BACON WRAPPED GRILLED VENISON BACKSTRAP ROAST

My husband loves to fish and hunt and the boys and I love the results that come off the grill! Venison is extremely lean so the bacon not only adds flavor but the needed fat as well.

11/2 lb venison backstrap roast
3 slice pepper bacon, thick sliced
1/4 c soy sauce
2 Tbsp olive oil
2 clove garlic, minced
2 Tbsp worcestershire sauce
1 Tbsp rosemary, dried
1 Tbsp thyme, dried
2 tsp salt and pepper

Steps:

  • 1. Rub roast with olive oil. Sprinkle all sides with salt, pepper, rosemary and thyme.
  • 2. For Marinade: Mix together the soy sauce, 2tbsp olive oil, garlic and Worcestershire sauce.
  • 3. Pour marinade over roast in glass baking dish. Cover. Let marinade 2-5 hours in refrigerator.
  • 4. Remove from refrigerator 30 minutes prior to grilling. During this time prepare the charcoal grill to med-high heat.
  • 5. Wrap bacon around roast and secure with toothpicks.
  • 6. Spray BBQ grill plates with non stick spray. Sear roast 3 minutes per side.
  • 7. Move roast to medium heat on the grill and continue to grill until the internal temperature reaches 140°F. This is for medium rare, any higher and the roast will be dry and tough.
  • 8. Remove from grill and let rest 10 minutes before slicing.

4 (8-ounce, 1 1/2-inch-thick) venison chops
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, cut into pieces
4 fresh sage leaves, cut into thin strips, plus whole leaves for garnish
12 fresh blackberries, sliced in half

Steps:

  • Preheat the grill to high or heat a grill pan over high heat.
  • Brush both sides of the chops with the oil and season with salt and pepper. Put on the grill and grill until golden brown and slightly charred, about 4 minutes. Reduce the heat to medium, flip the chops, and continue cooking until cooked to medium-rare, about 8 minutes longer. Transfer to a platter, tent loosely with foil, and let rest for 5 minutes before serving.
  • While the venison is resting, melt the butter in a medium sauté pan over medium-low heat. Add the sliced sage leaves and cook, occasionally stirring and turning the leaves, until the edges curl and the butter is dark amber but not black or burned, about 5 minutes. Add the blackberries to the butter and cook for 20 seconds. Season with salt and pepper.
  • Spoon some of the butter onto 4 large plates, top with the veal chops, and spoon some of the blackberries and butter over each chop. Garnish with fresh sage leaves.

1 cup red wine vinegar
1/2 cup honey
1/2 cup soy sauce
1/4 cup ketchup
Dash pepper
Dash garlic powder
1-1/2 pounds boneless venison steak, cut into 1-1/4-inch cubes
8 to 12 cherry tomatoes
8 to 12 fresh mushrooms, optional
1/2 medium green or sweet red pepper, cut into 1-1/2 inch pieces
1 to 2 small zucchini, cut into 1-inch chunks
1 large onion, cut into wedges
8 to 12 small new potatoes, parboiled

Steps:

  • In a glass bowl or plastic bag, combine vinegar, honey, soy sauce, ketchup, pepper and garlic powder; set aside 1/4 cup for vegetables. Set aside 3/4 cup for basting. Add meat to bowl or bag; stir or shake to coat. Cover (or close bag) and refrigerate for 4 hours. One hour before grilling, toss vegetables with 1/4 cup reserved marinade., Drain and discard marinade from meat., Thread meat and vegetables alternately on skewers. Grill over medium-hot heat for 15-20 minutes or until a thermometer inserted in the venison reads 160°, turning and basting frequently with reserved 3/4 cup marinade.

GRILLED VENISON BITES (DEER BALLS) (CAJUN)

When you serve these up, the joke is; you have to kill a lot of deer to get this many ;o). Of course, they aren't really deer family jewels--they are actually bite size pieces of deer back strap or tenderloin. I got this recipe from a Cajun gentleman I hunt with in Haughton LA named Claude. I "guarunteeee", even people who say they don't like venison will eat a plate full of these. I prefer to use Tony Cachere's Cajun seasoning, thin cut bacon, zesty Italian dressing, and cook them over mesquite, but any wood or charcoal will do. Enjoy!

