3 tablespoons butter
1/4 cup flour
salt
pepper
1/4 teaspoon nutmeg
1 1/2 cups milk
3/4 cup cheddar cheese, grated
2 1/2 lbs haddock fillets (4)
1/4 cup sherry wine
paprika

Steps:

  • Melt butter in pan over medium heat and stir in flour, salt, pepper, and nutmeg whisking until smooth.
  • Add milk slowly, whisking to get out any lumps and make smooth.
  • Add the cheese, stirring until melted.
  • Place haddock in greased baking dish.
  • Sprinkle with salt and pepper.
  • Pour sauce over haddock.
  • Drizzle over sherry and sprinkle with paprika.
  • Bake at 325*F. for 45 minutes.
  • Serve and enjoy.

1 lb cod fish fillets (1/2 to 3/4 in thick, fresh or frozen, thawed if frozen) or 1 lb haddock fillet (1/2 to 3/4 in thick, fresh or frozen, thawed if frozen)
1/2 cup whipping cream
3 tablespoons grated parmesan cheese (divided)
2 tablespoons dry white wine
1 garlic clove, minced
1/4 teaspoon salt
1 dash pepper (or more to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Cut fish into four serving size portions.
  • Rinse and pat dry with paper towels.
  • Place fish in an 11" x 7" baking pan.
  • In a mixing bowl, stir together whipping cream, 2 tbsp Parmesan cheese, wine, garlic, salt and pepper. Pour over fish.
  • Bake uncovered for 20-25 minutes or until fish flakes easily with a fork.
  • Take fish out of sauce and place on a serving platter.
  • Stir sauce to blend and pour over fish.
  • Top with 1 tbsp Parmesan cheese.

MIKE'S BAKED HADDOCK FISH TACOS

This is a delightful, easy, and tasty recipe for people who don't normally like fish.

1 tablespoon olive oil, or as needed
2 pounds haddock fillets
2 tablespoons chili powder
2 tablespoons ground black pepper
1 (12 ounce) package flour tortillas
1 (6 ounce) container guacamole
1 (8 ounce) carton sour cream
1 head lettuce, shredded
2 cups shredded Cheddar cheese
1 (8 ounce) jar pico de gallo or fresh salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of the glass baking pan with a thin coat of olive or canola oil.
  • Slice fish into 4- to 6-inch long pieces. Place in the prepared pan. Sprinkle with chili powder and black pepper.
  • Bake in the preheated oven until fish is cooked through and slightly browned on the outside, about 30 minutes.
  • While the fish is cooking, slightly brown the tortillas in a lightly greased frying pan.
  • Once the fish is done, take a tortilla and put one or two pieces of fish in the middle. Spread about 2 teaspoons of guacamole and a thin layer of sour cream on the fish. Cover with shredded lettuce, garnish with Cheddar cheese, and top with pico de gallo. Serve.

2 lb haddock fillets
1 pt sour cream
1/2 pkg prepared stuffing mix
1 tsp marjoram
salt and pepper to taste

Steps:

  • 1. Pre-heat oven to 350 DF Place haddock on aluminum foil in pan and cover with soured cream. Sprinkle with salt and pepper, than spread stuffing mix over all. Sprinkle with marjoram and paprika over stuffing.
  • 2. Bake at 350 degrees F for 30 minutes or longer, depending upon thickness of fish.

MERTZIE'S BAKED HADDOCK IN WINE, LEMON AND BUTTER

Baked haddock, and in particular this version, was one of the very first dishes I learned how to make on my own, and one of the few things I didn't screw up my first year of cooking! Through the years, I have enhanced this recipe to make it my own & a more jazzed up version. Absolutely delicious! Don't let the sour cream fool ya...

2 lb icelandic haddock, thawed, rinsed & dried off
1 large lemon
1/4 c white wine
1/4 c sour cream (or more)
1 Tbsp (heaping), paprika
4 Tbsp butter
1 Tbsp dill
1 tsp lemon pepper
fresh italian flat-leaf parsley
salt & pepper
1 tsp dijon mustard (optional, to mix in w/ sour cream)

Steps:

  • 1. Preheat oven to 350 degrees. Mix sour cream with paprika, dill, lemon pepper. Add a little lemon zest. I add a little celery seed sometimes, too. Refrigerate this for a few.
  • 2. Meanwhile, make sure haddock is rinsed & dried off. Place haddock in baking pan (any size) and cut to be in 4 filets, if needed. Sprinkle w/ some sea salt. Pour wine over top of haddock. Then add lemon slices all about the pan. I like to spread some butter on top of the haddock at this point -- lightly.
  • 3. Spread each haddock filet w/ a generous scoop of the sour cream mixture, evenly. I put a big dollop on each filet & then spread out, so I am sure I have enough for all of them. Sprinkle with some black pepper.
  • 4. Cut butter up into small pieces. Lay these all around the pan & I also put a little dab of butter on top of each filet. Bake for about 40-45 minutes.
  • 5. Remove & add fresh Italian leaf parsley, sprinkling on top of filets & around the pan. I always add some more sprinkles of dill & paprika at this point, too, for color.
  • 6. Bake until 10-15 mins. & serve w/ fresh lemons & parsley sprigs.

HADDOCK IN MUSTARD SAUCE

I thought this would also be excellent with dill replacing parsley for the final garnish.

4 cups fish stock
1 cup milk
3 lbs haddock fillets
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
1/2 cup heavy cream
3 tablespoons Dijon mustard
1/4 teaspoon sugar
2 tablespoons sour cream
4 tablespoons unsalted butter, cut in pieces and at room temperature
2 tablespoons flat leaf parsley, minced

Steps:

  • Combine the stock and milk in a skillet large enough to hold all of the fish in a single layer.
  • Bring to a simmer over medium heat.
  • Add the fish, salt, and pepper; and cook uncovered for 5 - 7 minutes, or until the fish just flakes when you touch it with a fork.
  • Carefully move the fish to a heated platter, cover, and keep warm.
  • Bring the poaching liquid to a boil, and reduce to 1 cup (about 10 minutes).
  • Reduce heat to medium, add the cream, and cook for 2 more minutes.
  • whisk in the mustard, sugar, and sour cream, bring back to a simmer.
  • Whisk in the butter, a bit at a time, until fully incorporated.
  • Add any juice that has accumulated on the platter, then strain the sauce over the fish.
  • Sprinkle with parsley, then serve immediately.
