CRISPY BAKED HADDOCK
A baked haddock dish that comes together in less than 20 minutes! Full of bold flavors and incredibly easy!

Steps:
- Preheat oven to 425 degrees Fahrenheit and prepare a rimmed baking sheet by spraying lightly with cooking spray. Set aside.
- Gently pat dry both sides of the haddock then season with salt. Place on the baking sheet.
- In a bowl, mix together all the ingredients for the topping then using your hands, gently and evenly spread it across all the haddock. It doesn't have to be perfect.
- Bake for 7 minutes or until the haddock is cooked through and the topping is slightly brown.
- Serve and enjoy!

NEW ENGLAND BAKED HADDOCK
This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

Steps:
- Preheat oven to 350°F.
- Rinse fish and then soak in milk (This will take away any "fishiness").
- Melt butter in a small frying pan. Add onion and saute until softened, then add garlic.
- Remove from heat, add sherry, parsley, paprika and salt to taste.
- Mix bread crumbs with crushed cracker crumbs.
- Remove fish from milk, rinse again, then place in a baking dish.
- Pour crumb mixture over fish.
- Then pour butter/sherry mixture over crumbs.
- Bake at 350°F for about 25 minutes. Place under broiler on high until golden brown and slightly crispy. (Watch it closely, this does not take long.).
- Enjoy!

- Preheat oven to 500 degrees F (260 degrees C).
- In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
- Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

- In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme.
- Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.

Finnan haddie is a Scottish dish with smoked haddock. This is a simple, old family recipe that comes from the Maritimes - Canada. We always called this 'the milk fish'. This goes great with the traditional mashed potatoes and peas.

- Place smoked haddock into a glass baking dish. Whisk flour into the melted butter until smooth, then whisk in milk, and pour over the haddock.
