CAJUN GRILLED SHRIMP AND GRITS



Cajun Grilled Shrimp and Grits image

1 cup old-fashioned grits
2 cups boiling water
2 cups heavy cream
1/4 stick butter
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon garlic granules or freshly minced
2 ounces chili powder
Pinch red pepper flakes, or to taste
2 ounces seafood seasoning (recommended: OldBay)
1-ounce freshly ground black pepper
2 ounces garlic powder
2 ounces onion powder
1-ounce ginger
1-ounce butter or olive oil
2 pounds raw shrimp, peeled and deveined

Steps:

  • Grits: Boil 2 cups of water in medium-size saucepan over medium heat. Add the remaining ingredients in consecutive order while stirring slowly. Bring to a boil, then reduce the heat. Slowly stir in the grits. Allow to simmer, stirring every 5 minutes until reaching the desired consistency, about 20 to 25 minutes. Transfer the grits to a serving bowl and keep warm.
  • Shrimp: Mix all of the dry ingredients thoroughly in bowl until well blended. Melt the butter or olive oil in a large grill pan over high heat. Generously coat the shrimp in the seasoning mixture. Add them to the grill pan and cook until caramelized on both sides. Remove them from the pan to a serving bowl and serve with the grits.
  • Suggestion: Adding cheese and/or gravy with fried onions, to taste, will elevate the dish considerably.

1/2 cup sliced scallions
1/4 cup white wine

  • Mushroom Scallion Sauce: Melt butter in a large saute pan. Saute mushrooms and scallions for about 3 minutes. Stir in wine and heavy cream. Season with garlic powder, cayenne, salt, and pepper. Stir until sauce thickens slightly. Keep warm until ready to serve.
  • Grits: Bring milk to a boil. Gradually whisk in grits, butter, salt, and pepper. Stir constantly for about 3 to 5 minutes until grits thicken to desired consistency. Keep warm until ready to serve.
  • Grilled Broccoli and Carrots: Heat grill to medium. Toss broccoli and carrots in olive oil and season with garlic powder, salt, and pepper. Grill vegetables for about 6 minutes or until tender, turning them once halfway through. If room allows, grill tilapia at same time.
  • Tilapia: Heat grill to medium. Rinse and dry fillets and then rub with jerk seasoning. Grill tilapia for 3 to 4 minutes on each side. Remove from heat.
  • Plate entree by spooning grits on center of plate. Lay tilapia on top of grits. Lay the carrot slices on top of fish in a criss-cross manner and place broccoli stalk on the side of fish. Top with mushroom scallion sauce and serve immediately.

  • Whisk together first 4 ingredients, and set aside.

  • Grill, covered with grill lid, over medium-high heat (350° to 400°) 20 minutes or until a meat thermometer inserted into thickest portion registers 155°, turning once. Baste with half of barbecue sauce mixture the last 5 minutes of cooking or when meat thermometer registers 145°.

Steps:

  • For the grits: Combine the 3 cups water, the milk, 1 tablespoon of the butter, the salt and pepper in a large saucepan over medium heat. Bring the liquid to a gentle boil. Stir in the grits. Cook for 1 hour 15 minutes, stirring occasionally. The grits will stick to the bottom of the pan, so make sure not to scrape the bottom of the pan. If the grits absorbed all of the water, add some hot water to thin out the grits. Remove the pan from the heat and stir in the remaining 1 tablespoon butter, the cheese and jalapeno peppers. The grits can either be served immediately or prepared in advance and reheated.
  • For the lobster: Rub the lobster meat with the garlic, oil and butter and sprinkle with salt and black pepper. Grill, body-side down at first, until cooked three-quarters of the way through; flip and grill meat-side down. Remove from the grill and squeeze over the lime juice.
  • For the cioppino: Heat the olive oil in a saucepan until just about to the smoking point; quickly add the garlic, tomatoes and red pepper flakes. Saute until the garlic becomes translucent. Add the clams, cook for 2 minutes, then add the shrimp and the wine immediately after. Simmer until the shrimp and clams are halfway cooked, then add the butter, crab claws and knuckle meat and the lionfish. Cover and simmer until the fish is barely cooked through; season with salt and black pepper, and finish with the basil, parsley, mint and a spritz of fresh lemon juice.
  • Reheat the grits, if needed, and place 2 cups grits into a large, deep platter. Arrange the cioppino around the grits, and garnish with the grilled lobster. Serve.