1 lb venison
1 lb bacon
16 ounces Italian dressing
1 -2 tablespoon Tony Chachere's Seasoning

Steps:

  • Cut venison into bite size bits.
  • Cut bacon into 3-4 inch pieces. You may even want to cut the bacon strips in half, length-wise first, depending on the width of the bacon.
  • Wrap each chunk of meat with a piece of bacon, using a tooth pick to hold in place.
  • Place wrapped venison in a plastic bag and cover with dressing. Marinate over night.
  • Place marinated deer balls on plate and sprinkle with seasoning.
  • Grill until bacon is crisp, turning often. I found the easiest way is to use a fish basket, that way you can turn them all over at once. Another way is to use a skewer. No mater what method you use, watch for flare ups, since the oil in the Italian dressing will cause quite a blaze if you don't keep an eye on it. I walked away one time to get a beer and when I came back my balls were burnt to a crisp.

GRILLED VENISON CHOPS, STEWED CHESTNUTS AND FRUIT

12 chestnuts (4 ounces)
1 large (8 ounce) apple, peeled, cored and quartered
2 ounces dried figs
2 ounces dried apricots
3 ounces extra-large pitted prunes
1 dried chili pepper
1/2 cup chicken stock (preferably homemade)
2 teaspoons freshly ground black pepper
2 teaspoons ground toasted juniper berries (see note)
1 1/2 teaspoons olive oil
8 venison chops, cut from the rack, trimmed of all fat (1 pound meat)
2 cups beef stock (preferably homemade) reduced to 3/4 of a cup
1 teaspoon arrowroot dissolved in 1 teaspoon water
1 teaspoon of water

Steps:

  • Preheat the oven to 450 degrees.
  • With a sharp paring or razor-tipped knife, cut around each chestnut through the shell in a ring about a third of the way down from the root end. Spread the chestnuts in a pan and bake in the preheated oven for about 10 minutes. The chestnuts should be cooked and the shell loose enough to peel away easily.
  • Put the peeled chestnuts in a two-quart pot with the apple, figs, apricots, prunes, chili pepper and chicken stock. Bring the liquid to a boil. Cover, lower the heat and cook for about 30 minutes. All the liquid should be absorbed and the fruit soft but still in large pieces. Keep warm.
  • Heat grill or broiler. Combine the ground pepper and juniper in a small bowl. Put the olive oil on a plate. Turn each chop in the oiled plate, then sprinkle an eighth of a teaspoon pepper mixture on each side. Place them on the hot grill or under the broiler. Cook one minute per side for rare.
  • Bring the juice stock to a boil and stir in the dissolved arrowroot. Cook a moment until the sauce thickens. Season it with freshly ground black pepper. Serve two chops per person with some of the sauce and the dried fruits on the side.

2 lbs venison tenderloins, cut into 2 inch chunks (backstrap)
1 quart apple cider
1 1/2 lbs thick sliced bacon
2 (12 ounce) bottles barbecue sauce, your choice

Steps:

  • Place chunks of venison into a shallow baking dish, and pour enough apple cider in to cover them. Cover, and refrigerate for 2 hours.
  • Remove, and pat dry. Discard apple cider, and return venison to the dish. Pour barbecue sauce over the chunks, cover, and refrigerate for 2 to 3 more hours.
  • Preheat an outdoor grill for high heat. Charcoal is best, but if you must, use gas. Remove meat from the refrigerator, and let stand for 30 minutes, or until no longer chilled. Wrap each chunk of venison in a slice of bacon, and secure with toothpicks.
  • Brush the grill grate with olive oil when hot, and place venison pieces on the grill so they are not touching. The bacon will kick up some flames, so be ready. Grill, turning occasionally, until the bacon becomes slightly burnt, 15 to 20 minutes. The slower, the better. Dig in, and prepare to want more!

This is the best venison recipe ever! My husband found it in a hunting book from the library. People who do not prefer deer meat have eaten it all up. You must let it marinade for the full 48 hours, or the meat will not be as tasty or tender. (Believe me, I know from experience!)

