Grilled Corn with Cheese and Chile image

This dish owes its inspiration to our Louisiana neighbors on two sides: the incredible sweet corn that is grown in Indianola, Mississippi, where some of my wife's family is from, and also the wonderful Tex-Mex flavors of our friends in Texas. This recipe is from "Emeril at the Grill" by Emeril Lagasse.

6 ears fresh sweet corn, silk removed but husks still attached
1/2 cup sour cream
2 tablespoons whole milk
3 tablespoons butter, melted
1 lime, halved
1/2 cup finely grated queso anejo, queso fresco, or Parmesan cheese
1 tablespoon chili powder
1 1/2 teaspoons kosher salt

Steps:

  • Pull the husks up to cover the ears of corn, and place the corn in a large bowl or pot. Cover with cold water, and place a large plate or other weight on top of the corn so that it remains submerged. Allow the corn to soak for at least 1 hour or as long as 4 hours.
  • Meanwhile, combine the sour cream and milk in a small bowl, and set it aside.
  • Preheat a grill to medium-high. Adjust the grilling rack so that it sits about 4 inches away from the fire.
  • Drain the corn but do not remove the husks. Lay the corn on the grill and cook, turning it frequently, until it is crisp-tender, 15 to 20 minutes. Remove the corn from the grill and allow it to cool slightly. Then pull the husks back to form a handle, and brush the ears evenly with the melted butter. Squeeze the lime halves evenly over the ears of corn. Return the corn to the grill and cook, turning it occasionally, for 5 to 10 minutes, or until the corn is slightly browned in places. Remove the corn from the heat and brush the ears with some of the sour cream mixture. Divide the cheese evenly among the ears of corn, coating them on all sides. Sprinkle with the chili powder and kosher salt, and serve immediately.

6 ears corn, in their husks
1 cup unsalted butter, at room temperature
1 tablespoon chili powder
1 teaspoon cayenne pepper
Juice of 3 limes
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 cup cotija cheese or feta cheese

Steps:

  • Heat a grill to medium-high heat. Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.
  • Mix together the butter, chili powder, cayenne pepper, lime juice and some salt and black pepper in a bowl until incorporated.
  • Peel back the corn husks, leaving on to use as handles while eating. Rub the chili-lime butter all over the corn. Garnish with the cotija cheese.

Whole ears of corn are a classic street food in Mexico, where they are either grilled or boiled, then often dressed with some combination of lime, chile, mayonnaise and grated cheese. This grilled version calls for all of the above, which get mixed together into a creamy, bracing topping, and slathered all over the hot, sweet ears. It's not strictly traditional, but it does make it easier to assemble the corn and its dressing before serving. Or place the various topping in small bowls and let guests have the fun of garnishing their own. And if you don't have a grill, the broiler works too though watch the ears carefully so they don't burn.

3 tablespoons mayonnaise
2 limes
1/4 teaspoon ancho chile powder, more as needed
Fine sea salt, as needed
Black pepper, as needed
1/2 cup crumbed cotija cheese (or substitute feta or ricotta salata)
1/4 cup chopped fresh cilantro

Steps:

  • Heat your grill to medium-high. Grill corn, turning occasionally, until cooked through and lightly charred, 7 to 10 minutes.
  • Meanwhile, in a small bowl, mix together mayonnaise, zest of 1 lime, chile powder, salt and pepper.
  • Slather hot corn with mayonnaise mixture and sprinkle with cheese and cilantro. Cut limes into wedges and serve alongside corn.

  • Cut the kernels off 1 ear of corn. Grate 1 small zucchini, then squeeze dry in a kitchen towel. Toss the corn, zucchini, 1/2 cup sliced cherry tomatoes, 2 sliced scallions, 1/2 teaspoon kosher salt and a few grinds of pepper in a large bowl. Add 2 cups grated Colby jack cheese; toss. Divide among 4 slices white bread and top each with another slice of bread; press to adhere. Lightly butter the outsides of the sandwiches. Grill over medium-low heat, rotating as needed, until well marked and the cheese melts, 3 to 5 minutes per side.

  • Char chili over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed and finely chop chili. Transfer to bowl. Add butter and cheese; blend with fork. Season with salt and pepper.
  • Prepare barbecue (medium-high heat). Brush corn all over with oil. Sprinkle with salt and pepper. Grill corn until tender and brown in spots, turning frequently, about 12 minutes. Serve, passing chili-cheese butter alongside.

  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Brush a thin layer of mayonnaise on each ear of corn. Sprinkle the corn with the Parmesan cheese, chili powder, salt, and pepper. Wrap each ear with aluminum foil and place on the grill.
