½ cup chopped onion
¼ cup shredded carrots
¼ cup diced green bell pepper
5 low-sodium buttery round crackers, crushed (such as Ritz Crackers®)
1 egg, lightly beaten
1 tablespoon milk
1 teaspoon garlic and herb seasoning blend (such as Mrs. Dash®)
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Place turkey, onion, carrots, bell pepper, crackers, egg, milk, seasoning blend, and pepper into a mixing bowl. Blend gently using your hands until combined. Mold into a loaf shape and place onto the prepared pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 40 to 45 minutes.

1 1/2 lbs ground turkey
1/4 cup yellow onion, minced
1/2 cup carrot, peeled and grated
1/4 cup celery & leaves, minced
1 cup dried whole wheat bread crumbs
1/2 cup unsalted turkey stock or 1/2 cup unsalted chicken stock
1/2 teaspoon dried sage
1/2 teaspoon poultry seasoning
1 large egg, beaten lightly
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup cranberry sauce, at ROOM TEMPERATURE (canned or homemade preferably-read *NOTE)
fresh sage leaf (to garnish)

Steps:

  • *NOTE: If using canned cranberry sauce, drain first.
  • Preheat oven to 350 degrees.
  • In large bowl combine all ingredients *except* for the cranberry sauce and sage leaves. Do not overmix.
  • Lightly oil or spray a 9"x5" loaf pan. Turn the meat mixture into the prepared pan and gently pat down.
  • Bake the mixture until the loaf is firm and top is lightly browned, approximately 1 hour.
  • Remove pan from oven and spread the cranberry sauce on top of the meatloaf. Let stand in the pan for 5-10 minutes before serving.
  • Remove meatloaf from pan and transfer to serving platter. Garnish with a few sage leaves.

This is a Awesome (!) meatloaf that I've adapted from a turkey meatloaf recipe from allrecipes.com. The original recipe calls for 2# of ground turkey, but this recipe is better with 1# of ground chicken and the added shredded veggies. You can use ground turkey, but I personally prefer the milder taste of ground chicken. This meatloaf tastes amazing and is a great way to incorporate more colorful veggies into your menu (or to hide them for picky little ones). Bon apetit!

1 cup milk
1 cup panko breadcrumbs (use panko, regular breadcrumbs will make the loaf mushier)
1 lb ground chicken or 1 lb turkey
1 carrot, grated (approx 1/4 cup)
1/2 zucchini, grated (approx. 1/4 cup)
1/2 medium onion, diced
1 egg
1 cup mozzarella cheese
1/2 cup sharp cheddar cheese (or other cheese with a stronger flavor)
2 tablespoons salt-free Italian herb seasoning (I used Paul Prudhomme's Pasta Magic, but it has heat, so avoid if making for kids)
1 teaspoon seasoning salt
1/4 teaspoon pepper
2 teaspoons Worcestershire sauce
ketchup, to drizzle on top

Steps:

  • Preheat oven to 400 degrees.
  • Place milk and breadcrumbs in a bowl and let soak while mixing the rest of the ingredients.
  • Pat and squeeze the shredded zucchini and carrots between paper towels to soak up extra moisture.
  • Place ground turkey, carrot, zucchini, onion, eggs and cheese in a large bowl and mix by hand.
  • Once the breadcrumbs have soaked up all of the milk, mix in the 2 Tbs of Italian seasoning and add to the turkey mixture.
  • Stir in the seasoned salt, pepper, and worcestershire.
  • Place mix in a greased loaf baking pan and drizzle the ketchup on top.
  • Bake at 400 degrees for 55minutes or until the internal temperature reaches 180 degrees. Remove from the oven, cover tightly with tin foil and let sit for 10 minutes.

I love this recipe for making dog food for my girls, Cleo (Carolina Dog) and Dixie (Beagle mix). This recipe makes enough to last my two dogs about one week and they absolutely love it! My vet told me that he thought that they were getting what they need with this recipe, but that I could add a supplement twice a week, if I wanted. I also add fish oil with omega 3 once daily. Just snip the end of the gelcap and squeeze contents over food before serving. My girls think that this is very yummy!

- 10-15 cups cooked rice (5 cups dry rice cooked with 8 to 10 cups water will yield about 10 to 15 cups cooked rice)
- 10 pounds ground turkey
- 18 eggs
- 2 to 4 pounds cooked veggies

Steps:

  • 1. In a large stock pot, cook rice until tender and water is absorbed and set aside to cool. When cool, mix in ground turkey. Preheat oven to 350 degrees.
  • 2. Place eggs (including shells) in a blender and puree until shells are finely ground. Puree cooked vegetables. Add eggs and vegetables to rice mixture and mix thoroughly.
  • 3. Spray four 9X13 casserole dishes with cooking spray. You may need a 5th casserole dish, but it can be a smaller one. Place mixture in casserole dishes and shape into loaves. Bake at 350 for 1 to 1 1/2 hours.
  • 4. Allow meat loaves to cool. Crumble into pieces and put into six to seven 8 cup plastic containers or you may use gallon sized freezer bags. You may use what you need and freeze the rest to use as needed.

