MOM'S CHICKEN WIGGLE

This is a good way to use up leftover chicken. My Mom used to make this, why she called it chicken wiggle I have no idea, I just know that when I came home from school and knew we were having this, I was in heaven. I have tried to figure it out as close as I can remember. For this you will need a batch of Hailey's Favorite Cheese Sauce, recipe #364959. This is good over toast, saltines (my favorite), or my girls favorite, broad egg noodles. The cook time roughly includes the cook time for the cheese sauce and the the final combo, not the time for cooking or cutting the ckicken.

1 3/4 cups cheese sauce, Hailey's Favorite Cheese Sauce # 364959
2 cups cooked chicken, cubed
1 (10 ounce) package frozen peas, thawed and drained
saltines, toast or egg noodles

Steps:

  • Prepare the cheese sauce per recipe.
  • While the sauce is still hot stir in the chicken and the peas. Heat long enough so the chicken and peas are heated through.
  • Serve hot over your choice of optional beds.

This fabulous cheese sauce is as easy to make as it is versatile. A smooth, fail-safe sauce for Welsh rarebit, Horseshoe sandwiches, vegetables, and pasta. Try it over poached eggs and toast. Wow!

½ cup butter
¼ cup all-purpose flour
2 cups half-and-half
2 cups shredded Cheddar cheese
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper

Steps:

  • Melt butter in a saucepan over low heat. Blend in flour and cook until mixture is smooth and bubbly, 2 to 3 minutes. Remove from heat; stir in half-and-half, Cheddar cheese, salt, pepper, and cayenne. Return to heat and cook, stirring constantly, until sauce is smooth, about 5 minutes. Keep warm until serving.

HAILEY'S FAVORITE CHEESE SAUCE

If we have broccoli and I don't make this sauce, Hailey wants to know "WHY?". This is kind of adapted from my Mom's cheese sauce. I also use this sauce for, The Best Lobster Casserole, recipe #412590 and Mom's Chicken Wiggle, recipe #366214. I use the block cheese and grate it myself, you could use a milder cheddar if you prefer. BE SURE to thicken the milk mixture with the roux (roo) before you add the cheese or you will have a curdled mess.This keeps for several days in the fridge so don't toss the leftover sauce. I like it cold from the fridge on crackers or as a dip for raw veggies, too.

3 tablespoons butter
3 tablespoons flour
1 1/2 cups whole milk
2 tablespoons butter
1 pinch cayenne pepper
1 pinch nutmeg
5 ounces extra-sharp cheddar cheese, grated

Steps:

  • Roux:.
  • Melt butter over medium heat until it bubbles. Remove from heat and slowly whisk in the flour. The roux should be dry and not runny. Don't let the butter get brown or you will have a discolored sauce. Set aside.
  • Sauce:.
  • Combine the milk, butter, cayenne and nutmeg in a saucepan, stirring occasionally over medium heat until it just starts to boil. Whisk in the roux mixture slowly. The milk should be about twice as thick from where you started. Remove from heat and slowly whisk in the grated cheese, stirring constantly.
  • Serve warm over broccoli.
  • Refrigerate leftovers, the sauce will thicken in the fridge. To re-use it just microwave it a little to soften it.

2 cups heavy cream
1 tablespoon Dijon mustard
1 1/2 cups finely grated Gruyère cheese
1/2 cup finely grated Parmesan cheese
1 small clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • In the medium pot, bring the cream to a gentle simmer over medium heat. Whisk in the mustard. Stir in the Gruyère, Parmesan and garlic and cook until the cheeses are melted and combined and the sauce has a smooth consistency, 3 to 4 minutes. Season with salt and pepper. Serve warm.

½ lemon, juiced
1 teaspoon cold water
1 teaspoon salt
1 teaspoon ground black pepper
½ cup butter

Steps:

  • In a small bowl, whisk together egg yolks, lemon juice, cold water, salt and pepper. Melt butter in a saucepan over low heat. Gradually whisk yolk mixture into butter. Continue whisking over low heat for 8 minutes, or until sauce is thickened. Serve immediately.
