GRILLED PINEAPPLE WITH CILANTRO
For delicious this side dish you don't need to spend a lot of time. It's easy and fast to prepare. Fits perfectly with other pacific islands chicken or fish recipes. Posted for ZWT7. For a Tex-Mex version don't use sesame oil and soya sauce and replace some salt and some drops tabasco if desired. Thanks!

Steps:
- Stir in a big bowl all the ingredients until ginger together.-.
- Transfer in a flat baking mold in order to have only one layer pineapple crunches.
- Top with sugar.
- Broil until pineapple is caramelized.
- Top with remaining fresh cilantro and serve hot or chilled.
- Note: I've never tried this recipe with canned pineapple and canned roasted peppers. I suppose that this would work as well too. In any case I'm sure that the fresh ones are better! If you try, please let me know!
GRILLED TEQUILA-CILANTRO PINEAPPLE
This is an out-of-the-ordinary side dish that always turns into a conversation piece.

Steps:
- Cut the pineapple lengthwise into 8 wedges. Place the wedges into a sealable plastic container or sealable plastic bag. In a small bowl, stir together the cilantro, tequila and chipotle. Pour into the container with the pineapple. Cut lemon and lime in half, squeeze out some juice and put the juice and fruit into the container. Season with salt and pepper. Marinate in the refrigerator for at least one hour, turning pineapple once.
- Preheat an outdoor grill to medium-high heat. When the coals are hot, brush a light coating of oil on the grate.
- Grill wedges for about 4 to 5 minutes on each side. If you like you can make a sauce by cooking the marinade in a saucepan over medium-high heat. Bring to a boil and cook until the sauce is thick and syrupy. It will be very spicy!

- Stir first 4 ingredients in small bowl until sugar dissolves. Thread pineapple pieces onto 6 skewers, dividing equally. (Tequila mixture and pineapple skewers can be made 8 hours ahead. Cover separately and chill.)
- Prepare barbecue (medium heat). Grill pineapple until brown, basting with tequila mixture and turning occasionally, about 10 minutes total. Remove pineapple from skewers; serve hot or warm.
