EMILY'S FAMOUS HASH BROWNS
Good old fashioned restaurant-style hash browns. Perfect with hot pepper sauce and ketchup!

Steps:
- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

- Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
- Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
- Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

- In a large skillet, heat butter and oil over medium heat. Add onion and peppers. Cook and stir until crisp-tender. Add garlic; cook 1 minute longer. GRILLED ONION HASH BROWNS
This is a great hash brown recipe for the grill. This recipe came from a cooking show on the Canada Food Network called "Licence to Grill". I would cut down on the spices somewhat as I found the hash browns a little too spicey for my liking but these are the ingredients the chef used.

Steps:
- Preheat grill to 350°.
- Place a large piece of tin foil shiny side up on the counter.
- Brush the foil liberally with melted butter.
- Place cold, but not frozen potatoes in centre of foil.
- Add onion.
- Toss lightly and drizzle the remaining butter on top of the potatoes and season liberally with salt, pepper and paprika.
- Fold opposite ends of foil up and over potatoes to form a pouch.
- Place the foil pouch on the grill for approximately 25-30 minutes or until potatoes and onions are tender.
- Turn the pouch once during the cooking period.
- Once they are finished sprinkle with parsley.

SOUR CREAM AND ONION HASH BROWNS
Steps:
- Heat a skillet over medium heat and add the canola oil. Add the onions, season with a pinch of salt and cook, stirring frequently, until the onions are golden brown, 15 to 20 minutes.
- Meanwhile, season the potatoes with salt and pepper and let sit for 5 minutes. Drain out the excess moisture.
- Set individual cast-iron pans over medium heat until very hot. Add some olive oil to each pan and a handful of the potatoes. Cook until golden brown and crispy, about 5 minutes. Flip and add more oil if necessary. Cook until golden brown on the second side and cooked through. Repeat with the remaining potatoes.
- Top each hash brown with some caramelized onions and a dollop of sour cream and chopped scallions.
GREEN ONION HASH BROWN POTATOES

- Scoop cooked potatoes from shells and coarsely chop. Heat a medium nonstick skillet over moderate heat. Add oil and butter to the pan.
