CLASSIC FISH CAKES

Pull up a chair and enjoy a serving of these wonderfully flavorful fish cakes with homemade tartar sauce!

2 large potatoes (about 2 cups mashed), diced, boiled and drained
1 pound white-fleshed fish, COOKED (cod, haddock, pollock, halibut, flounder)
1 large egg
3 tablespoons sour cream
2 tablespoons butter, softened
2 green onions, sliced
3 tablespoons chopped fresh parsley
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dry ground mustard
panko breadcrumbs (, for coating)
(Gluten-free use GF panko breadcrumbs)
oil for frying
Homemade Tartar Sauce

Steps:

  • Place all ingredients, except for the breadcrumbs, in a large bowl and mash until thoroughly combined.Form the mixture into 8 equal patties and roll them in the panko breadcrumbs. (You can make smaller patties if you prefer.) Refrigerate the patties for at least 30 minutes or until they've firmed up.
  • Heat some oil in a non-stick pan and fry the patties on each side for 3-4 minutes until lightly browned, being careful not to overcrowd the pan.
  • Serve immediately with our BEST homemade tartar sauce!

2 lb haddock fillets
1 pt sour cream
1/2 pkg prepared stuffing mix
1 tsp marjoram
salt and pepper to taste

Steps:

  • 1. Pre-heat oven to 350 DF Place haddock on aluminum foil in pan and cover with soured cream. Sprinkle with salt and pepper, than spread stuffing mix over all. Sprinkle with marjoram and paprika over stuffing.
  • 2. Bake at 350 degrees F for 30 minutes or longer, depending upon thickness of fish.

MIKE'S BAKED HADDOCK FISH TACOS



Mike's Baked Haddock Fish Tacos image

This is a delightful, easy, and tasty recipe for people who don't normally like fish.

1 tablespoon olive oil, or as needed
2 pounds haddock fillets
2 tablespoons chili powder
2 tablespoons ground black pepper
1 (12 ounce) package flour tortillas
1 (6 ounce) container guacamole
1 (8 ounce) carton sour cream
1 head lettuce, shredded
2 cups shredded Cheddar cheese
1 (8 ounce) jar pico de gallo or fresh salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of the glass baking pan with a thin coat of olive or canola oil.
  • Slice fish into 4- to 6-inch long pieces. Place in the prepared pan. Sprinkle with chili powder and black pepper.
  • Bake in the preheated oven until fish is cooked through and slightly browned on the outside, about 30 minutes.
  • While the fish is cooking, slightly brown the tortillas in a lightly greased frying pan.
  • Once the fish is done, take a tortilla and put one or two pieces of fish in the middle. Spread about 2 teaspoons of guacamole and a thin layer of sour cream on the fish. Cover with shredded lettuce, garnish with Cheddar cheese, and top with pico de gallo. Serve.

Parmesan Crusted Haddock tastes like it came from your favorite seafood restaurant! Tender, flaky haddock with a parmesan cheese and bread crumb topping!

2 pounds haddock filets
Kosher salt and fresh black pepper (for seasoning the fish)
1 cup panko breadcrumbs
1 cup mayonnaise
1/2 cup grated parmesan cheese
2 teaspoons Old Bay seasoning
1 teaspoon garlic powder
2 tablespoons chopped parsley
Lemon wedges for serving

Steps:

  • Preheat the oven to 425 degrees.
  • Dry the fish filets very well with paper towels. Place the fish on a baking sheet that's been sprayed with cooking spray or use a piece of parchment paper to line the sheet. Season the fish with salt and pepper.
  • Add the breadcrumbs, mayonnaise, parmesan cheese, Old Bay Seasoning, garlic powder and parsley to a bowl and mix to combine.
  • Spread mixture on top of fish, dividing between the filets, using all of the topping. Bake for 10-12 minutes, depending on how thick your fish filet is. Remove the fish from the oven and preheat the broiler. Broil the fish for 2 minutes until the topping is browned. Serve the fish with lemon wedges and garnish with more chopped parsley.

CREAMY SMOKED HADDOCK & SAFFRON KEDGEREE



Creamy smoked haddock & saffron kedgeree image

Use good quality un-dyed fish in this creamy brunch rice pot with hard boiled eggs and saffron

300g basmati rice
50g butter
3 hard-boiled eggs , shelled and halved
200ml double cream
500g naturally smoked haddock , skin removed
100ml white wine
1tsp cayenne pepper
pinch saffron strands
1 tbsp mild curry powder
freshly grated nutmeg
small handful flat-leaf parsley , chopped
1 lemon , cut into wedges, to serve

Steps:

  • Cook basmati rice, leave to cool. Heat oven to 160C/140C fan/gas 3. Grease a large ovenproof dish with some of the butter. Push the egg yolks through a sieve and roughly chop the whites.
  • Gently heat the cream in a frying pan until just below boiling point, then add the fish. Cover and poach for 4 mins. Place the wine in a pan with the saffron and warm to infuse. In a large bowl, mix together the rice, cayenne, curry powder, nutmeg, seasoning, chopped egg whites and saffron-infused wine. Lift the fish out of the cream and flake into the bowl - removing any bones as you find them. Scrape in the cream and gently mix together once more.
  • Tip everything into the buttered dish and dot the top with the remaining butter. Bake to heat through for 20 mins, then serve scattered with the parsley and sieved egg yolk, with lemon wedges on the side.

1 tbsp olive oil , plus extra
4 skinless unsmoked or smoked haddock fillets, approx 140g/5oz each
2 handfuls cherry tomatoes
3 tbsp mayonnaise
1 tsp garlic paste or 1 garlic clove, crushed
100g white breadcrumbs
zest and juice 1 lemon
2 handfuls flat-leaf parsley , leaves roughly chopped

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
  • In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.
