2 pounds fresh asparagus, trimmed
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup honey
2 to 4 tablespoons minced fresh tarragon

Steps:

  • On a large plate, toss asparagus with oil, salt and pepper. Grill, covered, over medium heat 6-8 minutes or until crisp-tender, turning occasionally and basting frequently with honey during the last 3 minutes. Sprinkle with tarragon.

1 1/2 lbs fresh asparagus
1/2 cup butter
2 tablespoons chopped fresh tarragon
1 tablespoon chopped fresh parsley
grated lemon, rind of
1 tablespoon lemon juice
salt and black pepper

Steps:

  • Trim woody ends from asparagus.
  • Place the asparagus in a large frying pan with about 1 inch of boiling water.
  • Cover with lid and cook for about 6-8 minutes, until the asparagus is tender but still firm.
  • Drain well.
  • Arrange the asparagus spears on a warmed serving dish.
  • Make the tarragon butter by creaming together the remaining ingredients; heat it gently and pour over asparagus.
  • Serve at once.

1 bunch asparagus
3 tablespoons salted butter
1/8 teaspoon tarragon
2-3 dashes black pepper

Steps:

  • Fill the bottom pot of your steamer with a couple inches of hot water. Set it on the stove, covered, over high heat to bring it to a boil.
  • While the water is heating, rinse your asparagus and cut off the bottom two inches. Add the asparagus to your steamer basket.
  • When the water is boiling, place the steamer basket on top of the boiling pot and cover the steamer basket with a lid. Steam your asparagus for 10 minutes, or until it is just tender.
  • When the asparagus is almost done cooking, place your butter in a small, microwave-safe bowl and cover it with wax paper. Melt the butter in the microwave. Rub the tarragon between your thumb and fingers to crush it up a bit, and sprinkle it into the melted butter. Add your pepper and stir to blend.
  • Serve the asparagus in a platter with the bowl of tarragon butter on the side. Each person can spoon some tarragon butter over his or her portion. Store leftovers in the refrigerator for up to four days.

2 cups freshly squeezed tangerine juice
2 tangerines
1 tablespoon coarsely chopped fresh tarragon leaves
1 egg yolk
Salt and freshly ground black pepper
1 cup pure olive oil, plus more for tossing with and brushing on asparagus
2 large bunches asparagus, about 2 pounds total, trimmed and cooked for 2 minutes in boiling salted water, then cooled
Long curls tangerine zest, fresh or candied
Coarsely chopped toasted hazelnuts or pine nuts, optional

Steps:

  • Put the tangerine juice in a small non-reactive saucepan and bring to a boil. Cook until reduced to 1/2 cup. Let cool to room temperature.
  • Peel the tangerines, removing all the white pith, and segment over a bowl to catch both the segments and the juices. Cover and refrigerate until very cold.
  • Combine the reduced juice, tarragon, egg yolk, and salt and pepper, to taste, in a blender and blend until well mixed. With the machine running, add the 1 cup olive oil, at first by drops and then, as mixture emulsifies, in a thin, steady stream until all the oil is incorporated. Taste, for seasoning. Scrape into a jar, cover, and refrigerate until needed. You should have about 1 2/3 cups mayonnaise. Keeps 2 to 3 days, refrigerated.
  • Prepare the grill and let burn down to medium coals. Toss the cooled asparagus with about 1 tablespoon olive oil and season with salt and pepper. Grill over medium to low coals, turning the spears as needed, until they take on a little color and are just tender, about 6 minutes. Cover the grill, if necessary, to maintain the heat.
  • Arrange the asparagus on a platter with the reserved tangerine segments. Dot with the mayonnaise, and drizzle with any tangerine juice left in the bowl. Garnish with fresh or candied zest and the nuts, if using. Serve at once.
  • Cook's Note: Every cook has insecurities. One of mine is mayonnaise. I always get a little anxious until I see it coming together in the blender. If the mayonnaise is too thick, thin it, with the machine running, by pulsing in a little cool water. If you are concerned about raw eggs, use a pasteurized egg product or an egg substitute such as Egg Beaters.

1 tablespoon Sherry vinegar
2 teaspoons minced shallot
1/4 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons finely chopped fresh tarragon
1 large egg, hard-boiled

Steps:

  • Steam asparagus on a steamer rack set over boiling water, covered, until just tender, 3 to 5 minutes (depending on thickness), then transfer to a bowl of ice water to stop cooking. Drain well and pat dry with paper towels.
  • Whisk together vinegar, shallot, mustard, salt, and pepper in a small bowl and add oil in a slow stream, whisking until emulsified. Whisk in tarragon.
  • Halve egg and force each half through a coarse sieve into a bowl. Toss asparagus with 1 tablespoon vinaigrette and divide among 4 plates. Spoon remaining dressing over asparagus and top with egg.

We found that the best way to grill asparagus is to lay it right on the grill grates at an angle--no foil packet or grilling basket necessary. We jazzed ours up with tangy, creamy feta and fresh mint. To get a good char, be sure to use medium-sized asparagus -- no pencil-thin stalks here!

1 bunch medium asparagus (about 3/4 pound)
Juice of 1 lemon (about 1/4 cup)
2 tablespoons olive oil
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
2 tablespoons crumbled feta cheese (about 1 ounce)
1 tablespoon chopped fresh mint leaves

Steps:

  • Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
  • Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
  • Put the asparagus on the grill at an angle so the stalks don't fall through the grates. 2 pounds large asparagus, trimmed
1 teaspoon Neelys BBQ seasoning, recipe follows
1 tablespoon olive oil
Salt and pepper
Barbecue butter
1 tablespoon Neelys BBQ seasoning, recipe follows
1 stick butter, slightly softened
4 ounces paprika
2 ounces white sugar
1 teaspoon onion powder

Steps:

  • Break off ends of asparagus.
  • For the butter:
  • Mix rub into butter. Spread the butter mixture lengthwise across a piece of plastic wrap. Roll the butter up tightly into a log and twist the ends. Refrigerate.
  • Preheat grill. If using a stovetop grill, use medium-high heat. Gently toss asparagus with seasoning, oil and salt and pepper, to taste. Grill asparagus until tender, turning once, about 6 minutes. Serve with barbecue butter.
  • Mix ingredients together and store in an airtight container for up to 6 months.

6 tablespoons (3/4 stick) butter, room temperature
1 teaspoon fresh lemon juice
2 tablespoons olive oil

3 garlic cloves, minced
2 pounds asparagus, trimmed

Steps:

  • Stir Gorgonzola cheese, butter and lemon juice in medium bowl to blend. Season to taste with salt and pepper. Cover and refrigerate. (Gorgonzola butter can be prepared 2 days ahead. Keep refrigerated.)
  • Prepare barbecue (high heat). Whisk oil, basil and garlic to blend in small bowl. Spread out asparagus in single layer in baking dish. Pour oil mixture over asparagus and turn to coat. Sprinkle with salt and pepper. Transfer asparagus to barbecue. Grill until charred on all sides, turning occasionally, about 4 minutes. Transfer to plates. Top asparagus with some Gorgonzola butter and serve.
