This is great for entertaining on summer evenings. My boyfriend isn't a big salmon fan but he loves this dish, I think because he gets to be the Grill Master for the evening. It's from the Favorite Brand Name Cookbook.

1/2 cup Miracle Whip
1/4 cup fresh chives, finely chopped
2 tablespoons fresh thyme leaves, finely chopped or 2 teaspoons dried thyme leaves, crushed
2 tablespoons fresh dill, finely chopped or 2 teaspoons dried dill weed
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup dry white wine or 1/4 cup chicken broth
2 salmon steaks (about 3/4 lb)

Steps:

  • Mix salad dressing, herbs, salt and pepper until well blended.
  • Reserve 1/2 cup salad dressing mixture to serve later with cooked salmon.
  • Stir wine into remaining salad dressing mixture; brush on salmon.
  • Place salmon on grill over hot coals (coals will be glowing) or rack of broiler pan.
  • Grill covered, or broil 5-8 minutes on each side or until fish flakes easily with fork.
  • Serve with reserved salad dressing mixture.

Pink salmon topped with a no-cook white sauce flecked with green herbs and surrounded with thin sliced cucumber. The gentle steeping preserves the flavor, texture and appearance of the salmon without heating up your kitchen. Fresh chives and dill in a creamy sauce add a divine flavor to the dish. The salmon can be served hot, cold or at room temperature.

4 (5 ounce) thin salmon fillets, skin removed
water
1 lemon, sliced
1 small onion, sliced
3/4 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill weed
salt
Tabasco sauce
1/4 lemon, juice of
3 small pickling cucumbers, thin sliced and seasoned with salt and pepper

Steps:

  • Fish: Place fish in a large shallow pan with a tight fitting cover.
  • Add enough water to cover the fish by 1 1/2 inches, then remove the fish and set aside.
  • To the water, add lemon, onion, thyme, salt and pepper, cover and bring to a full boil.
  • Remove the pan from the heat, add the fillets and cover pan tightly.
  • Let fish steep 3 to 10 minutes depending on the thickness of the fillets, then remove the salmon to a serving platter using a slotted spatula.
  • Note: for thicker fillets you will need to add the salmon to the liquid and simmer until partially cooked before removing from the heat and covering.
  • Sauce: Whisk together, mayonnaise, sour cream, chives, dill, salt and Tabasco.
  • To assemble: Place cucumber slices around the edge of the serving platter over lapping as you go. Spoon sauce across the center of each fillet and top with a few drops of fresh lemon juice.

1 cup dry white wine
1/2 cup water
1 tablespoon lemon juice
1 lb salmon fillet
3/4 cup nonfat yogurt
1/2 cup unpeeled cucumber, finely chopped (about 1/2 small)
1 teaspoon dried dill or 1 tablespoon fresh dill weed
1/4 teaspoon salt

Steps:

  • Combine first 3 ingredients in a large nonstick skillet; stir well. Bring mixture to a boil over medium heat. Reduce to low, add salmon. Simmer 8 minutes or until fish flakes easily when tested with a fork.
  • While salmon cooks, combine yogurt, cucumber, dillweed, and salt; stir well.
  • Gently transfer salmon to a serving platter, using two spatulas; spoon cucumber sauce evenly over salmon.

I came up with this for ZWT 6 for the Wild Card. It's a very tasty sauce that you baste your fish with part of it and serve the rest as you would tartar sauce.

2 teaspoons dried dill weed
1 teaspoon dried thyme leaves, crumbled
1/4 teaspoon salt

1/4 cup finely minced chives
1/4 cup dry white wine

Steps:

  • Mix everything together except wine.
  • Reserve 1/3 cup of sauce to serve with grilled fish.
  • Stir wine into remaining sauce.
  • Brush over fish before grilling. Grill salmon.
  • Serve grilled salmon with the reserved sauce as you would tartar sauce.

  • Preheat grill for medium heat and lightly oil the grate.
  • Mix mayonnaise, dill, mustard, and brown sugar in a bowl. Spread vegetable oil over salmon skin.
  • Grill salmon skin-side down on preheated grill. Spread mayonnaise mixture over top of salmon and cook until salmon is easily flaked with a fork, 6 to 12 minutes.
