Grilled Nectarines with Honey-Orange Ricotta Whipped Cream and Toasted Almonds image

1 cup fresh whole milk ricotta
1/4 cup cold heavy cream
2 tablespoons clover honey
2 teaspoons grated orange zest
1/2 vanilla bean, seeds scraped
6 nectarines, cut in 1/2 and pitted
Canola oil
1/4 cup toasted slivered almonds
Mint springs

Steps:

  • In a large bowl, whisk together the ricotta, cream, honey, orange zest and vanilla seeds until light and fluffy. Cover and refrigerate for 30 minutes.
  • Heat the grill to high. Brush the nectarines with oil and put on grill for a few minutes on each side, just to soften and heat through.
  • Put some of the ricotta onto each serving plate. Top with nectarines and garnish with toasted sliced almonds and mint sprigs.

GRILLED-PEACH AND ALMOND ICE POPS



Grilled-Peach and Almond Ice Pops image

Charring juicy summer peaches on the grill for these addictive ice pops lends a smoky note. Peach preserves provide a second dose of peach, ginger syrup adds spice and smoked almonds add crunch.

Number Of Ingredients 9

One 6-inch piece fresh ginger, unpeeled, sliced into very thin rounds (about 1 cup)
1/3 cup sugar
1 pound ripe yellow peaches (about 3 peaches), peeled with a vegetable peeler, halved and pitted
1 tablespoon unsalted butter, melted
2 tablespoons peach preserves
1 cup plain unsweetened almond milk
1 tablespoon fresh lemon juice
Kosher salt
1/2 cup smoked almonds, finely chopped

Steps:

  • Prepare a grill or large grill pan for high heat. Bring the ginger, sugar and 1/4 cup water to a simmer in a small saucepan. Cook on medium-low for 10 minutes. Let cool completely at room temperature, at least 30 minutes.
  • Meanwhile, brush the peach halves all over with the butter. Place them cut-side down on the grill, and grill until very charred, about 5 minutes. Flip the peaches, and grill until the rounded side is charred in spots and the peaches are tender but not falling apart, about 5 minutes. Transfer to a plate to cool completely, about 20 minutes.
  • Put the cooled peaches, preserves, 1/2 cup of the almond milk, lemon juice and a small pinch of salt in a blender. Strain the cooled ginger syrup into the blender, pressing the ginger pieces in the strainer with the back of a spoon to extract as much flavor as possible; discard the ginger. Puree the peach mixture until completely smooth, scraping down the sides of the blender partway through if needed. Transfer the mixture to a large liquid measuring cup with a pouring spout.
  • Pour the mixture into the ice-pop molds, leaving 1/4 inch of space at the top (the mixture will expand). Insert the sticks. Freeze until solid, 5 hours to overnight.
  • When ready to serve, put the remaining 1/2 cup almond milk in one drinking glass and the almonds in another. Unmold the ice pops, and dip the top of each into the almond milk, then into the almonds. Serve immediately.

Grilled Peach Toast With Pimiento Cheese image

Sweet peaches, spicy pimento cheese spread, and smoky grilled bread combine in this ultimate summer toast.

2 firm-ripe peaches, halved and pitted
2 tablespoons plus 1 teaspoon blended oil
1 medium-size ripe avocado
4 (1⁄2-inch-thick) slices multigrain boule-style bread
Smoky Pimiento Cheese With Bacon
2 tablespoons extra-virgin olive oil
1⁄4 cup thinly sliced red radishes (about 3 ounces)
1 bunch watercress
1 teaspoon gray sea salt
1⁄2 teaspoon coarsely ground black pepper

Steps:

  • Preheat a grill to medium-high (450°F).
  • Brush the peach halves with 1 tablespoon of the blended oil, and place on the grill grates, cut sides down. Grill, uncovered, until grill marks appear and the juices begin to release, about 3 minutes. Remove from the grill, and slice. Set aside.
  • Cut the avocado in half lengthwise, pit, and brush cut sides with 1 teaspoon of the blended oil. Place halves, cut sides down, on the grill grates. Grill, uncovered, just until the avocado is charred and begins to soften, about 5 minutes. Remove from the grill.
  • Brush the bread slices with the remaining 1 tablespoon oil, and place on the grill grates. Grill until the bread is toasted, about 2 minutes per side. Remove from the grill.
  • Spread Pimiento Cheese onto 1 side of each piece of toast. Cut each piece into 4 equal rectangles, keeping the pieces together.
  • Scoop the avocado from the peel into a medium bowl and mash with 1 tablespoon of the extra-virgin olive oil until it is chunky and spreadable. Spoon onto the toast, and top with sliced peaches.
  • Top the toast slices with radish slices and watercress leaves. Drizzle the remaining 1 tablespoon extra-virgin olive oil over the toast slices, and sprinkle with gray sea salt and black pepper.

Crunchy Snow Peas with Toasted Almonds image

2 Tbsp. olive oil
1 lb. snow peas, trimmed
4 tsp. fresh lemon juice
4 tsp. minced shallots
2 Tbsp. slivered unsalted, oven-toasted almonds

  • 1. Warm the olive oil in a small sauté pan.
  • 2. Increase heat to medium and add snow peas. Add a few drops of water while tossing quickly.
  • 3. Cook about 3-4 minutes, leaving the snow peas crisp.

Eggplant Curry with Toasted Almonds image

1 1/2 cups jasmine rice, cooked to directions on package
2 tablespoons (2 turns around the pan in a slow, steady stream) extra-virgin olive oil
1 large, firm eggplant, cut into 1-inch cubes
1 large, yellow skinned onion, peeled and chopped
1 large red bell pepper, seeded and diced
4 cloves garlic, cracked away from skin with a whack between flat of knife and heel of hand
1 (14-ounce) can diced tomatoes, drained
1/4 cup (a couple of heaping tablespoons) mango chutney
1 rounded tablespoon mild curry paste or 2 tablespoons (a generous palm full) curry powder
Coarse salt
1 cup vegetable broth or stock
A handful (about 2 tablespoons) cilantro leaves, finely chopped, optional
Toasted sliced or slivered almonds
Thinly sliced scallions or chopped fresh chives

Steps:

  • Prepare rice. While rice is simmering, start curry.
  • Heat a deep, heavy bottomed nonstick skillet over medium to medium high heat. When the pan is hot, add oil, eggplant, onion, and bell pepper. Cover pan and cook 6 to 8 minutes, stirring occasionally. Uncover and add garlic; cook 1 minute more. Add tomatoes, chutney, curry, salt, and broth. Stir to combine and simmer for 1 to 2 minutes over low heat for flavors to combine. Remove curry from heat and stir in cilantro. Ladle eggplant curry into shallow bowls. Using an ice cream scoop, scoop rice balls into the center of bowls. Garnish your the and rice with lots of toasted sliced almonds and scallions or chives.
  • Curry paste is available on the International Foods aisle of markets. The paste is deep red in color and will keep several months in the refrigerator.
  • Vegetable stocks and broths are available in the soup aisle of market and are now widely available in paper containers with re-sealable spouts. If you use broths often in cooking, these paper containers are terrific to keep on-hand in your refrigerator.
