1/2 pound bulk mild or hot Italian sausage
2 tablespoons Progresso™ Italian-style bread crumbs
6 slices (3/4 ounce each) mozzarella cheese
12 slices Italian bread, 1/2 inch thick
1/2 cup sun-dried tomato mayonnaise
1 cup shredded lettuce
1 medium tomato, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
  • Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°. Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted. Add bread slices to side of grill for last 2 to 3 minutes of grilling, turning once, until lightly toasted.
  • Spread toasted bread with mayonnaise; top 6 bread slices with lettuce, tomato and patties. Top with remaining bread slices.

1 pound lean ground turkey
⅓ cup chopped fresh basil
3 cloves garlic, crushed, or more to taste
2 teaspoons salt
1 teaspoon freshly ground black pepper
4 slices provolone cheese
4 ciabatta rolls
¼ cup mayonnaise
⅛ cup prepared pesto
½ red onion, sliced
4 leaves romaine lettuce

Steps:

  • Combine turkey, basil, garlic, salt, and pepper in a bowl. Divide into 4 equal portions and form into hamburger patties.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill patties for about 4 minutes per side. Place provolone slices on the patties; continue to cook until cheese melts. Place ciabatta rolls on the grill and cook until browned to your liking, 2 to 3 minutes.
  • Mix mayonnaise and pesto in a small bowl until thoroughly combined. Spread onto the rolls. Place the turkey patties on the rolls and top with sliced red onion and lettuce.

8 ounces ground pork
3 garlic cloves, pressed
2 teaspoons dried Italian seasoning, crumbled
1/4 cup minced drained oil-packed sun-dried tomatoes
1/4 cup mayonnaise
4 1/2-inch-thick onion slices
1 large red bell pepper, quartered lengthwise
4 1/4-inch-thick slices provolone cheese
4 onion rolls, cut horizontally in half

Steps:

  • Mix first 4 ingredients in large bowl. Season with pepper. Divide mixture into quarters. Shape each into 3/4-inch-thick party. Mix tomatoes and mayonnaise in small bowl to blend. (Can be prepared 1 day ahead. Cover patties and tomato mayonnaise separately and chill.)
  • Prepare barbecue (medium-high heat). Grill burgers, onions and peppers until burgers are cooked through and onions and peppers are lightly charred, turning occasionally, about 10 minutes. Move peppers and onions to cool side of grill. Top burgers with cheese. Place rolls on grill cut side down. Cover with lid and cook until cheese melts and buns are heated through, about 2 minutes. •1 1/2 pounds Italian sausage
For the Peppers:
•4 large bell peppers, seeds and stems discarded and cut into chunks
•2 tablespoons olive oil
•2 tablespoons sherry vinegar
To Serve:
•4 crusty rolls
•1/4 cup chopped fresh basil
•1/2 cup ricotta cheese
•1/2 cup homemade or store-bought red sauce

Steps:

  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place bell pepeprs peppers in a 13- by 9- disposable aluminum baking pan. Add olive oil and vinegar, season with salt and pepper and toss to combine. Transfer to the cooler side of the grill. Cover and cook until tender, about 25 minutes. When peppers are about half done, place Italian sausage patties on hot side of the grill. Cover and cook until well charred on first, side, 5 to 8 minutes. Flip and continue cooking until cooked through and cheese on the interior is melted, another 5 to 7 minutes. 1 teaspoon chopped fresh oregano
1 garlic clove, grated
Kosher salt and freshly ground black pepper

1 teaspoon balsamic vinegar
4 seeded hamburger buns, split
Fresh basil leaves, for topping
Giardiniera, for serving

Steps:

  • Prepare an outdoor grill for medium-high heat.
  • Gently mix the beef, oregano, garlic and 1/2 teaspoon each salt and pepper in a medium bowl until just combined.