1 small fryer chicken (about 3 pounds), quartered
For sauce
1 cup beef stock or canned beef broth
1 cup chicken stock or canned low-salt chicken broth
1/2 cup dry white wine
3 ounces thinly sliced pancetta, cut into matchstick-size strips (about 3/4 cup)
8 ounces fresh shiitake mushrooms, stemmed, sliced (about 3 cups)
3/4 cup whipping cream
1 tablespoon thinly sliced fresh sage leaves

Steps:

  • Make chicken:
  • Mix oil, garlic and rosemary in 13 x 9 x 2-inch glass baking dish. Sprinkle chicken with salt and pepper. Add to oil mixture; turn to coat. Cover and refrigerate chicken at least 4 hours or overnight, turning occasionally.
  • Make sauce:
  • Boil both stocks and wine in heavy medium saucepan until reduced to 1 cup, about 15 minutes. Remove from heat.
  • Cook pancetta in heavy large skillet over medium-high heat until crisp and golden, stirring constantly, about 3 minutes. Using slotted spoon, transfer pancetta to bowl. Add mushrooms to same skillet and saut until golden, about 4 minutes. Add stock mixture and cream to skillet and simmer until reduced to sauce consistency, about 5 minutes. Mix in pancetta and sage. Season to taste with pepper.
  • Meanwhile, prepare barbecue (medium-high heat). Remove chicken from marinade. Grill until cooked through, turning occasionally, about 30 minutes.
  • Spoon grits onto plates. Place chicken atop grits. Spoon sauce over; serve.

An easy and tasty recipe from Food Network. In order to make it more low calorie, I replaced butter/oil w. cooking spray, and heavy cream with fat free milk with a 1/2 tsp of flour. Grits I replaced with brown rice. It looks great on the plate, tastes fantastic, and is very low calorie and healthy. Instead of a regular grill, I broiled the fish and vegetables in oven spraying them first with cooking spray so that they would not get dry (used same timings as given in the recipe for grilling).

1 cup chicken broth
1/2 cup instant (quick) white grits, plus more if needed
Kosher salt
2 ounces cream cheese
One 4-ounce salmon fillet
Freshly ground black pepper
Grapeseed oil
1 ounce red onions, sliced
1 teaspoon slivered garlic
1 ounce green asparagus, blanched
1 ounce red tomatoes, sliced
Fresh lemon juice, for serving

Steps:

  • In a pot, bring the broth to a simmer and whisk in the grits. Rest the grits for 5 minutes to open, bloom and thicken. Add more grits if the consistency is too thin and add up to 1 teaspoon salt. Whisk in the cream cheese and keep the grits warm until ready to serve.
  • Heat a flat top or pan over high heat. Remove the skin from the salmon, and then dry with paper towels. Sprinkle the salmon with salt and pepper, and then a little oil. Sear the salmon. When crispy on the bottom, flip the salmon. (The cooking surface must be hot or the salmon will stick.) Avoid moving the salmon around while it cooks, to create a crisp texture.
  • In another hot pan add some oil, the onions and garlic, and saute. Add the blanched asparagus and tomatoes last to prevent over-cooking. Season with salt and pepper.
  • On a serving plate, add a scoop of the grits and place the sauteed vegetable on top. Place the salmon on top of the vegetables. Squeeze a little lemon juice over the top, then serve.

3 tablespoons all-purpose flour

2 3/4 cups clam juice
1/4 cup heavy cream

  • Grilled Grit Squares:
  • To prepare grits, bring the water and salt to a boil in a large saucepan over high heat. And gradually stir in the grits. Reduce the heat and simmer until thick, stirring frequently, about 30 minutes. Remove from heat and stir in the cheese, white pepper, and pepper sauce.
  • Spread the grits in a 15 by 10-inch pan coated with cooking spray and let cool completely on a wire rack. Cover with plastic wrap and refrigerate for 30 minutes. Invert grits onto a cutting board and cut into 6 squares. Put the squares on a grill pan coated with cooking spray, and grill until lightly browned and thoroughly heated for 3 minutes on each side. Remove from the pan to a plate and keep warm.
  • Heat grill to medium heat.
  • Put the andouille sausage on the grill and start to cook.
  • In a saute pan, over the grill, add the butter and melt. Stir in the flour and cook for 4 to 6 minutes for a medium brown roux. Add the onions, peppers, and celery. Season with salt and cayenne. Continue cooking until the vegetables are tender, about 8 minutes. Remove the sausage from the grill. Dice, add to roux, and continue to cook for 2 minutes. Season the shrimp with salt and cayenne. Add the shrimp and stir in the clam juice and cream. Bring the liquid to a simmer and continue to cook until the mixture coats the back of a spoon, about 8 to 10 minutes. Remove from the heat and stir in the green onions. To serve, put a grilled grits square in the center of each serving bowl. Spoon the sausage/shrimp mixture over the grits and garnish with parsley or chive sprigs before serving. If desired, serve with Grilled Collard Greens.

