There is nothing better than a prime rib roast, especially if you can find one that is USDA Prime. The problem is the amount of time it takes and the financial risk if carved undercooked. I solved the problem by creating this recipe. You get all the benefits of the roast with none of the risk. Cooking Notes: The most important rule to remember is ROOM temperature meat and time to rest after you cook it. Remember to pre-order your meat if you want Prime beef. Wine Notes: Can you say Cabernet Sauvignon? This is the place to pull out one of the old ones if you have it. Many wine shops have some past vintages in back ready for the asking!

3 USDA Prime rib-eye steaks, each about 2 1/2 pounds and 1 3/4 to 2-inches thick
Salt and freshly ground black pepper
2 heads garlic, cloves peeled
6 tablespoons extra-virgin olive oil, divided
2 sprigs rosemary
2 lemons

Steps:

  • Preheat the grill.
  • Remove the steaks from the refrigerator and allow them to come to room temperature.
  • Season steaks generously on both sides with salt and pepper. Press the salt and pepper into the steaks. Set aside.
  • Make the garlic paste: Trim the stem ends off garlic cloves.
  • Place a small skillet over medium heat and add 4 tablespoons of the oil. Add the garlic cloves and bring the oil to a simmer, then reduce the heat to low. Strip the leaves off 2 sprigs rosemary and chop to make 2 tablespoons. Add the rosemary to the garlic and cook until the cloves are golden brown, about 10 minutes, tossing occasionally with tongs.
  • Remove the skillet from the heat and allow the garlic to cool in the oil.
  • In a mortar or on a cutting board, mash the garlic into a paste. Mix the mashed garlic with the reserved oil and rosemary. You should have about 1/2 cup of paste.
  • Place the meat on a hot grill and cook until well browned on both sides, about 5 minutes on the first side and 3 minutes on the second side.
  • Cut 2 lemons in half and cut ends off. Brush with olive oil and season with salt and pepper. Place the lemons on the grill with the steaks and serve with the steak.
  • Smear 2 generous tablespoons of the paste over the first seared side of each steak. Place the steaks, paste side facing up, on the grill rack.
  • Finish cooking on the cool side of the grill, with the lid on or in the oven until done to your preference, 10 to 12 minutes for rare (remove when an instant-read thermometer registers 120 degrees F).
  • Remove the steaks from the grill and allow the steaks to rest on the rack for about 10 minutes. Cover and keep warm while resting.
  • Transfer the steaks to a cutting board. Cut between the bone and meat of each steak. Cut each steak crosswise into 1-inch slices.

OUTDOOR GRILLED PRIME RIB ROAST

My DH grilled a Prime Rib roast for company dinner last night and I will never cook it any other way, it was perfectly done. Medium on the end cuts and medium-rare in the middle. The secret is to keep the grill temperature at 475* and never peek while it's cooking!!

4 -5 lbs boneless prime rib roast
2 -3 tablespoons McCormick's Montreal Brand steak seasoning

Steps:

  • Season the roast the night before you will be cooking it. Preheat the grill to 475* (we have a gas grill with three sets of burners, light the two side burners and not the one directly under the pan) Remove the roast from the refrigerator about 30 minutes before putting it on the grill. Remove from foil and place in a roasting pan, (we use throw away aluminum pans). Cook the roast for 60 minutes, turn off the grill and allow roast to 'rest' in the hot grill for an additional 60 minutes. It will be wonderful and you will have a great tasting au jus in the baking pan, just skim off the fat. Note, cooking time includes the resting time as well.

The sauce for this must be made a day ahead and refrigerated overnight to blend flavors, then the ribs have to marinade in the sauce 8-24 hours, so plan a day ahead! This sauce has a definite "kick" to it, but you can adjust the cayenne, hot sauce and horseradish to taste.

5 lbs prime rib beef bones
seasoning salt
pepper
4 tablespoons oil
3 tablespoons butter
1 large onion, finely chopped
3 tablespoons fresh minced garlic
3 tablespoons brown sugar
2 tablespoons lemon juice
2 teaspoons dried thyme
1/4 teaspoon cayenne pepper (can use more)
1/3 cup Dijon mustard
1/3 cup yellow mustard (use a grainy mustard for this)
1 tablespoon Worcestershire sauce
1/4 cup horseradish (can use more to taste)
2 teaspoons seasoning salt
black pepper
1 teaspoon louisiana hot sauce (or to taste)

Steps:

  • Make this sauce a day or even days ahead and cool.
  • For the sauce, heat the oil and butter over medium-high heat in a heavy saucepan.
  • Saute the onions for about 5 minutes until softened.
  • Add in the minced garlic, brown sugar, lemon juice, thyme and cayenne pepper; cook stirring for about 3 minutes.
  • In a bowl, whisk together Dijon mustard, yellow mustard, Worcestershire sauce, horseradish, salt, pepper and hot sauce; add into the onion/garlic mixture; mix to combine with a wooden spoon and bring to a simmer.
  • Cook/simmer the sauce for about 30 minutes over very low heat to blend flavors, adjusting salt, cayenne pepper and hot sauce.
  • Cool the sauce to room temperature then refrigerate overnight to blend the flavors.
  • The following day, in a large dish arrange the beef ribs in a single layer.
  • Pour the cooled sauce over the ribs and turn to coat on both sides, using clean hands to rub the sauce well over all the meat.
  • Cover and refrigerate for a minimum of 8-24 hours.
  • When ready to grill reserve the marinade.
  • Season the ribs with seasoning salt and pepper.
  • Grill over medium heat turning occasionally and brushing with the marinade.
  • Delicious!

