3 tablespoons butter
5 medium potatoes
1/4 cup chopped green onion
2 tablespoons grated parmesan cheese
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
3 slices bacon, crisp-cooked, drained and crumbled
2 tablespoons snipped fresh parsley or 1 teaspoon dried parsley
2 tablespoons snipped fresh dill or 1 teaspoon dried dill
2 tablespoons snipped fresh chives or 2 tablespoons dried chives

Steps:

  • Grease a 24 x 18 inch piece of heavy duty foil with 1 tablespoon of the butter.
  • Scrub and thinly slice unpeeled potatoes onto the center of the foil.
  • Sprinkle with the onions, cheese, salt, paprika and pepper.
  • Dot with remaining butter.
  • Enclose the potatoes in the foil and seal with a double fold enclosing the potatoes completely leaving head space for the steam to build.
  • Grill potato packet for 30 to 40 minutes, turning every 10 minutes or until potatoes are tender.
  • Before serving sprinkle potatoes with bacon, parsley, dill and chives.

3 cups cauliflowerets
1 cup baby-cut carrots, cut lengthwise in half
1 small red onion, cut into thin wedges
2 tablespoons olive or vegetable oil
1/2 teaspoon garlic pepper
1/2 teaspoon salt
1/4 cup sliced ripe olives
2 tablespoons chopped fresh basil leaves

Steps:

  • Heat coals or gas grill for direct heat. Cut 18x18-inch piece of heavy-duty aluminum foil. Spray with cooking spray. Place cauliflowerets, carrots and onion on center of foil. Drizzle with oil; sprinkle with garlic pepper and salt. Stir gently to mix.
  • Fold foil over vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  • Cover and grill packet 4 to 6 inches from medium heat 13 to 18 minutes or until vegetables are tender. Place packet on serving platter. Cut large X across top of packet; unfold foil. Gently stir in olives and basil.

4 medium sweet onions (such as Vidalia)
1 tablespoon butter or 1 tablespoon margarine, melted
1 teaspoon dijon-style mustard
1/8 teaspoon bottled hot pepper sauce
1 tablespoon brown sugar
pepper

Steps:

  • Peel onions.
  • Cut almost through each onion forming 8 wedges.
  • Place each onion in a 24x18 inch piece of foil.
  • Stir together the melted butter, mustard and hot sauce.
  • Drizzle over onions.
  • Sprinkle with brown sugar.
  • Seal each onion in the foil packet using a double fold leaving head space for steam to build.
  • Grill on a covered grill for about 25 minutes or until onions are nearly tender.
  • Make a 2 inch opening in the top of each packet.
  • Cover and grill for 10 minutes more or until onions are slightly browned.
  • Remove onion blossoms from foil packets and sprinkle with pepper.

1 1/2 teaspoons seasoning salt (I use Nature's Seasonings)
1/4 cup grated parmesan cheese

Steps:

  • Remove stem& leaves from cauliflower.
  • Wash& pat dry.
  • Spread the butter over the cauliflower.
  • Sprinkle with seasoned salt& cheese.
  • Wrap head of cauliflower in heavy duty aluminum foil.
  • Grill over medium heat about 40 minutes or until desired tenderness (test with toothpick).

4 ounces cauliflower, cut into bite-sized pieces
1 tablespoon salted butter
1 small garlic, chopped

  • Preheat the grill to medium heat, about 400 degrees F (200 degrees C).
  • Spread out aluminum foil on a clean work surface, fold in half, and lightly grease one side with cooking spray. Scatter cauliflower pieces onto the foil and dot with butter. 1 medium head cauliflower
3 -4 tablespoons butter, softened to room temp
1/4 teaspoon garlic powder
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1/8 teaspoon paprika

Steps:

  • Wash cauliflower. Remove leaves and stem. With a sharp knife, cut/dig out the hard core.
  • Tear a large piece of heavy-duty aliminum foil large enough to wrap the cauliflower. Place the cauliflower in the center if the piece of foil. Set aside.
  • In a small bowl, combine the softened butter and all the seasonings; mix well.
  • Spread the seasoned butter mixture over top of the cauliflower. Wrap tightly in the foil.
  • Place on top rack of grill, close lid and grill over med-high heat for about 50 - 60 minutes or until desired tenderness is achieved (you can test w/ a sharp knife or fork right through the foil).
  • Be careful not to get steam burns when openening the foil.

You may adjust all amounts to suit taste, I like to use seasoned salt for this but white salt will do fine -- to kick this up a notch, in a small saucepan or microwave melt 1/2 cup butter, mix in 1 tablespoon mustard, 1 teaspoon Worcestershire sauce, 1/4 teaspoon lemon pepper and 2-3 teaspoons horseradish, brush on the corn then wrap in foil and grill as stated :)

seasoning salt (to taste) or white salt (to taste)
fresh ground black pepper (optional and to taste)
6 ears fresh corn (shucked and silks removed)
6 pieces heavy-duty aluminum foil (each piece about 13x12-inches)

Steps:

  • Place each corn on top of one piece the heavy-duty foil.

¼ cup Buffalo wing sauce
1 teaspoon dry ranch dressing mix
1 teaspoon olive oil

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine cauliflower florets, Buffalo wing sauce, ranch, and olive oil in a large bowl. Stir until evenly combined.
  • Pull out an extra-long length of aluminum foil and fold it in half so you've got a double layer. Place cauliflower mixture in the center, then pull over one side, folding the edges to seal. Then fold the remaining two edges. Don't seal the packet too tightly; you want to leave some room for the steam to expand.
  • Place foil packet directly on the grate and grill for 15 minutes.
