I put together this recipe after looking at several others and combining them. We had never had asparagus on the grill before and it was fantastic.

1 lb asparagus
1 tablespoon red wine vinegar
1 1/2 tablespoons balsamic vinegar
1 shallot, minced
2 garlic cloves, minced
3 -4 tablespoons extra virgin olive oil
salt and pepper (I used about a teaspoon of each)
1/2 lemon

Steps:

  • add vinegars, shallot, and garlic to a non-reactive bowl.
  • while whisking, slowly drizzle in olive oil to make an emulsion.
  • add salt and pepper.
  • let sit for 1/2 hour to allow flavors to meld.
  • add asparagus and lightly toss to coat evenly.
  • let sit for a few minutes.
  • place on medium-high preheated grill and let cook for 8-10 minutes.
  • right before you remove from grill squeeze lemon over the asparagus and then serve.

I came up with these years ago and even people who don't like them love mine..They are addictive!!!! You can also cook these in the oven on 350 for 20min-turning a couple of times.

1 -2 lb asparagus
1 tablespoon minced garlic
1/2 teaspoon garlic salt
2 tablespoons olive oil

Steps:

  • Cut off about 2 inches off on the big ends, place them in a casserole dish drizzle them with the oil then add the rest and move the mixture all over the asparagus- Make sure they are thoroughly coated.
  • Place on already pre-heated grill- preferably medium heat. They only cook for 5-6 min on each side (Only need to role them once while grillng).
  • And serve immediately, so cook them last or while you cook your steaks. ( to me they are great even if they get cold).

1/2 cup extra-virgin olive oil
1/2 cup balsamic vinegar
3 medium shallots, thinly sliced (about 1 cup)
2 cloves garlic, lightly smashed
2 sprigs fresh oregano
2 bunches medium asparagus (about 2 pounds), woody ends trimmed and discarded
Kosher salt and freshly ground black pepper
1/4 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Stir together the olive oil, balsamic vinegar, shallots, garlic and oregano in a medium bowl. Pour the marinade into a 1-gallon resealable plastic storage bag, add the asparagus and seal the bag closed. Place the bag in a bowl or on a plate (just in case it leaks) and marinate in the refrigerator for 8 to 24 hours, flipping a couple of times.
  • Preheat an outdoor grill to medium heat. While the grill heats up, remove the asparagus from the marinade, allowing any excess marinade to drip off. Season liberally on all sides with salt and pepper.
  • Place the asparagus on the hot grill and cook, flipping as needed, until crisp-tender and charred in spots, about 8 minutes. Transfer to a platter, garnish with the chopped parsley and serve immediately.

1 lb fresh asparagus
3 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 tablespoon low sodium soy sauce
1 garlic clove, minced
1/2 teaspoon kosher salt
fresh ground black pepper, to taste

Steps:

  • Snap off tough ends of asparagus and wash well through 2-3 changes of cold water.
  • Combine all ingredients in a large zip-top plastic bag, seal and marinate for 30-60 minutes.
  • Preheat grill on high heat.
  • Remove asparagus from bag (discard marinade) and place on preheated oiled grill rack.
  • Grill 5 minutes on each side or until asparagus is done.

  • Preheat oven to 400°F.
  • Line a large jelly-roll pan with parchment paper. Set aside.
  • In a small pot, heat the oil, garlic, onion powder, and parsley on medium-low heat. Cook for 3 minutes, until the garlic mixture is fragrant but not browned.

I made this tonight for dinner and it was wonderful. Original recipe is from my Webber Cookbook and I've changed it up for us.

Number Of Ingredients 6

1/2 cup balsamic vinegar
1 garlic clove, smashed
1/2 lb medium asparagus (about 20 spears)
1 1/2 tablespoons hot pepper oil (I use my Hot Pepper Oil)
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper

Steps:

