2 pounds medium red potatoes (about 7), cut into wedges
1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

heavy-duty aluminum foil
1 pound lean ground beef
½ cup plain bread crumbs
¼ cup milk
2 tablespoons taco seasoning mix
2 baking potatoes, peeled and diced
1 cup salsa
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Cut four 12x18-inch sheets of aluminum foil.
  • Mix ground beef, bread crumbs, milk, and taco seasoning mix together in a medium bowl until well blended. Shape into four 4-inch patties. Mix potatoes and salsa in another medium bowl.
  • Place 1 patty onto each piece of foil and top with 1/4 of the potato mixture and 1/4 of the Cheddar cheese. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Place packets, seam-side up, on the preheated grill. Cover the grill and cook, rearranging the packets several times, until patties are cooked through and potatoes are tender, about 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

This is a very good veggie dish I learned years ago at a school camp-out. It's easy to make and can also be made in the oven the same way.

4 pounds baking potatoes
2 pounds carrots
1 onion
seasoning salt to taste
½ cup butter
1 ¼ cups sour cream

Steps:

  • Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
  • Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
  • Grill until potatoes and carrots are soft, about 40 minutes (flip bags at least 3-4 times during grilling). Remove from grill and place the veggies in a large bowl and add the sour cream, mixing well.

This recipe was first made for me by my good friend, Jeff Hahaj. I like adding hot pepper rings to mine.

4 medium potatoes
8 slices ham
8 slices processed cheddar cheese
1 medium onion
salt and pepper
cayenne pepper
butter

Steps:

  • Heat your grill to medium high.
  • Tear off 8 sheets of aluminum foil, 12x15 or so.
  • Butter 4 sheets and lay them out on counter.
  • Slice spuds and onion thin.
  • Take 1/3 of each potato slices and lay out on buttered foil the size of your cheese slice.
  • Top with onion's and ham, then with cheese, salt, pepper and cayenne.
  • Repeat ending with a few spuds on top.
  • Fold foil into tight packets and cover packets with one more sheet of foil.
  • Place on grill, cover and cook for 20 minutes, turn and cook another 20 minutes.
  • Unwrap and eat.
  • I have pre-made these to take camping.

2 medium dark orange sweet potatoes, peeled, and cut into 1 inch cubes (about 1/3 pound per sweet potato)
1 medium yellow bell pepper, cut into 1 inch pieces
2 tablespoons butter, melted
1 tablespoon honey
1/2 teaspoon seasoning salt
1 tablespoon chopped fresh chives
cooking spray
aluminum foil

Steps:

  • Heat grill to medium heat.
  • Cut a piece of foil about 18 x 18 inches square. Lightly spray foil with cooking spray.
  • Place sweet potatoes on foil, top with yellow pepper.
  • Mix together the melted honey, butter, and seasoned salt. Pour over potato/pepper mixture. Toss slightly to distribute honey/butter.
  • Note: You can add the chives to the vegetables now, or wait until after cooking and sprinkle them on top.
  • Fold foil over vegetables and crimp to seal. Make sure you have a tight seal, but allow for circulation and expansion during grilling.
  • Grill 15-20 minutes or until sweet potatoes are tender. Cut open foil packet and sprinkle with chives.

1 tablespoon Dijon mustard
2 tablespoons chopped fresh thyme (or 1 T dried)
1 teaspoon salt
1 teaspoon ground black pepper
2 lbs white potatoes, peeled, sliced 1/4 inch thick (about 4 large)
2 large red onions, peeled and sliced 1/2 inch thick
nonstick cooking spray

Steps:

  • Whisk together oil, mustard, thyme, salt, and pepper in a large bowl.
  • Add potatoes and onions to mustard oil. Toss to coat.
  • Set six 18x9 inch sheets of heavy duty aluminum foil on work surface. Spray foil with nonstick cooking spray. Divide potatoes and onions between the sheets, placing in the center of the left half of each sheet. Fold right half of foil over veggies and fold edges of packages together to seal well.
  • Grill about 25 minutes over medium high heat.

8 mediumIdaho® potatoes, washed and peeled, if desired
3 teaspoons kosher salt
3 teaspoons garlic powder
1 teaspoon ground black pepper
4 tablespoons olive oil
1/2 teaspoon liquid smoke
8 garlic cloves, sliced
4 oz mozzarella cheese*, grated
1-2 scallions, sliced for garnish, optional

Steps:

  • Heat the grill to medium.Thinly slice the potatoes.In a small bowl, mix salt, garlic powder and black pepper.Toss the sliced potatoes with olive oil, liquid smoke and seasonings.Prepare 4 large sheets of foil, preferably heavy duty, or double the regular foil.Divide the potatoes between prepared foils.Place the sliced garlic over the potatoes.Close each packet tightly and grill on medium for 15-20 minutes, or until fork tender.Carefully open the packets and immediately top the potatoes with cheese.Let the cheese melt for a couple of minutes and serve immediately.