1 cup raw wild rice
Salt
1/2 cup pecan pieces
1 tablespoon peanut oil
1 pound venison, duck or wild boar sausage
2 scallions, sliced thin
1 cup chopped fresh Italian flat-leaf parsley
1/4 cup sherry wine vinegar or red-wine vinegar
1/2 cup walnut oil
Freshly ground pepper to taste

Steps:

  • Wash rice well. Bring 3 cups water to boil in heavy 2- to-3-quart saucepan. Add rice and 1/2 teaspoon salt. When water returns to a boil, cover and simmer 40 minutes or until rice is tender.
  • If using grill, preheat it.
  • While rice is cooking, toast pecan pieces in peanut oil over medium-low heat, stirring constantly, until lightly browned, about 5 minutes. Transfer, with any oil remaining in pan, to a large bowl.
  • Grill or pan-fry the sausage over medium heat, turning often, until brown and cooked through, 12 to 15 minutes. Remove from heat and let stand for 5 minutes.
  • Add the cooked rice, scallions, parsley, vinegar and walnut oil to the pecans. Mix well to coat the rice with the oil and vinegar evenly. Season to taste with salt and pepper.

3 Tbsp olive oil
6 clove garlic minced
1 Tbsp each red wine vinegar, dry sherry, and worcestershire sauce
1 tsp each salt, oregano, thyme, onion powder, and black pepper
1 large venison heart sliced into pieces
PEPPERS AND ONIONS
1 large orange bell pepper sliced
1 large red bell pepper sliced
1 large sweet onion sliced
olive oil and salt

Steps:

  • 1. For the heart Soak a fresh heart in salted water overnight. Squeeze out all the blood. Cut the vena cavas off slice down the side and open it like a book. Remove the valves and the fibers inside. Turn it over and remove any fatty areas. Slice into strips. Mix the marinade ingredients together and add the meat. Marinade for 24 to 48 hours.
  • 2. Get a grill really hot. Drizzle the olive oil over the peppers and onions. Sprinkle with salt. Place on a grill basket and place on the grill. Grill until charred and softened.
  • 3. Add the pieces of venison heart to hot grill. Grill 2 to 3 minutes per side. You don't want to overcook it. Overcooked heart will become tough brown and chewy. Cooked it until it is medium rare just warm on the inside.
  • 4. Serve with peppers and onions.

1-2 deer hearts, or 1 elk, moose or beef heart
4 tablespoons olive oil, divided
1 tablespoon sherry or red wine vinegar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon ground black pepper
3-4 colored bell peppers, cut into 2-3 pieces
1 large onion, cut into large wedges

Steps:

  • Trim the hearts as discussed above. In a large bowl, mix 2 tablespoons of olive oil with the vinegar, Worcestershire sauce, salt, oregano, thyme and black pepper. Massage the marinade into the meat, put everything into a container that can just about hold everything and marinate for as little as 30 minutes, or as much as 2 days. When you are ready to cook, get your grill hot. Coat the peppers and onion in the rest of the olive oil and salt well. Grill everything on high heat. Put the hearts and veggies on the grill - skin side down for the peppers - and leave them alone with the grill cover open for 8 minutes. Flip everything and grill, uncovered, for 5 more minutes. Check the peppers and onions, and when they are nicely cooked with a little char, remove and put in foil to steam. Remove any blackened skin from the peppers. If the hearts are not cooked through yet, cover the grill and cook for 2-5 more minutes. If you are using a thermometer, you want to get the meat off the grill when it is 135 degrees in the center. You can also use the finger test for doneness. Tent the hearts loosely with foil and let rest for 5-10 minutes. Sprinkle with black pepper and good sea salt at the table. YOU DO NOT WANT TO OVER COOK THE HEART. IT CAN BE AS TENDER AS FILET MIGNON IF COOKED PROPERLY. 135 F SHOULD BE THE TEMP YOU AIM FOR 140F MAXIMUM.

