Grilled Cheese and Pear Sandwich ~ together offer savory and sweet flavors that will exceed anyone's expectations. Sliced pears along with a thin slice of blue cheese, fresh arugula, and a dash of Dijon creates a grilled cheese sandwich that becomes insanely delicious!

4 Thick slices of country bread
1 Tbsp. unsalted butter, melted or olive oil
4-ounces of Blue cheese - thinly sliced
1 large Bosc or Bartlett pear - thinly sliced
1 cup fresh arugula
Optional: 2 tsp. Dijon mustard

Steps:

  • Brush one side of each slice of bread with butter or olive oil.
  • Form sandwiches with buttered-side out. Spread a thin layer of Dijon mustard on one side onto each sandwich, then add a few slices of pear and pile on some fresh arugula.
  • Top with a thin slice of blue cheese and close the sandwiches.
  • Heat a large nonstick skillet over low heat. Spray lightly with cooking spray. Grill the sandwiches, on low heat until the bread is golden brown, crispy, and the cheese is melted, about 2 to 3 minutes per side.
  • Remove and cut sandwiches in half or diagonally and serve immediately.
  • Serves 2

Watercress, Pear and Gorgonzola Salad image

Mellow pears contrast the strong flavors of gorgonzola in this bright, lightly creamy salad. It's all finished with a sweet-tart dressing of onion, mustard and red wine vinegar. It makes a lovely first course, or simply treat it as two servings, rather than four, and serve it as a light lunch.

1/3 cup coarsely chopped cippolini or other sweet onion
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
1/2 teaspoon honey
Juice of 1/2 lemon
1/2 cup grapeseed oil
Sea salt
ground white pepper
2 tablespoons extra virgin olive oil
8 ounces watercress (about 1 bunch), thick stems removed
4 ounces Gorgonzola, sliced into 16 small slabs
2 ripe pears, cored, quartered and cut in wedges, or 4 fresh figs, quartered

Steps:

  • Combine the onion, mustard, vinegar, honey, lemon juice and grapeseed oil in a food processor or blender. Purée until onion is very fine. Season with salt and pepper. Whisk in olive oil.
  • Rinse and dry the watercress. In a large bowl, season watercress with salt and pepper and toss with the dressing. Arrange cheese and fruit on four salad plates and top with watercress.

2 tablespoons extra virgin olive oil
1 tablespoon Dijon mustard
1 large garlic clove, minced
1/2 teaspoon crushed red pepper flakes
salt & freshly ground black pepper
1 1/4 lbs skirt steaks
1 large ripe tomatoes, thinly sliced
1 tablespoon balsamic vinegar
1/3 cup gorgonzola, crumbled (dolce cheese)
3 tablespoons mayonnaise (the real kind)
1 baguette, cut into four 6-inch lengths and split
1 bunch watercress, tough stems trimmed

Steps:

  • Light a grill or preheat a broiler.
  • In a small bowl, combine 1 tablespoon of the olive oil with the mustard, garlic and crushed red pepper.
  • Season with salt and black pepper.
  • Put the steak in a shallow baking dish and spread the mustard mixture all over it.
  • Grill the steak over high heat, turning once, until charred and medium rare, about 4 minutes per side.
  • Transfer the meat to a cutting board and let it rest.
  • Meanwhile, spread the tomato slices on a large platter, drizzle with the balsamic vinegar and the remaining 1 tablespoon of olive oil and season with salt and black pepper.
  • In a small bowl, mash the Gorgonzola with the mayonnaise.
  • Spread the Gorgonzola mixture on the cut sides of the baguette lengths and grill, cheese side up, until the baguette is toasted and the Gorgonzola is melted, about 1 minute, being careful not to burn the bread.
  • Cut the steak into 4-inch lengths, then thinly slice it across the grain.
  • Pile the meat on the baguettes and spoon the accumulated meat juices over the top.
  • Top with the tomato slices and watercress, close the sandwiches and serve.

2 pears - peeled, cored and sliced
8 ounces crumbled Gorgonzola cheese
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange the baguette slices in a single layer on a baking sheet. Brush the top of each one with olive oil or melted butter. Place a slice of pear onto each piece of bread, then crumble some of the cheese over the top. Sprinkle with walnuts.

4 ounces chilled Gorgonzola cheese (for strong flavor) or 6 ounces chilled Saga Blue cheese (for milder flavor)
1 firm-ripe pear such as Bartlett or Anjou
four 1/2-inch-thick slices whole-grain bread
1 cup watercress sprigs (about 1/2 bunch, coarse stems discarded)

Steps:

  • Preheat broiler.
  • Cut cheese into thin slices. Halve pear lengthwise and core with a lemon-ball cutter. Slice pear thin crosswise.
  • On a baking sheet toast both sides of bread about 3 inches from heat until golden. Divide watercress among toasts and cover with overlapping pear slices. Arrange cheese over pear slices and broil sandwiches until cheese is melted, about 1 minute.
