Number Of Ingredients 11

1/4 cup kosher salt
1/4 cup sugar
2 cups water
2 cups ice water
4 center-cut pork rib chops (1 inch thick and 8 ounces each)
2 tablespoons canola oil
BASIC RUB:
3 tablespoons paprika
1 teaspoon each garlic powder, onion powder, ground cumin and ground mustard
1 teaspoon coarsely ground pepper
1/2 teaspoon ground chipotle pepper

Steps:

  • In a large saucepan, combine salt, sugar and 2 cups water; cook and stir over medium heat until salt and sugar are dissolved. Remove from heat. Add 2 cups ice water to cool brine to room temperature., Place pork chops in a large resealable plastic bag; add cooled brine. Seal bag, pressing out as much air as possible; turn to coat chops. Place in a 13x9-in. baking dish. Refrigerate 8-12 hours., Remove chops from brine; rinse and pat dry. Discard brine. Brush both sides of chops with oil. In a small bowl, mix rub ingredients; rub over pork chops. Let stand at room temperature 30 minutes., Grill chops on an oiled rack, covered, over medium heat 4-6 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.

4 bone-in thick center cut or rib chop pork chops
2 tablespoons extra virgin olive oil
1 teaspoon smoked paprika
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Heat an outdoor grill to high heat, about 500 degrees Fahrenheit.
  • Prepare your chops by rubbing both sides with olive oil.
  • In a small bowl, stir together paprika, salt, and pepper. Sprinkle the mixture on each side of the pork chops and rub it in.
  • Grill the chop by searing each side for 2 minutes over the high heat. Remove the chops to an upper rack or to a spot with indirect heat to finish cooking.
  • Reduce the burners to medium, close the lid, and cook for about another 15 minutes more. Actual cooking time will depend on the heat of your grill and the thickness of your pork chop. Pork needs to be cooked to an internal temperature of 145 degrees Fahrenheit.
  • Let rest 5 to 10 minutes before serving.

2 bone-in pork chops, thick cut (1-2″ thick)
1/4 cup brown sugar
2 tablespoons paprika
2.5 teaspoons kosher salt
2 teaspoons ground black pepper
2 teaspoons ground mustard
1 teaspoon onion powder
1/2 teaspoon garlic powder
2 tablespoons vegetable oil

Steps:

  • Preheat grill with cover closed to medium/high heat for at least 10 minutes. Make sure grates are seasoned (coated generously with oil - see notes below)
  • Pat pork chops dry and coat with vegetable oil.
  • Mix all dry ingredients and apply to both sides and edges of pork chops
  • Place pork chops on grill and leave alone for 5-7 minutes, or until they release from the grill grate with little effort. Use tongs and turn pork chops 1/4 turn to create cross grill marks. Continue grilling for 2-3 more minutes.
  • Flip pork chops and grill 2nd side for 2-3 minutes, just to sear, and internal temperature of 145°(F)
  • Remove pork chops from grill and let rest on a plate for 2-3 minutes before carving.

1/2 cup Worcestershire sauce
1/4 cup minced fresh parsley
1/4 cup balsamic vinegar
1/4 cup soy sauce
2 tablespoons olive oil
1 teaspoon minced garlic
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
4 boneless pork loin chops (8 ounces each and 1 inch thick)

Store-bought Thai green curry paste, which I love because it's packed with lemongrass, green chiles, shallot and ginger. This fragrant paste is usually simmered into curries but here I whisk it into a dressing for cucumbers.

2 tablespoons canola oil, plus more for brushing
Two 10-to-12-ounce bone-in pork chops
Kosher salt and freshly ground black pepper
Zest of 1 lime
1 tablespoon coriander seeds, crushed
1 teaspoon crushed red pepper
1 1/2 tablespoons green curry paste
2 tablespoons rice wine vinegar
8 Persian cucumbers
1 to 2 fresh jalapenos or Fresno chiles, stemmed, seeded and thinly sliced
1 shallot, thinly sliced
1 cup cilantro leaves

Steps:

  • Preheat a grill or cast-iron grill pan to medium-high heat and oil the grates.
  • Brush the pork chops with oil, then sprinkle them all over with salt, pepper, the lime zest, coriander and red pepper.
  • Grill the pork chops, flipping, until lightly charred and an instant-read thermometer inserted near the bone registers 135 degrees F, about 10 minutes; transfer to a plate and tent with foil.
  • Meanwhile, whisk the curry paste with the vinegar and oil in a serving bowl; season the dressing with salt and pepper.
  • Cut the cucumbers crosswise into manageable pieces. Lightly smash the pieces with the side of your knife or the palm of your hand, then tear them into bite-size chunks; transfer to the serving bowl. Toss the cucumbers in the dressing, and then fold in the chiles, shallot and cilantro. Season the salad with salt and pepper. Serve alongside the pork chops.