2 tablespoons unsalted butter
1 tablespoon olive oil
1 large Spanish onion, coarsely chopped
3 cloves garlic, coarsely chopped
2 cups bourbon, plus 2 tablespoons
3 cups canned plum tomatoes and their juices, pureed
2 cups water
1/4 cup ketchup
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons dark brown sugar
2 tablespoon honey
1/4 cup molasses
2 tablespoons Dijon mustard
3 tablespoons ancho chili powder
1 tablespoon chipotle pepper puree
Salt and freshly ground pepper
2 rib-eye steaks, about 2 inches thick and 1-pound each
Spice Rubbed Grilled Vidalia Onions, recipe follows
2 tablespoons paprika
1 tablespoon ancho chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons kosher salt
1 teaspoon cayenne powder
1 teaspoon dry mustard
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
4 Vidalia onions, peeled and sliced into 1/4-inch thick slices
Canola oil

Steps:

  • Heat the butter and oil over medium heat in a heavy-bottomed medium saucepan. Add the onions and garlic and cook until translucent, 3 to 4 minutes. Add 2 cups bourbon and cook until completely reduced. Add the tomatoes and water, bring to a boil, and then simmer for 10 minutes. Add the remaining ingredients, excluding the salt, pepper, and steaks, and simmer for an additional 20 to 25 minutes, stirring occasionally. Transfer the mixture to a food processor and puree until smooth. Season with salt and pepper, to taste. Pour into a bowl and allow to cool slightly. Whisk in the remaining 2 tablespoons of bourbon.
  • Heat grill to high. Season steaks on both sides liberally with salt and pepper and rub some of the spice rub from the onions onto 1 side of the steaks. Place steaks on grill, spice rub side down, and grill until slightly charred and crusty, about 4 to 5 minutes. Brush the steaks with some of the Bourbon-BBQ baste and turn steaks over; reduce heat of the grill to medium-low and cook to medium-rare doneness, about 8 to 9 minutes longer. Brush with the Bourbon-BBQ baste every 2 minutes. Remove from the grill, brush with more of the baste, and let rest for 5 minutes before slicing into 1/4-inch thick slices.
  • Heat grill to high.
  • Whisk together all spices in a small bowl until combined. Brush onions with oil on both sides. Rub 1 side of each onion with some of the spice mixture and place rub side down on the grill. Grill until golden brown and a crust has formed. Turn the onions over and continue grilling until just cooked through. Serve with the steaks.

4 tablespoons vegetable oil

Red wine reduction sauce, recipe follows
Grilled vegetables, recipe follows
Garlic mashed potatoes, recipe follows
2 cups beef stock
1 cup red wine
1 pint mushrooms, sliced thinly
Salt and pepper
2 squash, thinly sliced
2 carrots, peeled and thinly sliced
Olive oil
Salt and pepper
2 baking potatoes
Milk, use judgment to create desired creaminess
Butter, use judgment to create desired creaminess
Garlic salt

Steps:

  • Salt and pepper each prime rib section thoroughly. Heat butter and oil in a large saute pan over medium-high heat. Brown the seasoned meat until the skin is browned and lightly crisp. Reduce heat to low and allow the meat to saute for approximately 20 minutes, turning every few minutes, until cooked to desired temperature.
  • Pour 2 cups of beef stock and 1 cup of red wine into a medium sized saucepan. Simmer the liquids over medium heat for approximately 20 to 30 minutes, or until the mixture is slightly reduced. Add sliced mushrooms and salt and pepper, to the sauce, and reduce the mixture for an additional 5 minutes.
  • Heat a grill pan over medium heat. Coat the bottom of the pan with olive oil. Add the sliced squash and carrots to the pan and grill until they become slightly tender. Remove the vegetables from the heat and seasson with salt and pepper immediately.
  • In a large pot, bring enough water to cover 2 potatoes to a rolling boil. Boil the potatoes in the water until they are soft. Drain the water from the pot and mash the potatoes. Add milk, butter and garlic salt to the pot. Mash all of the ingredients together until you reach the desired creaminess.

CHARCOAL GRILLED PRIME RIB

Get your butcher to trim the bones, then tie them back onto the roast for you. This roast is lightly seasoned (just like you would do it in the oven) and then slow roasted on the grill over charcoal and either mesquite or hickory wood chips. Prep time includes time in the refrigerator as well as resting time on the counter before cooking.

