PICKLED GARLIC SCAPES OR GARLIC WHISTLES
This year was my first time experiencing garlic scapes. I grilled some, added some to a salad, and made this lovely recipe. These are great with barbecue or any other way you might enjoy a garlic-y pickle. Cook time does not include cooling time.

Steps:
- Wash garlic scapes and remove blossoms and any woody ends. Cut each scape into 2-3 sections.
- Bring 3-4 quarts of water to a boil. Blanch scapes for 2 1/2-3 minutes in boiling water. Drain & dump into ice water to stop cooking. Drain again & add to a clean quart jar.
- Add water, vinegars, salt, sugar & pickling spice to small saucepan. Bring to a boil.
- Add peppercorns & mustard seed to jar with scapes.
- When brine has come to a boil remove from heat and pour over scapes in the jar.
- Add lid and allow to come to room temperature. Refrigerate for 3 days before eating. Will last about a month refrigerated. Could also be sealed in a water bath for longer term storage (but I've not tried this). [Update: I've had some of these in the fridge for almost exactly a year and they are noticeably softer but otherwise are just fine.].
EARLY GARLIC GREENS (GARLIC SCAPES)
These are a treasure! I find them at farmers' markets in the early summer. This recipe is my favorite preparation, steamed and simple. I serve them as a warm side dish, but I always cook extra so I have leftovers in the refrigerator for cold snacks and salads. They have the texture of green beans with a light and fresh garlic flavor. Alternative preparations include sauted in olive oil or added to soups and stews.

Steps:
- Trim garlic greens by cutting the top (pointy end) to within 1/2" of bud. There will be 6"-8" of green below bud.
- Greens may be cut into any preferred length as you would with green beans. (I like to leave them long because they are beautiful and fun.).
- Steam in steamer basket over boiling water approximately 8 minutes. Time may vary depending on size of green, so test at 5 minutes and adjust time accordingly.
- Remove from steamer and place in serving bowl.
- Toss with salt and pepper to taste.
- Serve warm or cold.
GRILLED GARLIC SCAPES
Try this with any meat BBQ. Edit on July 17: I made this for the first time for my husband & myself last weekend - it was delicious! I combined the leftovers with a foil wrapped mixed veggie packet on the BBQ the next day & they were just as good or maybe even better!

- Cut scapes into pieces about 2 inches long& place onto a large sheet of foil wrap.
- Sprinkle liberally with olive oil; season to taste with salt& pepper.
- Bundle up the foil& grill for about 10 minutes or until soft& golden.
