Time 1h5m

Yield 8

Number Of Ingredients 18

1 1/2 lb. ground beef
1 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 garlic clove, minced
1 (6-oz.) can tomato paste
3/4 cup water
1 teaspoon paprika
1/2 teaspoon salt
1 (16-oz.) can baked beans, undrained
2 cups Progresso™ chickpeas (garbanzo beans), drained (from 19-oz can)
1 1/2 cups Pillsbury BEST® All Purpose or Unbleached Flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup margarine or butter
1/2 to 3/4 cup milk
2 tablespoons sliced stuffed green olives
1 tablespoon slivered almonds

Steps:

  • In 12-inch skillet, combine ground beef, celery, onion, bell pepper and garlic. Cook over medium-high heat until beef is browned and thoroughly cooked and vegetables are crisp-tender, stirring frequently. Drain. Reduce heat to low. Stir in tomato paste, water, paprika and 1/2 teaspoon salt. Add baked beans and garbanzo beans; simmer while preparing biscuits, stirring occasionally.
  • Heat oven to 425°F. Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, baking powder and 1/2 teaspoon salt; mix well. With pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Gradually stir in enough milk until mixture leaves sides of bowl and forms a soft, moist dough.
  • On floured surface, gently knead dough 8 times. Roll dough to 1/4-inch thickness. Cut with floured 2 1/2-inch doughnut cutter. Reserve dough centers. Reroll dough to cut additional biscuits.
  • Reserve 1/2 cup of beef mixture. Pour remaining hot beef mixture into ungreased 13x9-inch (3-quart) glass baking dish. Arrange biscuits without centers over hot beef mixture. Stir olives and almonds into reserved 1/2 cup beef mixture; spoon into center of each biscuit. Top each with biscuit centers.
  • Bake at 425°F. for 15 to 25 minutes or until biscuits are golden brown.

GRANDMA'S GROUND BEEF CASSEROLE

Grandma's Ground Beef Casserole image

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

Time 1h15m

Yield 6

Number Of Ingredients 10

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
  • Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

Number Of Ingredients 13

1 tablespoon plus 1 teaspoon vegetable oil
1 1/2 pounds beef chuck, cut into 1/2-inch pieces
Coarse salt and ground pepper
1 medium onion, diced medium
1 garlic clove, minced
1/2 cup dry white wine
1 3/4 cups low-sodium chicken broth
1 dried bay leaf
4 parsley sprigs, plus 1/4 cup chopped leaves for serving
2 wide strips lemon zest
4 ounces mixed dried fruit, such as figs, prunes, and apricots, quartered
1/2 cup blanched whole almonds, toasted
Cooked brown rice, for serving

Steps:

  • Preheat oven to 350 degrees. In a large Dutch oven or heavy pot with a tight-fitting lid, heat 1 tablespoon oil over medium-high. Season beef with salt and pepper. In 2 batches, cook beef until browned on all sides, about 5 minutes per batch. Transfer to a plate. To pot, add remaining 1 teaspoon oil, onion, and garlic and cook over medium until onion is translucent, about 6 minutes. Add wine and cook until slightly reduced, about 3 minutes.
  • Return beef to pot; stir in broth, bay leaf, parsley sprigs, lemon zest, and 1 1/2 cups water. Bring to a boil. Cover, transfer to oven, and cook 45 minutes. Stir in dried fruit and cook, uncovered, until meat is fork-tender, 35 minutes. Stir in almonds; cook 5 minutes. Remove bay leaf, parsley sprigs, and lemon zest. Serve stew over brown rice and top with chopped parsley.
