GRILLED PEACHES WITH VANILLA AND LEMON MASCARPONE

6 fresh peaches, halved and pits removed
1 1/2 cups bourbon
1/3 cup lemon juice (from 2 lemons), plus the zest of 1 lemon
2 tablespoons pure vanilla extract
8 ounces mascarpone cheese
1/4 cup heavy cream
3 tablespoons confectioners' sugar, sifted
1 vanilla bean, split lengthwise and scraped
1/2 cup packed dark brown sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg

Steps:

  • Put the peaches cut-side up in a 10-by-15-inch glass baking dish.
  • In a medium mixing bowl, whisk together the bourbon, lemon juice and vanilla extract. Pour the bourbon mixture over the peaches and baste each peach. Cover with plastic wrap and macerate at room temperature for 30 minutes.
  • Meanwhile, in a small bowl, stir together the mascarpone, heavy cream, confectioners' sugar, vanilla bean seeds and lemon zest until evenly incorporated. Cover with plastic wrap and store in the refrigerator. Remove 20 minutes prior to serving.
  • Heat a grill or grill pan over high heat.
  • Using your hands, rub the cut side of each peach with 2 teaspoons brown sugar. Sprinkle each peach with a pinch of the cinnamon and nutmeg.
  • Place the peaches cut-side down on the hot grill and cook until they are seared with grill marks and the sugar is caramelized, 6 to 8 minutes. Turn each peach over and cook for an additional 4 minutes. Remove from the grill.
  • Top each peach with a spoonful of the vanilla and lemon mascarpone.

In the summer, I like to buy large bags or baskets of fresh peaches at the farmers' market. I eat the perfectly ripe ones immediately and use the firmer (but still ripe) specimens for this amazing dessert combo. But do be sure that your peaches are a little firm; if they're going soft all over, they'll fall apart on the grill. Add the cheese mixture right before you serve it so it looks fresh.

2 tablespoons sugar
2 tablespoons brandy
1 tablespoon fresh lemon juice
Olive oil
3 firm but ripe peaches, pitted and quartered
1/2 cup mascarpone cheese, at room temperature
1/4 teaspoon pure vanilla extract
3/4 cup dry white wine

Steps:

  • Stir the sugar, brandy, and lemon juice in a medium bowl to blend. Set the brandy mixture aside.
  • Prepare a charcoal or gas grill for medium-high heat, or preheat a ridged grill pan over a medium-high flame. Lightly brush the grill rack or pan with oil. Grill the peaches until they are heated through and beginning to brown, turning occasionally, about 5 minutes. Immediately transfer the grilled peaches to the brandy mixture, and toss to coat. Set aside for 15 minutes, tossing occasionally.
  • Meanwhile, in a small bowl, stir the mascarpone and vanilla to blend.
  • Divide the peach mixture equally among 6 coupe dishes and pour the wine over the peaches. Dollop the mascarpone mixture atop the peaches, and serve.

3 firm but ripe peaches, pitted, quartered
2 tablespoons sugar
2 tablespoons brandy
1 tablespoon fresh lemon juice
1/2 cup mascarpone cheese, room temperature
1/4 teaspoon vanilla extract
3/4 cup dry white wine

Steps:

  • Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Lightly brush the grill pan or rack with oil. Place the peaches on the grill pan and do not move the peaches, otherwise you will not have those great grill marks. It takes about 2 to 3 minutes per side to get those grill marks. Grill the peaches until the grill marks are formed, slightly softened and heated through, about 5 to 6 minutes total.
  • Meanwhile, stir the sugar, brandy, and lemon juice in a medium bowl to blend. Set the brandy mixture aside.
  • As the peaches are ready, remove them from the grill and place them in a shallow baking dish. Top them with the brandy mixture, and toss to coat. Set aside for 15 minutes and allow to marinate, tossing occasionally.
  • Meanwhile, stir the mascarpone and vanilla in a small bowl to blend.
  • Divide the grilled peach mixture equally among 6 coupe dishes. Pour the wine over the peaches. Dollop the mascarpone mixture atop the peaches, and serve.
