandma's Polish

This is an Old World thrift comfort food. We used to get home-made Kielbasa sausage when I was young from the butcher at Farmers Market. This is filling and children usually love it. It's what I call a "More" dish. There are many versions of this and I came across a many-ingredient one concocted by Guy Fieri of Diners, Drive-Ins...

Provided by Dutch Reyveld

Categories     Pasta

Time 1h45m

Number Of Ingredients 8

1 large head of green cabbage
1 small yellow onion
1/2 c butter
1 lb box wide egg noodles
4 oz bacon
1/4 c sour cream (optional)
1/2 lb kielbasa sausage, quartered then chopped
salt & fresh cracked black pepper

Steps:

  • 1. Chop onion and cabbage coarsely. In a large skillet fry the bacon fairly crisp and discard most of the grease, add the butter and slowly make it brown. THIS is an important part. Cook the onion and cabbage over medium heat in the bacon/butter until it's soft, stirring as necessary to prevent burning. This will take quite a while and reduce by about 1/2. Cook the Kielbasa together with this.
  • 2. While the above is cooking, boil the noodles to the instructions, drain well and when the cabbage mix is ready, mix it all together. You can now add the optional sour cream if you like.
  • 3. I've added about a cup of well rinsed and drained Sauerkraut at times and liked that as well. Optional.

4 potatoes
1 egg
2 -3 cups flour
1 dash salt
1 can sauerkraut
1 large onion
1 lb bacon

Steps:

  • Cut up bacon in bite size pieces and fry with chopped onion (I like my bacon crisp, but it's up to you).
  • Meanwhile, put on large pot of water to boil.
  • Peel potatoes, cut and grind up in a blender (If the mixture is too dry to blend, add the egg).
  • In a large bowl, gradually mix flour with potato mush until loose batter is formed.
  • Put a large scoop of the batter on a flat surface (I use the bottom of a springform pan).
  • Holding the flat surface in one hand, use a fork with the other, pushing finger-size dumplings in the boiling water (They will rise as they cook).
  • Gently stir, so they don't stick.
  • After the dumplings are all cooked, drain them in a large colander and put them in a large serving bowl.
  • Drain sauerkraut in colander, under cold water, squeezing out excess.
  • Add sauerkraut, cooked bacon and onion to dumplings.
  • Mix gently.
  • Salt and pepper to taste.
  • (An alternate version is with the dumplings mixed with drained cottage cheese and melted butter. Very yummy too!).