  • Preheat grill to medium-high. Bring milk and 4 cups water to a boil in a medium saucepan over medium-high heat. Stir in 2 1/2 teaspoons salt. Slowly add grits, whisking constantly. Reduce heat, cover, and simmer, stirring occasionally, until thick and creamy, about 15 minutes. Stir in cheese. Remove from heat; cover to keep warm.

1 lb cheddar cheese, grated
6 cups cooked grits (according to package directions)
to taste flour
to taste egg wash
to taste fresh breadcrumb (for breading cakes)
2 red bell peppers, diced very finely
1 tablespoon peanut oil, plus oil for frying cakes
4 tablespoons Grand Marnier
2 cups Karo light corn syrup
2 -4 anchovy fillets (or to taste)
1 tablespoon capers
1/4 teaspoon harissa or 1/4 teaspoon Chinese red pepper sauce
1 tablespoon garlic, chopped
1 large lemon, juiced
1 cup homemade mayonnaise (commercial can be substituted, but use reduced sugar type to avoid too much sweetness)
12 u- 12 shrimp (jumbo, the bigger the better)
3 tablespoons scallion tops, sliced

Steps:

  • For the Grit Cakes: Roast one poblano pepper over open flame on gas stove until completely charred, then cool and dice. Add pepper and cheese to grits.
  • Stir to incorporate and spread in pan approximately 2 to 3 inches thick.
  • Let sit and refrigerate until it is cold.
  • Remove from refrigerator and cut with biscuit cutter to create cakes.
  • Bread the cakes in flour, egg wash and bread crumbs.
  • Keep in refrigerator until you are ready to cook the dish.
  • For the Pepper Jelly: Saute diced red peppers and remaining 1 poblano in 1 tablespoon peanut oil for 1 minute. Deglaze with Grand Marnier and add Karo syrup.
  • Cook at moderate heat approximately 20 minutes, liquid should reduce by 2/3.
  • Remove from heat and cool slightly.
  • For the Rouille: Combine anchovies, capers, pepper sauce, garlic and lemon juice in a blender until smooth.
  • Fold in mayonnaise and refrigerate. For plating: Deep fry the cakes.
  • Place Pepper Jelly on the bottom of the plate. Grill shrimp only until firm and pink.
  • Do not overcook.
  • Briefly place fried cake on grill to score and flavor, being careful not to burn breading.
  • Place cake on Pepper Jelly and top with 2 shrimp per person.
  • Drizzle Rouille on top and sprinkle with scallions.

We love grits, this is another good way to serve them. A great alternative to a baked potato when served with grilled steak or chicken. I belive this recipe could be made with instant grits.The 2 1/2 hours for refrigeration is not include in time. The recipe comes from Tast of Home's Light and Tasty.

4 cups water
1 cup uncooked old fashion grits
1 teaspoon salt
4 ounces shredded cheddar cheese
1 -2 clove garlic, minced
1 tablespoon olive oil

Steps:

  • I a sauce pan, bring water to a boil; slowly add grits and salt, stirring constantly; Reduce heat:simmer, uncovered, for 40-45 minutes or untill thickened, stirrin occasionally.
  • Add cheese and garlic; stir until cheese is melted, Spray 9-inch baking dish with nonstick cooking spray; Cover and refrigerate for 2 to 2 1/2 hours or until frim.
  • Before starting the grill, coat the grill rack with nonstick cooking spray; Cut the grits into 3-inch squares; Brush both sides with olive oil.
  • Grill, covered, over medium heat for 4 to 6 minutes on each side or until lightly browned.

Pancetta Wrapped Bayou La Batre Shrimp with Rikards Mill Yellow Corn Grits and Grilled Heirloom Tomatoes image

24 (U-8) head on wild shrimp
8 ounces pancetta
1 tablespoon lemon pepper
4 ounces Worcestershire sauce
1 quart whole milk
1 pint water
3 jalapeno peppers, split
4 cups yellow corn stone-ground grits
1 tablespoon whole butter
1 tablespoon mascarpone cheese
Salt and pepper
3 peeled and sliced shallots
2 corn cobs, kernels removed
All the shrimp shells from peeling shrimp
1 tablespoon whole butter
1 tablespoon tomato paste
1-ounce dry sherry
1 1/2 quarts shrimp stock
1 tablespoon all-purpose flour
6 pieces okra, rolled in rice flour
6 (1/2-inch) thick slices heirloom tomatoes
Shaved fennel, soaked in ice water
Fennel Fronds, for garnish
Micro parsley, for garnish