  • In a small saucepan bring the vinegar to a simmer over medium heat.
  • Reduce the heat until just a few bubbles break through the surface.
  • Add the smashed garlic.
  • Cook at a slow simmer until about 1/4 cup of vinegar remains (about 20 minutes).
  • If you cook too quickly or it reduces too much, it will turn bitter rather than sweet.
  • Remove the sauce pan from the heat and let cool to room temperature (The syrup will continue to thicken as it cools).
  • Heat grill to medium heat.
  • Remove and discard all tough, woody ends from the asparagus spears.
  • Wash and pat dry.
  • Lightly coat the asparagus with the Hot Pepper Oil.
  • Season evenly with the salt and pepper.
  • Brush the cooking grate clean.
  • Lay the asparagus perpendicular to the bars on the grate.
  • Grill over direct medium heat with the lid closed as much as possible, until lightly charred and crisp-tender, 4-6 minutes, rolling the spears a couple of times and swapping their positions as needed for even cooking.
  • Arrange the asparagus on a platter or individual plates.
  • Remove the garlic from the syrup.
  • If the syrup is stiff, warm it briefly over medium heat.
  • Drizzle some of the syrup over the spears (you may not need all of it.).
  • Season with more salt, if desired.
  • Serve warm or at room temperature.

1 1/2 teaspoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, freshly ground
1/2 teaspoon garlic, minced

Steps:

  • Snap off tough ends of asparagus.
  • Spray a jelly-roll pan with Pam. Place the asparagus on the pan then drizzle with olive oil and vinegar; sprinkle with salt, and pepper, tossing to coat.
  • Bake at 425° for 10 minutes. After 8 minutes, sprinkle the garlic over the aspargus and give the tray a shake. Bake for another 2 minutes.

2 teaspoons extra virgin olive oil
1/4 teaspoon salt (I prefer kosher)
fresh ground pepper
1/4 cup balsamic vinegar

Steps:

  • Toss the asparagus with shallot, oil, 1/8 tsp salt and pepper. Roast or grill turning twice, until tender and browned, 8 to 10 minutes.
  • Bring vinegar and the remaining 1/8 teaspoons salt to a simmer in a small skillet over medium-high heat until slightly syrupy and toss the asparagus with the reduced vinegar.

After preparing AngelaTN's roasted asparagus for dinner recently, I just couldn't get enough of them! I wanted to make them again, but the event I was going to was a non-heating kind of thing, so I decided I'd put together an adapted version that would work well chilled or room temperature, as an appetizer. Here's what I came up with, and it's delicious! I made them as part of an anti pasto tray. Prep time does not include chilling.

2 lbs asparagus, medium to thick stems (not too thin)
olive oil (or pan spray, but olive oil in mister preferred)
1/2 teaspoon sea salt, to taste
1/4 teaspoon fresh ground pepper, to taste (I like tricolor peppercorns)
2 teaspoons butter (not margarine)
2 teaspoons extra virgin olive oil
4 -6 cloves garlic, peeled and sliced lengthwise into 3 pieces (amount of garlic to taste)
1 tablespoon soy sauce or 1 tablespoon Braggs liquid aminos
2 teaspoons balsamic vinegar

Steps:

  • Preheat your oven to 400 degrees F.
  • Trim the asparagus: rinse the asparagus, cut about an inch off the ends, then use a vegetable peeler to take the outer layer off another inch of the remaining fibrous ends (easiest is to lay the spear on a flat surface then use peeler to gently take off the layer - careful, or you'll remove too much).
  • Place the trimmed asparagus in a single layer on a non-stick baking sheet, then spray with an olive oil mister or drizzle evenly with olive oil (or spray with pan spray).
  • Season with the sea salt and the freshly ground pepper.
  • Place in oven and roast for 8 minutes (don't overcook).
  • Meanwhile, in a small saucepan over very low heat melt the butter and extra virgin olive oil.
  • Add the sliced garlic and simmer (again, over very low heat) for 5 minutes - careful not to burn.
  • Remove from heat and add the soy sauce and balsamic.
  • When asparagus is done, remove from the oven and place in a container which has an airtight cover.
  • Place the garlic from the balsamic mixture on the asparagus; whisk the balsamic mixture well (I use a pigtail whisk) and pour it over the roasted asparagus.
  • Cover tightly, shake, and place in refrigerator to chill (please note that the asparagus is still hot in the container, and that covering them and adding the sauce at this point will continue to steam them a bit for a few minutes).
  • Chill for at least 4 hours before serving, the place attractively on serving platter.
  • Goes well as part of an anti pasto course!
  • Note: although I used these as an appetizer/snack, they could also work quite well as a side dish.