1 tablespoon vegetable oil
fresh ground black pepper
1/4 cup salt
kitchen twine, to tie roast (ask your butcher to do this)
6 inches wood chunks (try mesquite or hickory)
disposable aluminum pan to catch dripping

Steps:

  • Rub roast all over with oil, then season generously with pepper.
  • Spread salt on a baking sheet and press meat into salt, on all sides to coat; refrigerate meat for 1 hour.
  • Remove meat from refrigerator and allow to come to room temperature for about 2 hours.
  • Meanwhile, soak wood chips in water for at least 1 hour.
  • Use about 75 charcoal briquettes, light, and wait until they start to get ashy.
  • Move all the coals to one side of the grill to create an area for direct heat and one for indirect heat (place aluminum pan on indirect heat side; grease grate.
  • Sear the fatty sides of the roast over the hot coals until well browned, about 8 to 10 minutes; place roast over indirect heat side, bone side down, with the bones pointed away from the coals.
  • Cover grill, but open lower vents to draw in air to smoke meat.
  • Cook 2 to 2 1/2 hours (temp should be about 125 degrees F).
  • Let rest 20 minutes before serving.

This is the recipe I created for my husband for Father's Day 2014. It was made on the outdoor grill I had gotten him for his special day. I ordered this roast from FOOD 4 LESS IN CHICAGO HEIGHTS ILL. They have a great quality of meats, & I go there often especially for their great sales. I wanted the roast to be flavorful, moist, tender & juicy, & it was all that plus more. It turned out perfectly. Just the way we wanted it to be. I used a bed of veggies underneath, & used ginger Ale 4 the Beef Broth. When combined w/juices from roast it created an awesome caramelized vegetable flavor

1-2 large onions cut into eights
5 stalk(s) celery cut up
6-8 ounce(s) ginger ale soda
6-8 clove(s) garlic cut into slivers
2 tablespoon(s) each chopped freeze dried chive, & steak seasoning
1 tablespoon(s) dried thyme
1 1/2 -2 tablespoon(s) granulated garlic (good quality)
1/2 cup(s) olive oil more if desired
5-7 pound(s) standing rib roast ( 3 bones)

Steps:

  • ALLOW ROAST TO COME TO ROOM TEMPERATURE BEFORE PLACING ON GRILL. THIS MAKE FOR A MORE EVEN HEAT DISTRIBUTION DURING COOKING TIME ON THE GRILL. YOU WILL NEED A 12 INCH DEEP roasting PAN OR ALUMINUM THROW AWAY PAN.
  • Using a sharp knife with a tip, MAKE DEEP GASHES INTO ROAST. Insert the slivers of garlic into roast, and push them down into meat. Use as much or as little as you like, and save what's left over to be added to the vegetable bed.
  • Combine the spices in a small bowl, blend together, coat roast with cooking spray or olive oil, then sprinkle spices liberally over the entire surface of the roast.
  • Roast should look like this when you are done. Spray with cooking spray so that the spices adheres to the surface of the roast.
  • Now spray a 12 inch deep dish pan with cooking spray. Add 1 pound of carrots, I used baby carrots but either will work, cut them up if using regular carrots.
  • Add the onions cut into eights,
  • Next add the celery and about 1/2 can of ginger ale. Reserve the rest to be used later if needed.
  • Now place the roast on top of vegetables. Prepare the grill and when a temperature of 475 degrees F. is reached, add the roast. Allow to cook at 475 degrees F. FOR 20 TO 25 MINUTES, but DO NOT OPEN THE GRILL.
  • After TIME HAS ELAPSED REDUCE THE GRILL TEMPERATURE TO 325 DEGREES F.(May need to open grill top slightly to reduce temperature quickly.) Continue cooking roast until internal temperature of about 140 degrees F. is reached for medium Rare, or less if you prepare rare about 125 degrees F.
  • ALLOW ROAST TO REST ABOUT 15 TO 20 MINUTES BEFORE CARVING, THIS IS TO ALLOW THE JUICES TO REDISTRIBUTE. At this point I chose to cut away the rack of bones to make it much easier to carve the roast. I prefer using an electric knife to carve the roast. So slice into desired thickness, and enjoy.

5 tablespoons red wine vinegar
5 tablespoons garlic olive or vegetable oil
1 teaspoon freshly ground black pepper
1 teaspoon freshly ground white pepper

1/2 teaspoon onion powder
2 tablespoons granulated garlic
3 tablespoons salt
2 (25-ounce) prime rib chops
Olive oil, for brushing grill

Steps:

  • Preheat an outdoor grill preferably wood fired with oak wood to medium heat.
  • For the Basting Sauce, in a small bowl, stir together the vinegar and oil.
  • For the Seasoning Salt, combine all the ingredients in a small bowl.
  • Brush both sides of the steaks with the basting sauce. Oil the grill and place steaks on the grill. Season the top side of each steak with the seasoning salt.
  • Turn the steaks before the heat pushes juices out the top (and continue to turn using this timing method throughout cooking). Baste and season after each turn, 4 times per side. Continue turning until the steaks are done to your liking. Enjoy!
  • Leftover seasoning salt can be kept tightly sealed for up to 1 month.
