Fry for a few minutes until golden, dip into a bowl of tomato soup, and resolve to never make a grilled cheese without mayo ever again!

2 pieces sourdough bread
1 ½ tablespoons unsalted butter
1 ½ tablespoons mayonnaise
3 slices cheddar cheese

Steps:

  • On a cutting board, butter each piece of bread with butter on one side.
  • Flip the bread over and spread each piece of bread with mayonnaise.
  • Place the cheese on the buttered side of one piece of bread. Top it with the second piece of bread, mayonnaise side out.
  • Heat a nonstick pan over medium low heat.
  • Place the sandwich on the pan, mayonnaise side down.
  • Cook for 3-4 minutes, until golden brown.
  • Using a spatula, flip the sandwich over and continue cooking until golden brown, about 2-3 minutes.

Jam and cheese sandwiches are a thing in England and they ought be a thing here, too. You're basically taking a cheeseboard and putting it between two slices of bread. For this version, I thought it would be fun to play around with tomato jam. The jam is lovely and surprising -- perky is the word I'd use to describe it -- and a great counterpoint to melty, gooey cheese and crusty bread.

4 slices Cheddar
2 slices sourdough bread
2 tablespoons Tomato Jam (recipe follows)
Kosher salt and freshly ground black pepper
Butter, at room temperature, for spreading
1 pound peeled tomatoes, drained and finely chopped (canned or fresh both work)
1 cup sugar
1 large orange, zested and juiced
2 lemons, zested and juiced
1 cinnamon stick

Steps:

  • Place 2 slices of the cheese on 1 slice of bread and top with the tomato jam; sprinkle with a little salt and pepper. Add the remaining 2 slices of cheese, then press the remaining slice of bread onto it.
  • Heat a skillet over medium heat. Meanwhile, butter the top slice of bread. Press the sandwich with a spatula or steak weight, buttered-side down, onto the hot skillet. Press until the bread is golden brown and the cheese has started to melt. Butter the slice of bread that is now facing up, then flip the sandwich. Cook until golden brown and the cheese is gooey, 3 to 4 minutes total. Slice and enjoy!
  • In a nonreactive medium pot, combine the tomatoes with the sugar, citrus zest and juice and cinnamon stick. Cook over medium heat, stirring occasionally, until the mixture gels on a spoon (it will look like a thin syrup), about 30 minutes. Skim any foam off the top, then pour the jam into two or three 1-cup jars. Let the jam cool to room temperature before using. Refrigerate for up to 2 weeks. Makes about 2 cups.

1 cup white wine vinegar
1 tablespoon kosher salt, plus more to taste
1 tablespoon whole black peppercorn
2 teaspoons red pepper flakes
4 medium carrots, cut into ½-inch (1.24 cm) wide sticks
2 cloves garlic, peeled and smashed
1 large shallot, thinly sliced
1 ¼ cups water
1 tablespoon vegetable oil
8 oz flank steak
freshly ground black pepper, to taste
2 tablespoons unsalted butter
4 slices sourdough bread
2 cups shredded sharp cheddar cheese

Steps:

  • In a medium saucepan, combine the vinegar, 1 tablespoon salt, the peppercorns, red pepper flakes, carrots, garlic, shallot, and water. Bring to a boil over high heat and cook, stirring to dissolve the salt, for 1 minute. Remove from the heat and let cool to room temperature, about 20 minutes. (If not using immediately, transfer the carrots and their brine to an airtight container and refrigerate for up to 2 weeks.)
  • Meanwhile, heat the vegetable oil in a large cast-iron skillet over high heat.
  • Season the steak with salt and pepper. Transfer to the skillet and cook, flipping halfway, until golden brown on the outside and medium-rare inside, 6-8 minutes total. Transfer to a cutting board and let rest for 10 minutes, then thinly slice against the grain.
  • Return the skillet to medium heat and add the butter. Once melted, add 2 slices of sourdough bread. Top each slice with ½ cup shredded cheddar, and cook, undisturbed, until the bread is golden brown and toasted on the bottom and the cheese begins to melt, about 3 minutes. Divide the sliced steak between each slice of bread in the skillet, then top each with ½ cup of the remaining cheese and another slice of bread. Flip the sandwiches, cover the pan with a lid, and cook until the cheese has fully melted and the other side of the bread is golden brown and toasted, 2-3 minutes more.
  • Transfer the sandwiches to a cutting board and wrap each in foil. Serve with the pickled carrots alongside.
