These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

3 tablespoons lemon juice
1 clove garlic, (minced)
1 teaspoon sweet or smoked paprika
½ teaspoon dried oregano

1 to 1.5 pounds large or jumbo shrimp, (or about 24 shrimp, peeled and deveined, tails ON)
Chopped fresh parsley, (for garnish, optional)

Steps:

  • Preheat oven to 400˚F.
  • Place halved bacon slices on a wire rack set over a foil-lined baking sheet.
  • Place in the oven and bake for 10 minutes.
  • Remove bacon from oven and set aside.
  • Meanwhile, in a mixing bowl combine lemon juice, garlic, paprika, oregano, salt, and olive oil; whisk until thoroughly incorporated.
  • Add shrimp to the lemon juice mixture; let stand about 10 minutes.
  • Preheat your grill to medium-high.
  • Starting at the tail, wrap each shrimp with 1 piece of bacon.
  • Using a toothpick, secure the bacon to the shrimp.
  • Grill for 10 to 12 minutes, or until bacon is crispy and shrimp is cooked through. Flip the shrimp over halfway through cooking.
  • Garnish with parsley.
  • Serve.

8 ounces slab bacon, rind removed, cut into large dice
2 tablespoons canola oil, plus more for brushing
6 plum tomatoes, cored and diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the bacon in a cast-iron skillet over medium heat and cook, stirring occasionally, until the bacon is crisp and the fat is rendered.
  • When the bacon is just about done, heat the canola oil in a nonreactive skillet over medium-high heat. Add the tomatoes and salt and pepper and cook, stirring, just until slightly softened. Using a slotted spoon, transfer the bacon to the skillet with the tomatoes and add the cilantro, vinegar, thyme and green onions. Cook, stirring, until heated through, about 5 minutes. Set aside; keep warm.
  • Heat a charcoal or gas grill to high for direct grilling.
  • Brush the shrimp with canola oil and sprinkle with salt and pepper. Using two skewers at a time, thread four shrimp on the skewers near the tail and head ends--this makes it easier to flip the shrimp on the grill. Grill until slightly charred and cooked through, about 2 minutes per side.

2 lemons
1 tablespoon Old Bay seasoning

3 cloves garlic, minced
1 medium yellow onion, small-diced
1/4 cup minced fresh parsley

1/2 cup finely chopped onions
1 small jalapeno, seeded and chopped

1/4 cup orange juice
1 cup ketchup
16 colossal shrimp, shelled with tail on, deveined (about 1 1/4 pounds)

  • Preheat grill to medium.
  • Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.
