1 Tbsp butter
8 slices whole-grain bread
1 Tbsp Dijon mustard
6 oz shredded sharp Cheddar cheese
1 Granny Smith apple
peeled
cored
and sliced
8 strips cooked bacon

Steps:

  • Heat the butter in a large skillet or nonstick sauté pan over low heat. Slather 4 slices of bread with the mustard, then divide the cheese, apples, and bacon among them. Top with the other bread slices and add to the hot pan. The key to a great grilled cheese (i.e., crispy crust, fully melted cheese) is patience, so cook these sandwiches slowly until each side is deep brown and crunchy, about 10 to 12 minutes total.

This is a big, messy sandwich that sounds quirky but is delicious! Great for warming up in the fall and very kid-friendly. The proportions of this recipe are approximate, and feel free to change them to suit your needs. The bacon provides saltiness, the jelly provides sweetness, the apple provides tartness, and the cayenne pepper the spiciness. However, including all ingredients provides a more complex range of awesomeness.

6 slices maple-cured bacon
5 tablespoons peanut butter
4 slices whole wheat bread
5 tablespoons apricot jelly
cayenne pepper to taste
1 Granny Smith apple, cored and thinly sliced
3 tablespoons softened butter

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Spread the peanut butter onto two slices of bread; set aside. Spread the apricot jelly onto the remaining two slices of bread, and sprinkle with cayenne pepper to taste. Arrange half of the cooked bacon and half of the sliced apple onto each apricot jam-covered bread sliced. Top with the peanut butter smeared pieces of bread.
  • Heat a large skillet over medium heat. Spread the butter over the outside of the sandwiches and place into the preheated skillet. Cook until golden brown and crispy, then turn the sandwiches over, and continue cooking until golden brown on the other side, about 4 minutes per side.

1 brioche sandwich roll, split horizontally
2 slice bacon
1/2 apples, red delicious, washed, cored
1/3 c cheddar cheese, shredded
2 oz cream cheese, room temperature
1/4 c packed minced fresh parsley
1 1/2 tsp sugar
1/2 tsp lemon juice
1 Tbsp butter, unsalted, divided

Steps:

  • 1. Make parsley cheese spread. In a bowl, put parsley, sugar and lemon juice. Stir to combine. Cover the bowl with plastic wrap and refrigerate for 2 hours (until parsley is wilted and develops the flavor. you can refrigerate up to overnight).
  • 2. After 2 hours, put cream cheese into a bowl. With hands, squeeze the parsley to remove excess liquid then put into the bowl. Mix to combine.
  • 3. Slice apple into 1/4 inch thick lengthwise.
  • 4. In a non-stick skillet, cook bacon over medium heat until crisp (but not too crisp) flipping once. Drain on paper towels.
  • 5. Discard the excess bacon fat in the skillet, return the skillet on the stove and add apple slices to the skillet. Cook apples over medium heat until lightly brown flipping once.
  • 6. On the bottom of brioche, put half of shredded cheddar cheese, bacon slices, apple slices, parsley cheese spread and the rest of shredded cheddar cheese. Put the top of the brioche to close sandwich.
  • 7. In a cast iron skillet, melt 1/2 tablespoon of butter over medium heat. Place the sandwich and cook swirling occasionally until golden brown. Take the sandwich out of the skillet and place on a plate or cutting board.
  • 8. Melt 1/2 tablespoon of butter in the same skillet. Return the sandwich to the skillet, cooked side up, and cook swirling occasionally until the second side is golden brown and cheese melt