2 pounds venison steaks, cut from the leg, 5 to 6-ounce portions
6 Italian or Portuguese sandwich rolls
2 tablespoons olive oil
2 cups shredded iceberg lettuce
1 cup spicy bread and butter zucchini pickles
2 to 3 fresh jalapeno peppers, seeded and thinly sliced
Coarse salt to taste
1 cup coffee barbecue sauce, recipe follows
1\2 cup very strong black coffee, espresso preferred
1 cup ketchup
1/4 cup red wine vinegar
3/4 cup firmly packed dark brown sugar
1 onion, peeled and chopped, about 1 cup
2 cloves garlic, peeled and crushed
2 tablespoon dark molasses
3 fresh hot chili peppers, such as jalapeno, seeds removed
2 tablespoons hot dry mustard mixed with 1 tablespoon water
2 tablespoons Worcestershire sauce
2 tablespoons ground cumin
2 tablespoons ancho chili powder

Steps:

  • Combine the olive oil, honey, vinegar, chili powder, black pepper, garlic, coriander, cumin and cayenne in a flat dish and mix well to form a paste. Coat the venison steaks uniformly with this seasoning mixture and allow to marinate overnight, refrigerated.
  • Preheat an outdoor hardwood charcoal grill for about 20 to 30 minutes or until the coals have turned white.
  • Cut the rolls in half, brush some olive oil on the inside of the rolls and toast the rolls briefly over the grill.
  • Divide the lettuce evenly between the rolls, top with equal amounts of pickles and jalapeno peppers.
  • Season the venison steaks with coarse salt and lay them out on the grill, trying not to overcrowd the grilling surface. Depending on the size of your grill you may need to do this in two batches. Cooking quickly over a hot fire, 3 to 4 minutes on each side for medium-rare steak sandwiches. The venison will also cook very quickly because of its naturally lean texture. Be careful of flare ups from the oil in the marinade.
  • Finish the hoagie by placing a venison steak on each roll and top the venison off with some coffee barbecue sauce.
  • Combine all ingredients in a saucepan and simmer over low heat for 20 minutes. Cool, then puree in a blender or food processor until smooth. You may leave this chunky or strain through a wire mesh for a smoother textured sauce. This can be stored in the refrigerator for up to 2 weeks in a covered container. Yield: 1 1/2 cups

GRILLED VENISON PACKETS

This is a simple way to enjoy venison steaks. The foil packet is easily made by ripping off a large sheet of foil, place ingredients on one half, fold the foil over the ingredients and then fold all the edges over to seal the packet. If you like spicy, go ahead and increase the seasoning to 2 teaspoons (I usually just sprinkle it on). You can also add some minced garlic or a shot of wine. Grilling time will vary on how thick your steaks are and how you like it cooked.

10 ounces fresh button mushrooms, sliced

CHAR-GRILLED BACON WRAPPED VENISON BITES image

This is our favorite recipe for grilled venison. The marinade tames the "gamey" flavor and makes the meat tender and the bacon helps to keep it moist and adds that delicious bacon flavor. Everyone we know, who has tried it, has loved it. Even the children love it. You may also use beef instead of venison.

2 pound(s) venison tenderloin or roast
1 bottle(s) allegro marinade or homemade marinade (see note)
1 to 1 1/2 pound(s) hickory smoked bacon
- toothpicks or skewers

Steps:

  • Cut meat into 1 1/2 inch to 2 inch chunks and place in nonreactive bowl.
  • Pour marinade over meat, stir and press down to cover with marinade.
  • Cover bowl, place in refrigerator for at least 8 hours (overnight is preferable.)
  • About 1 hour before starting charcoal in grill, remove meat from refrigerator; drain off and discard marinade.
  • Cover your work surface with freezer paper, if desired, to cut down on the mess, then lay out toothpicks or skewers.
  • Cut bacon strips in half and wrap around each chunk of meat, securing with a toothpick or sliding onto skewer; continue with remainder of meat. (If extra meat remains when bacon is gone, just grill it naked!)
  • Grill meat over medium-low heat (300-325 degrees F, the cooler side of the grill), turning often for about 8-10 minutes, then move to hottest area of grill and cook until bacon is mostly browned (1 or 2 minutes.)
  • Remove and keep covered until serving.
  • Refrigerate covered leftovers.
  • NOTE: You may make and use your own marinade. Mix together: 1 cup soy sauce 3/4 cup worcestershire sauce 1/8-1/4 cup lime juice 1 clove garlic, minced or pressed 1/2 teaspoon ground ginger (optional) 1/4 teaspoon fresh ground black pepper (optional)

