1 sweet onion (such as Vidalia®)
3 tablespoons crumbled blue cheese, or to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Cut off enough from the bottom of the onion for it to sit flat. Scoop out 1/3 of the flesh starting from the top of the onion. Fill the core with blue cheese.
  • Wrap the onion in aluminum foil and grill, blue cheese-side-up, until tender, about 40 minutes.

Onions are cored then stuffed with a cheesy bacon filling. Grilling brings out the flavors in this great appetizer or side dish.

6 slices bacon, finely chopped
6 small yellow onions, peeled
4 serrano chiles, finely chopped
4 cloves garlic, finely chopped
1 cup shredded mild Cheddar cheese
4 ounces Neufchatel cheese, softened
2 teaspoons chopped fresh thyme
6 tablespoons balsamic vinaigrette salad dressing

Steps:

  • Preheat an outdoor grill for medium indirect heat and lightly oil the grate.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, cut a thin slice from the top of each onion; discard tops. Use a small spoon to scoop out the centers of the onions, leaving 1/2-inch-thick shells. Finely chop and reserve removed onions.
  • Remove cooked bacon from the skillet using a slotted spoon, reserving 1 tablespoon drippings in skillet. Drain bacon on a plate lined with a paper towel. Add 1 cup reserved chopped onions to the skillet. Cook over medium heat until onions are crisp-tender, about 5 minutes. Add serrano chiles and garlic to the skillet and cook 2 minutes. Stir in cooked bacon.
  • Mix Cheddar cheese, Neufchatel cheese, and thyme together in a bowl. Stir in bacon mixture. Spoon evenly into onion shells. Place each filled onion on a sheet of heavy duty aluminum foil. Drizzle 1 tablespoon balsamic dressing on top of each onion. Wrap foil tightly around onions, leaving room for heat circulation inside.
  • Grill on the preheated grill until onions are tender, about 25 minutes.

This innovative recipe for grilled scallop-stuffed sweet onions is from chef Masaharu Morimoto's "The New Art of Japanese Cooking."

4 large sweet onions, such as Vidalia, Maui, or Walla Walla
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 cup sake
1/4 cup soy sauce, plus more for topping onions
2 tablespoons mirin
4 very large diver or day-boat sea scallops
4 thin slices prosciutto
2 tablespoons unsalted butter

Steps:

  • Preheat oven to 325 degrees. Place onions in their skins in an 11 1/2-by-8-inch metal baking pan. Rub onions with oil and season with salt and pepper. Cover pan tightly with parchment paper-lined aluminum foil. Roast until onions are tender, but still retain their shape, about 2 1/2 hours. Remove onions from baking pan, reserving pan; let stand until cool enough to handle.
  • Cut off the top third of each onion; set aside. Cut a hole in the center of each onion large enough to hold a scallop.
  • Place baking pan on the stove over high heat. Add sake, and stir using a wooden spoon, scraping up the browned bits. Add onion centers, soy sauce, and mirin; cook, stirring, until onions are soft. Pour mixture into a small saucepan; set aside.
  • Season scallops with salt and pepper. Preheat a grill pan over high heat. Reheat sake mixture and season with salt and pepper; keep warm until ready to use.
  • Place scallops on grill and cook, turning once, just until grill marks appear on prosciutto, about 30 seconds per side. Wrap each scallop in a piece of prosciutto, enclosing completely. Stuff a scallop into each onion. Top each with 1/2 teaspoon butter, cover with reserved onion tops, and place on grill pan. Cook onions until heated through and skin is blackened, 6 to 8 minutes.
  • Remove blackened skin and divide onions among 4 serving plates. Drizzle each with sake mixture and serve immediately.

1 duck, 4 to 5 pounds
1 tablespoon sea salt or kosher salt
2 crisp tart apples, such as Granny Smith, unpeeled
3 yellow onions, peeled

Steps:

  • Cut apples and onions into quarters. Remove seeds from apples and set aside. Rinse duck with cold water and pat dry. Discard giblets and organ meats. Trim all loose fat from the inner cavity. Stuff cavity with apples and onions. Sprinkle duck liberally with salt and pierce skin in several places with a fork.
  • Place the duck, breast side up, in a roast holder (which is placed in a drip pan for gas grill) in the center of the cooking grate. Cook 1 1/2 to 2 hours, piercing the underside of the duck every 30 minutes to remove excess fat. When the duck juices run clear, and the internal temperature is 170 to 180 degrees F, remove from grill and let rest for 15 minutes. Remove apples and onions from duck cavity and place on cooking grate to crisp. Serve duck with the grilled apples and onions while still warm.

6 slices OSCAR MAYER Bacon, finely chopped
6 small onions, peeled
3 serrano chiles, finely chopped
1 clove garlic, minced
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1 cup KRAFT 2% Milk Shredded Cheddar Cheese
1 tsp. chopped fresh thyme
6 Tbsp. KRAFT Lite Balsamic Vinaigrette Dressing

Steps:

  • Cook and stir bacon in medium skillet on medium heat until crisp. Meanwhile, cut thin slice off top of each onion; discard top. Use small spoon to scoop out centers of onions, leaving 1/2-inch-thick shells. Finely chop removed onions.
  • Remove bacon from skillet with slotted spoon, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add 1/2 cup chopped onions to drippings in skillet. (Reserve any remaining chopped onions for another use.) Cook 5 min. or until onions are crisp-tender. Add chiles and garlic; cook 2 min. Stir in bacon.
  • Heat grill to medium heat. Mix cream cheese, shredded cheese and thyme in medium bowl; stir in bacon mixture. Spoon into onion shells. Place 1 on each of 6 large sheets heavy-duty foil; drizzle with dressing. Wrap foil tightly around onions, leaving room for heat circulation inside.

1 stick butter, room temperature
2/3 cup blue cheese, crumbled
4 strips bacon, crumbled
1/2 teaspoon dried thyme

Steps:

  • Hollow out onions using a melon baller. Mix all other ingredients and fill onions with mixture. Heat grill to medium heat. Place in foil pouch over direct heat on grill for 30 - 40 minutes.

My Philip came up with this recipe many years ago we have added to it and more recently wrapped them in bacon. They are a wonderful addition to any grilled meal.

4 medium sized vidalia onions
italian style bread crumbs
4 slices bacon,uncooked, chopped small
4 cloves garlic chopped
parmesan cheese
green pepper, chopped fine
salt and pepper
olive oil
4 slices hickory uncooked bacon

Steps:

  • 1. Peel onions carefully and cut bottom slightly just enough so they can sit flat. Core onion leaving a thick shell capable of holding filling in. (about a 1/3 inch)
  • 2. Chop the removed onion finely.
  • 3. In a non stick fry pan add a bit of olive oil. cook chopped onion,green peppers, bacon and garlic until bacon is cooked through and onions and peppers are tender. Add bread crumbs salt and pepper and parmesan cheese to your preference.
  • 4. Stuff the onions with this mixture. Wrap a piece of bacon around each onion and secure it with a toothpick.
  • 5. Place onions on their own piece of foil and drizzle with olive oil. Tent each onion in its foil.
  • 6. Place on prepared grill and grill for about 20 to 30 minutes or until onions are tender yet firm.
  • 7. add hickory chips or apple wood chips to grill for an even more unique flavor.
