This is the best pizza I've ever eaten! I sometimes mix walnuts with the pine nuts, but you can use your favorites.-Marina Castle, North Hollywood, California

1 package (1/4 ounce) active dry yeast
1-1/2 cups warm water (110° to 115°)
1 teaspoon sugar
5 tablespoons olive oil, divided
1/3 cup pine nuts, chopped
3 tablespoons minced fresh basil
1-1/2 teaspoons salt, divided
4 cups bread flour
1 package (20 ounces) ground turkey
1 medium onion, chopped
1 medium green pepper, diced
1 medium sweet red pepper, diced
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1 envelope ranch salad dressing mix
1/2 teaspoon pepper
1 can (3.8 ounces) sliced ripe olives, drained
1/2 cup shredded Parmesan cheese
3 cups shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Stir in 1 tablespoon oil, nuts, basil and 1/2 teaspoon salt. Add 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 5-6 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; let rest for 5 minutes. Divide dough in half; press each portion into a greased 12-in. pizza pan., In a large skillet, cook the turkey, onion, peppers, mushrooms and garlic in 2 tablespoons oil over medium heat until meat is no longer pink; drain. Sprinkle with salad dressing mix, pepper and remaining salt. , Brush remaining oil over dough. Top with turkey mixture, olives and cheeses. Bake at 425° for 15-20 minutes or until cheese is melted and crust is golden brown.

1 cup water (70° to 80°)
2 tablespoons olive oil
1 tablespoon sugar
1 teaspoon salt
3 cups all-purpose flour
2 teaspoons active dry yeast
3/4 cup barbecue sauce
1-1/2 cups cubed cooked turkey breast
1/2 cup fresh or frozen corn, thawed
1 small red onion, julienned
1 small green pepper, julienned
1 garlic clove, minced
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded reduced-fat cheddar cheese
1/4 cup grated Parmesan cheese

Steps:

  • In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , When cycle is complete, turn dough onto a lightly floured surface. Punch down; cover and let stand for 10 minutes. , Roll dough into a 14-in. circle. Transfer to a 14-in. pizza pan coated with cooking spray; build up edges slightly. , Spread barbecue sauce over crust. Layer with half of the turkey, corn, onion, green pepper, garlic and cheese. Repeat layers. Bake at 400° for 25-30 minutes or until the crust is golden brown.

It's a different way to fix ground turkey than just turkey burgers. Got the idea for the puff pastry from the Barefoot Contessa, but I concocted the rest of the recipe.

Number Of Ingredients 11

1 lb lean ground turkey
4 tablespoons olive oil
1 large sweet onion, halved and sliced
1/4 cup red sweet bell pepper, chopped
1 large garlic clove, finely chopped
1 teaspoon McCormick's Montreal Brand steak seasoning
2 teaspoons fresh rosemary needles, finely chopped
4 tablespoons Heinz 57 steak sauce
2 ounces goat cheese
2 tablespoons fresh basil, sliced into ribbons
1 puff pastry sheet, thawed on counter top 45 minutes

  • In skillet, put 2 T. of the oil and the onions on low to caramelize. In another skillet, put remaining oil, ground turkey, peppers, Montreal Steak Seasoning, rosemary and garlic. Brown meat, crumbling it. Drain well. Preheat oven to 400 degrees. Add Heinz 57 Steak Sauce. Mix in well. When puff pastry is thawed sufficiently to unfold, roll out on lightly floured surface to make it 1/2 again bigger than it is now. Place on ungreased cookie sheet, or with parchment paper on it. Take a small paring knife and LIGHTLY score around the edge about 1/2" in from the edge, but DON'T cut all the way through. This will allow it to puff up when baking. Then take a fork and prick all over the inside area. Put caramelized onions on puff pastry first, avoiding the outer scored edge. Then put meat filling on top of it. Sprinkle with ribboned basil and dot with cheese. Bake in preheated oven for 15 to 18 minutes, or until edged are golden brown and puffy.
  • Serve with a nice garden salad.