1.5 to 2 pounds venison loin, trimmed of silver skin
kosher salt and freshly ground black pepper
2 tablespoons chopped fresh herbs, like rosemary, thyme, and oregano
3 tablespoons olive oil
1 cup crème fraîche
2 tablespoons freshly grated or prepared horseradish
2 teaspoons chopped fresh
chives or parsley
juice and zest of 1 lemon

Steps:

  • Season the meat with salt and pepper. In a small bowl, mix herbs with the olive oil, then spread all over the meat. Refrigerate for at least 2 hours. Make a hot fire in a charcoal grill or set a gas grill on high. Grill the meat on one side, without moving it, 4 to 5 minutes, then rotate 90 degrees to make grill marks and char more surface area. Flip the loin and cook 4 to 5 minutes more. It should have a deep-brown char on the outside but still be rare on the inside. Transfer to a warm plate and allow to rest for 10 minutes. Mix the crème fraîche, horseradish, chives, lemon juice, and zest in a small bowl and season with salt. Serve the loin, thinly sliced against the grain, with the sauce.

GRILLED REVERSE SEAR VENISON LOIN

1 pound Venison Loin (whole, trimmed)
1/4 cup Olive Oil
1/4 cup Soy Sauce
1/8 cup Worcestershire
2 Garlic Cloves
1 Lemon
1/2 teaspoon Salt
1 pinch Red Pepper Flakes

Steps:

  • Combine olive oil, soy sauce, and Worcestershire in small bowl
  • Squeeze juice from lemon into bowl, discarding the lemon
  • Press garlic and add to bowl
  • Add red pepper flakes, salt and pepper, stir well
  • Trim venison loin, making sure to remove "silverskin", place in waterproof freezer bag
  • Add marinade from bowl to bag
  • Refrigerate 4 - 8 hours
  • Preheat grill or smoker to 200F
  • Remove loin from fridge while grill warms up
  • Add loin to smoker and smoke until internal temperature is 15 degrees below final desired temperature (I like my venison very rare at 125, so I remove it from the smoker at 110).
  • Remove venison from smoker at desired temperature and cover with foil
  • Preheat grill to highest temperature setting (tip: I use both a smoker and a grill, so I start preheating the grill 15 minutes before I am ready to remove the loin from the smoker)
  • Place loin on hottest part of the grill and brown (2-5 min), repeat browning all sides (tip to get a good maillard reaction (browning) and prevent overcooking the meat, I leave the grill uncovered during this step)
  • Check internal temperature to ensure loin has reached desired temperature, remove from grill, tent with foil and rest
  • Slice thinly across the grain and serve

For the venison loin:
1 1/2 to 2 pounds venison loin, trimmed of all silver skin
Kosher salt and freshly ground black pepper to taste
2 tablespoons finely chopped fresh herbs, such as thyme, marjoram, oregano, rosemary, savory, and/or parsley
3 tablespoons olive oil
For the horseradish cream sauce:
1 cup crème fraîche or sour cream
2 tablespoons freshly grated or prepared horseradish, or more to taste
2 teaspoons chopped fresh chives or parsley
Juice and zest from 1 lemon, preferably organic
Salt to taste

Steps:

  • Grill the venison loin: Season the meat with the salt and pepper. In a small bowl, mix the herbs with the oil and spread all over the meat. Cover and refrigerate for 2 hours or up to overnight. Make a hot fire in a charcoal grill or set a gas grill on high heat. Grill the meat, without moving it, until nicely browned, 4 to 5 minutes. Then rotate the venison 90° and leave it for just a minute to make grill marks. Flip the loin and cook for 4 to 5 minutes more, again rotating the venison if desired. You want to aim for a good, deeply charred outside but a nice and rare inside. This ought to happen after just 10 minutes total cooking. Transfer to a cutting board and allow to rest for at least 10 minutes while you make the sauce. Make the horseradish cream sauce: Mix the crème fraîche, horseradish, chives, lemon juice, and zest together in a small bowl, and season with salt. To serve the venison loin Thinly slice the loin against the grain, pile it onto plates or a platter, and serve with the horseradish cream sauce.