Steps:

  • Pancetta Wrapped Shrimp:
  • To prepare the shrimp, shell and devein, leaving the head on and reserving shells for the Shrimp Reduction. Slice the pancetta or have your grocer slice it for you the same thickness as slab bacon. Wrap the flesh part of each shrimp with the pancetta. To cook the shrimp, season the shrimp with lemon pepper and saute over medium heat until the pancetta is golden brown and crisp. Deglaze the pan with Worcestershire and reduce to coat the shrimp. Reserve for plating.
  • Yellow Corn Grits:
  • To cook the grits: Bring the milk, water and jalapenos to a simmer over medium heat. Add the grits and butter; simmer until tender adding additional water if needed, stirring occasionally. When grits are tender, finish with mascarpone cheese and season with salt and pepper. Reserve warm for plating.
  • Shrimp Reduction:
  • In a small saucepan sweat the shallot, corn cobs and shrimp shells in whole butter until orange. Add tomato paste and caramelize. Deglaze with white wine and reduce. Add shrimp stock and simmer for 1/2 hour. Strain, reduce by 1/2 and finish with whole buerre manie - buerre manie is made by combining the whole butter with the flour. Reserve for plating.;
  • To garnish the plate:
  • Fry okra in 350 degrees F oil until golden. Grill heirloom tomatoes. Place tomatoes and okra in the middle of the plate, spoon grits on top of the okra and tomatoes, arrange shrimp around the plate. Sprinkle shaved fennel, fronds and parsley on top of dish.

I had initially planned on using the shrimp for another dish, but wanted something different. Someone suggested Shrimp and Grits, so here is my version. It came out fantastic, was a huge hit with the little men in my life! Woohoo! Hope you love it as much as we did! Thanks Monica

1 lb shrimp, cleaned and deviened
4 slices of slab bacon cut into lardons, keep the bacon fat
1 lemon
4 c chicken stock
1/4 c light cream, or milk
1 c corn meal, i had white so that's what i used either is fine)
2 garlic cloves minced, or garlic powder
handful of parsley chopped
green onions chopped green part only
cajun seasoning, sprinkle on shrimp
salt and pepper
reserved bacon fat
2 c cheddar cheese
2 Tbsp butter

  • 2. I cooked the bacon in the pan removed it and then added the chicken stock and boiled it. Then I added the cormeal and stirred until it thickened. Added the butter and cheese took off the heat and added the cream, salt and pepper, garlic and parsley
  • 3. Season the shrimp with salt, pepper, lemon, garlic cajun seasoning and I poured some of the bacon fat over instead of olive oil.
  • 4. Cook the shrimp on both sides on a grill pan until pink on both sided. Or on the grill if weather allows
  • 5. Spoon the grits in a bowl, add bacon, more cheese top with the shrimp and scallions.
  • 6. Yum!

GRILLED GRITS

Number Of Ingredients 7

3 cups water or chicken broth, homemade or canned low-sodium
1 clove garlic, minced
1 teaspoon hot sauce, your favorite brand
1 teaspoon salt, or more to taste
1/2 teaspoon black pepper, freshly ground, or more to taste
3 cups quick cooking grits
4 tablespoons butter, unsalted (1/2 stick), melted, or olive oil

Steps:

  • 1. Combine the water, garlic, hot sauce, 1 teaspoon salt, and 1/2 teaspoon pepper in a large, deep pot and bring to a boil over high heat. Stir in the grits and 2 tablespoons melted butter and return to a boil. Reduce the heat to a gentle simmer and cook the grits, uncovered, until thick, 5 to 8 minutes, stirring often. The heat should be high enough to cause bubbles to break the surface, but low enough so that the grits don't spatter. Correct the seasoning, adding salt and pepper to taste.2. Pour the cooked grits onto a nonstick baking sheet or pie pan and even out the top with a spatula. The grits should be about 1/2 inch thick. Let cool to room temperature, then cover loosely with plastic wrap and refrigerate until firm, at least 4 hours or as long as 2 days.3. Preheat the grill to high.4. While the grill is heating, cut the grits into rectangles or wedges and use a spatula to remove them from the pan to a large plate. 5. When ready to cook, brush both sides of the grits pieces with some of the remaining melted butter or oil. Oil the grate, then arrange the grits pieces on it and cook, turning with a spatula, until sizzling hot and nicely browned on both sides, 3 to 4 minutes per side. Brush the grits with any remaining butter or oil as they cook.Serves 6