1 tablespoon butter
1/2 medium onion, chopped
4 garlic cloves, minced
1 (20 ounce) package ground turkey
1 egg
1 cup breadcrumbs
1/2 cup ketchup (plus more to coat top of meatloaf)
3 teaspoons Worcestershire sauce
salt and pepper
Frank's red hot sauce
parmesan cheese (optional)

Steps:

  • Melt the butter in skillet over medium high heat.
  • Sautee the onion and garlic until soft, but make sure not to burn garlic.
  • Set aside onion and garlic to cool.
  • Combine turkey, egg, breadcrumbs, ketchup, worcestershire sauce, salt and pepper, garlic and onion, until all the ingredients are thoroughly mixed (I added about 1/2 Tbsp of Frank's Red Hot for a little kick, but can be decreased/increased depending on preference).
  • Transfer mixture to a greased 8x4 inch loaf pan.
  • Brush ketchup on top to coat.
  • Bake at 350 degrees for about 50-55 minutes.
  • If using the parmesan, add at last 5 minutes and set oven to broil so cheese gets slightly crisp (keep an eye on it so it doesn't burn!).
  • Let meatloaf set for 5 minutes after removing from oven.

3/4 cups ketchup, divided
4 teaspoons Worcestershire sauce

1/2 pound breakfast sausage (whatever flavor you like)
1/2 pound ground beef
1 large egg, beaten
1 1/4 teaspoon seasoning salt

1 tablespoon Dijon mustard
1 cup mushrooms, sliced

Steps:

  • Preheat oven to 350°F. Heat oil in a small pan add onion and cook for 5 to 7 minutes until tender. Move to a large mixing bowl. Combine 1/4 cup of the ketchup and Worcestershire sauce in a small bowl and set aside. Add all meats, remaining ketchup, egg, seasoning salt, garlic powder, Dijon mustard, mushrooms and bread crumbs to the large mixing bowl with the cooked onions. Mix until just incorporated. Mound the meat mixture into a 9x5-inch loaf pan. Bake for 45 minutes. pour off the excess grease and top with the ketchup and Worcestershire sauce mix. Bake for an additional 30 minutes. I made this wonderful, flavorful turkey meatloaf for dinner--I couldn't find a recipe that really sounded good so I built off my classic meatloaf recipe. My non-veggie eating husband (well, he does eat anything potato and anything corn) loved it and my four year gobbled hers down and asked for more! I really hope that you enjoy this meatloaf as much as we did! **It is a large recipe because I always make extra so that my husband has something for lunch the next day at work.**

2 lbs lean ground turkey
2 tablespoons olive oil
7/8 cup skim milk (7 ounces)
2 egg whites
5 slices whole wheat bread (toasted and crumbed)
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
15 ounces peas (pureed)
1 teaspoon olive oil (for peas)
1 cup carrot (finely minced)
1 large onion (minced)
1 1/2 cups ketchup
1 tablespoon mustard powder
2 tablespoons packed brown sugar

Steps:

  • Preheat oven to 350.
  • Drain peas and rinse well with cold water. Put in food processor (or you can use a medium sized bowl and a fork to mash) with one tsp olive oil and blend until pureed. Also, mince carrots and onions and toast the bread. When making the bread crumbs, make sure the bread is completely cooled. I place it in a ziploc and rub it with my hands to crumble it.
  • Combine turkey, 2 tbsp olive oil, egg whites and milk (I use my stand mixer), mixing until it is well blended.
  • Add garlic powder, basil, thyme, and pepper blend well.
  • Slowly add the carrots and onion, making sure that they mix throughout the meat mixture.
  • Add the pureed peas, blend well.
  • Slowly add in the bread crumbs and make sure that they are blended throughout.
  • Spoon meat mixture into 8x8 glass pan.
  • Bake for 45 minutes.
  • Prepare the topping while it is baking: mix ketchup, mustard powder and brown sugar together in a bowl and set aside.
  • Once the meatloaf has cooked for 45 minutes, remove it from the oven and drain any fat that may have come off the meat (I had very, very little). Cover the top with the ketchup mixture and place back in the oven for another 10 minutes.
