MARINATED GRILLED TUNA STEAK
The secret to a perfect tuna steak is to cook it as you would a rare or medium-rare steak, overcooking will produce a tough dry fish, the center needs to be pink -- plan ahead the steaks need to marinade for 8-24 hours, prep time includes refrigeration time --- I have made this in the past many times it is *very* good!

Steps:
- In a bowl combine all marinade ingredients until well blended.
- Place the tuna steaks into a shallow glass dish (I use an 11 x 7-inch baking pan for this).
- Pour the marinade over the tuna steaks and turn to coat.
- Cover with plastic wrap.
- Refrigerate 8-24 hours (turning a couple of times during chilling).
- Preheat the grill to HIGH heat.
- Oil the grill grate.
- Remove the steaks from marinade (discard any marinade) and place on a plate.
- Season lightly with freshly ground black pepper on both sides.
- Grill the steaks for 5 minutes per side or until rare or medium-rare (DO NOT overcook the tuna or it will be dry!).
- Delicious!

- In a large plastic bag combine soy sauce, lemon juice, 2 tablespoons vegetable oil, garlic, sugar, pepper and salt. Add tuna steaks, coating well with marinade. Seal bag, and refrigerate at least 30 minutes, and up to 2 hours.
- Place a ridged grill pan over medium-high heat for about a minute. Brush pan with vegetable oil. Remove fish from marinade, discarding liquid, and add to pan. Cook to taste (3 minutes on each side for medium-rare). Serve immediately.

- Make the butter: Combine butter, garlic, lemon juice and parsley and mix well. Cover and refrigerate.
- In another small bowl, combine the salt and pepper and mix well. Press the tuna steaks into the mixture and coat on all sides; drizzle tuna lightly with olive oil.
- Grill over a medium-hot fire for 4-5 minutes per side for medium rare, depending on thickness.
- Serve with a large spoonful on the butter on top of each steak.

- 1. Mix 1 cup of orange juice the soy sauce and paprika together. Add the tuna steaks to the marinade and let marinate 30 minutes.
- 2. Add the other 1 cup of orange juice to saucepan and add the pineapple, red onion, jalapeno, and honey. Bring to a boil. Reduce to a simmer and simmer 20 minutes.

- Pat the tuna dry with paper towels and rub with 2 tablespoons of the oil. Sprinkle both sides of the tuna with a fair amount of salt and pepper-you should see the seasoning on the fish. Coat the onions in the remaining tablespoon of oil and season them with salt and pepper.
- Preheat an outdoor gas or charcoal grill until very hot or put a grill pan or cast-iron skillet over medium-high heat. Lay the tuna steaks on the grill and sear for 2 to 3 minutes on each side, rotating halfway through cooking to "mark" them. - Sprinkle both sides of fillet with Tony's seasoning.
- Top the fillets with 1 pat of butter on each fillet.
- Squeeze the lemon and lime all over the fillets, (about 1 teaspoons of each on each fillet).
- Turn heat on using HIGH setting. Wait for 20 minutes before adding fillets.
- Grill on preheated grill, over indirect heat for 5 minutes per side, then serve. (The middle will be red and the outside cooked to perfection).

- Combine Olive Oil, Old Bay, Lime and Lemon Juice.
- Mix Well.
- Pour over Tuna Steaks and marinade 20 minutes, turning occasionally.
- Make sure grill is hot - place steaks in hottest section and Sear steaks 1 to 2 minutes per side to seal in the juices.
- Finish cooking just slightly away from the hottest area - 8 to 10 minutes per inch of thickness.
- My husband likes extra Old Bay on his steak so he sprinkles extra on before cooking and we also like to squeeze fresh lemon over our tuna before we eat it.
