On days I get home late from the hospital, I'm glad this main dish comes together easily in one skillet. Sometimes, I make it ahead in the morning and refrigerate. It's so quick to just sprinkle on the cheese and reheat it for dinner.-Cindy Gage, Blair, Nebraska

Number Of Ingredients 12

2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 medium green pepper, chopped
1 small onion, chopped
2 tablespoons canola oil
1 can (8-3/4 ounces) whole kernel corn, drained
1 cup chicken broth
1 cup salsa
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon chili powder, optional
1/4 teaspoon pepper
1-1/2 cups uncooked instant rice
1/2 to 1 cup shredded cheddar cheese

Steps:

  • In a large skillet, saute the chicken green pepper and onion in oil until chicken is no longer pink and vegetables are crisp-tender. Add the corn, broth, salsa, salt, chili powder if desired and pepper; bring to a boil., Stir in the rice; cover and remove from the heat. Let stand for 5 minutes. Fluff with a fork. Sprinkle with cheese. Cover and let stand for 2 minutes or until cheese is melted.

Pollo Loco - grilled chicken over Mexican rice and smothered in white queso - My favorite Mexican recipe! I literally licked my plate! SOOO good!!

4 boneless skinless chicken breasts
1 bottle Lawrys Baja Chipotle Marinade or Lawrys Mesquite Marinade
3 Tbsp vegetable oil
1 cup uncooked long grain rice ((not instant))
1 Tbsp dried minced onion flakes
1 tsp garlic salt
1 tsp Southwestern or Taco seasoning
2 cups chicken broth
½ cup tomato sauce
1 container refrigerated white Mexican Queso ((I used Gordos Cheese Dip))
1 chopped tomato

Steps:

  • Pour Lawrys Baja Chipotle Marinade over chicken and let marinate in the refrigerator for 30 minutes or overnight. When ready, grill chicken until done (165 degrees).
  • While the chicken is grilling prepare the rice.
  • Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and Southwestern/Taco seasoning.
  • Stir in onion flakes, tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
  • Heat cheese dip according to package directions set aside.
  • To assemble the Pollo Loco - place 1/4 of the rice on a plate, top with grilled chicken. Pour 2-3 Tbsp cheese dip over chicken and rice and top with chopped tomatoes.

Cheesy Grilled Mexican Chicken and Rice is a Mexican fiesta in every bite! Spicy flavors and bold color make this a feast fit for any night of the week!

4 chicken breasts (boneless and skinless)
1 bottle Lawry's Baja Chipotle Marinade or Lawry's Mesquite Marinade
1 jar Mexican Queso ((or see notes for our Nacho Cheese Dip recipe))
2-3 cups Mexican Rice ((Recipe link in notes))
15 ounces diced tomatoes
1/2 cup cilantro (chopped)

Steps:

  • Place chicken breasts in a resealable plastic bag. Set aside about 1/2 cup of the marinade and pour the rest into the bag, covering the chicken.
  • Press all the air out of the bag and seal tightly. Marinate for at least an hour (best if overnight in the refrigerator).
  • While chicken is marinating, prepare Mexican rice. See recipe link in notes.
  • When chicken is finished marinating, remove from bag and discard marinade.
  • Grill chicken, brushing on a little remaining marinade (the 1/2 cup that was set aside earlier) every few minutes, until done and internal temp reaches 165-degrees F.
  • Heat queso/nacho cheese sauce according to directions on jar.
  • Place each chicken breast on about 1/2 cup of rice, top with queso, tomatoes, and cilantro.

I started with a copycat recipe, added more of my favorite (garlic salt) ingredient, and then made this for my son, as well as for my co-worker, who had just had a baby. Everyone's comment: "Wow! That was really tender, tasty chicken!" (I didn't tell them how incredibly easy it was!) I served it with my Mexican rice (another favorite)and black beans.

1 cup margarita mix
1/4 cup tequila
1 tablespoon minced garlic
garlic salt, to taste
pepper, to taste
1 cup white rice
2 cups chicken broth
1/4 cup salsa
cumin, to taste
garlic salt, to taste
1 tablespoon vegetable oil

Steps:

  • Marinate chicken in margarita mix, tequila, and garlic in refrigerator for several hours, or overnight. (I soaked it overnight, and it was really flavorful.).
  • Remove chicken from marinade, and sprinkle with garlic salt and pepper.
  • Preheat George Foreman or gas grill. Cook chicken just until cooked through (just until juices run clear-don't overcook, or it won't be as juicy).
  • Serve with Mexican rice and black beans.
  • Mexican Rice:.
  • Cook rice in 1 tablespoon oil, until lightly browned.
  • Add chicken broth, salsa, cumin, and garlic salt; cover pan and simmer for about 25 minutes, or until rice is tender.

We love this chicken. The marinade whips up in a minute in the food processor or blender. Preparation time does not include time to marinate.

8 chicken thighs or 4 chicken breast halves, on the bone
1/2 onion
1 large garlic clove
1/4 cup olive oil
1/2 teaspoon Mexican oregano
1/2 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried chipotle powder
1 teaspoon paprika
1 limes, juice of or 2 tablespoons apple cider vinegar
1 handful cilantro leaf (optional)

Steps:

  • Put all marinade ingredients in the blender or food processor and liquify.
  • Put marinade in a gallon-size zip lock bag and add chicken pieces. Turn a few times to distribute marinade.
  • Refrigerate for at least 2 hours I leave it for about 10 hours.
  • Remove chicken from marinade and place on hot grill. Discard marinade.
  • Grill, turning occasionally, until chicken is cooked through.
