Number Of Ingredients 11

1 teaspoon finely shredded lime peel
1/4 tablespoon lime juice (about 1 1/2 limes)
1 jalapeno pepper, seeded and finely minced
1 tablespoon garlic, minced
2 tablespoons low sodium soy sauce
3 tablespoons olive oil
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
2 tablespoons cilantro
1 tablespoon honey
1 1/2 lbs medium shrimp (about 6 per person)

Steps:

  • Preheat grill to medium-high.
  • In medium bowl, combine all ingredients except shrimp and stir well.
  • Peel shrimp except for tail, and devein. Rinse and pat dry with paper towels.
  • Place shrimp in large resealable bag. Add marinade. Through bag, rub marinade into shrimp. Place in refrigerator for 20 minutes. Halfway through, turn bag and give shrimp another marinade massage. (Do not marinate longer than 20 minutes, or the acidic lime juice will cook the shrimp).
  • Place shrimp on cutting board and nestle them together in groups of six. Using 2 bamboo skewers for each group, skewer the shrimp together (this is for nice presentation, keeps shrimp from falling into the grill and makes them easier to turn). NOTE: Soak bamboo skewers in water for 15 minutes prior to use, to keep them from burning.
  • Grill shrimp on an oiled grill rack 2 minutes per side, or until opaque.
  • (Serve with Toasted Couscous with Grilled Mango and Zucchini).

16 jumbo shrimp, unpeeled, preferably head-on
6 tablespoons fish sauce (such as nuoc nam or nam pla), divided
4 tablespoons vegetable oil, divided, plus more for grill
2 teaspoons turmeric
30 cilantro sprigs, chopped
10 long red chiles (such as Holland or Anaheim), stemmed
8 garlic cloves
2 1" pieces ginger, peeled
1/4 cup fresh lime juice
2 tablespoons palm sugar or (packed) light brown sugar

Steps:

  • Combine shrimp, 2 tablespoons fish sauce, 2 tablespoons oil, and turmeric in a large bowl; toss to coat. Let stand for 30 minutes.
  • Purée 4 tablespoons fish sauce, 2 tablespoons oil, cilantro, and remaining ingredients in a blender or food processor until a coarse mixture forms; transfer dipping sauce to a small bowl and set aside.
  • Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Oil grill grates. Shake excess liquid from shrimp and place shrimp on grill. Cook, turning occasionally, until shrimp are charred and cooked through, 5-6 minutes.
  • Serve immediately with sauce.

1 1/2 pounds frozen, shelled and deveined large shrimp, thawed
1 (12-ounce) bottle Mexican chile and lime marinade (recommended: Lawry's)
Cooking oil, for grill
1 (8-ounce) container sour cream
1 chipotle pepper in adobo sauce, finely chopped
1 tablespoon adobo sauce
12 corn tortillas
1 (6-ounce) bag shredded red cabbage
1/2 cup frozen chopped onion, thawed
1 cup prepared guacamole
1 lime, for garnish

Steps:

  • Marinate the shrimp in the chili and lime marinade for at least 5 minutes but no more than 30 minutes.
  • Preheat a grill or grill pan over medium-high heat.
  • Brush the grill with a paper towel that has been soaked in cooking oil. Remove the shrimp from the marinade and place on the grill. Grill the shrimp until cooked through, 2 to 3 minutes per side.
  • Mix the sour cream with chipotle and adobe sauce.
  • Wrap the tortillas in a damp towel. Place on a plate and microwave for 45 seconds.
  • Build the taco with the shrimp, cabbage, onion and guacamole and top with the chipotle sour cream. Garnish with lime wedges.

1/2 pound arugula
Salt and freshly ground black pepper, to taste
Chile-Lime Vinaigrette, recipe follows
Grilled Tamarind Shrimp, recipe follows
1 medium jicama, peeled and julienned
3 ears grilled corn, kernels only
1 pint pear tomatoes, halved
10 square wonton wrappers, thinly sliced and deep fried
1/2 cup sesame oil
1 cup lime juice
1 cup rice vinegar
1 clove garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons Korean chile flakes
2 tablespoons fish sauce
1 1/2 cups canola oil
2 tablespoons sugar
Salt and freshly ground black pepper, to taste
12 medium shrimps
1/2 package of tamarind
1/2 cup mirin
2 cups hot water
2 tablespoons molasses
2 cloves garlic, minced
2 tablespoons fresh lime juice
1 tablespoon sriracha

Steps:

  • Fill a large bowl with cold water and soak the arugula to remove any dirt and sand. Once clean, pat the greens dry and place in a large mixing bowl. Season with salt and pepper and drizzle with the vinaigrette, just enough to coat the greens. Equally divide the arugula and place into 4 shallow bowls. Arrange 3 shrimp on top of the greens and garnish with the jicama, corn, tomatoes, and fried wonton wrappers.
  • In a food processor, add the sesame oil, lime juice, rice vinegar, garlic, ginger, chile flakes, and fish sauce. While the processor is running, slowly add the oil. Season with salt, pepper, and sugar. The vinaigrette should be tart, but hold a hint of sweetness.
  • In a large mixing bowl, combine the tamarind, mirin, hot water, molasses, garlic, lime juice, and sriracha. Pour the mixture into a shallow sheet pan and add the shrimp, turning to coat. Allow the shrimp to marinate for 1 to 2 hours maximum, refrigerated. Prepare a hot grill or a 500 degree oven and grill/broil the shrimp for about 5 minutes.
