This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

1 cup hot water
1 cup ice cube (optional)
1 (5 ounce) package Jello gelatin
1 (8 ounce) container Cool Whip
1 (10 ounce) can crushed pineapple, drained
1 (8 ounce) cream cheese, softened

Steps:

  • Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
  • Mix cream cheese and pineapple in large bowl.
  • Add jello.
  • Beat until blended.
  • Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
  • Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.
  • Enjoy!

1/4 lb marshmallows (16 large)
1 c milk
1 6-oz pkg lime jello
6 oz cream cheese
1 20-oz can(s) crushed pineapple
1 c cool whip lite
2/3 c mayonnaise

Steps:

  • 1. Melt the marshmallows in milk in medium saucepan over medium heat. Stir frequently.
  • 2. Pour the milk and marshmallow mixture over lime jello in a large bowl. Stir until dissolved. Stir in cream cheese with beater. Add undrained pineapple. Mix well.
  • 3. Cool in the refrigerator for several hours or overnight.
  • 4. Blend mayonnaise and cool whip into the jello mixture.

  • mix lime Jello and hot water together until dissolved; set aside.
  • Mix with a mixer cream cheese and pears.
  • Add Jello.
  • Beat until blended.

I always make it for holiday dinners and one year I decided to try new things as I was a little tired and bored with the regulars. I didn't make this one year, and my grown son told me that I should not mess with tradition - this salad WAS the holidays. My kids all call this 'the green stuff'. ZWT West (Hawaiian pineapple).

You could try other Jell-o flavors, but we are traditionalists and stick with lime. Some family members enjoy the addition of chopped pecans but I prefer without.

1 (3 ounce) box lime Jell-O gelatin
1 cup boiling water
2/3 cup cold water (or reserve pineapple juice and use in place of water)
1 cup whipping cream
4 ounces cream cheese, room temperature
1 (15 1/4 ounce) can crushed pineapple, drained (approximately 1 cup pineapple)
1 cup red seedless grapes, halved (or more to taste)
3/4 cup mini marshmallows (optional)

Steps:

  • In medium bowl, combine lime gelatin and boiling water. Stir in cold water or pineapple juice. Chill slightly in refrigerator but don't allow to completely set.
  • Remove from refrigerator. Whip jello until fluffy like egg whites.
  • In separate bowl, whip cream to soft peak stage; add cream cheese and whip. Add to jello, mix well.
  • Stir in crushed pineapple, grapes, and marshmallows. Chill until set.

A very yummy side dish that the whole family will enjoy. This has become a staple at our family's Thanksgiving, Christmas and Easter dinners. It's a good thing that it makes a lot! My daughter always asks, "Are we having Green Stuff?" I received this recipe from my mother-in-law when I married into the family. She is a wonderful cook! My recipe calls for ingredients that are a little more healthy, as I follow Weight Watchers so feel free to substitute the "real" things. ENJOY!

29 ounces pears in light syrup, bartlett pears
8 ounces fat free cream cheese, softened
12 ounces Cool Whip Lite
2 (1/3 ounce) boxes sugar-free lime Jell-O gelatin
2 tablespoons nonfat milk
2 -3 maraschino cherries, cut in half for decoration

Steps:

  • Drain the pears.
  • Put the pear juice in a measuring cup and add enough water to make 2 cups of liquid.
  • Make the Jello using the 2 cups of the liquid.
  • When the Jello is dissolved, place in the refrigerator until almost set.
  • Mash the pears.
  • Mash the softened cream cheese adding the milk as you mash and blend this mixture until smooth.
  • Add the pears to the cream cheese mixture.
  • Put the cream cheese mixture and the Jello in the mixing bowl and blend together.
  • Fold in the Cool Whip and mix all together well.
  • Pour your Seafoam Salad into a pretty glass bowl.
  • Put the halved cherries on the top for decoration.
  • Chill well and serve.

1/2 cup boiling water
2 (3 ounce) packages cream cheese (softened)
1 (12 ounce) can Fresca soda (or any lemon-lime carbonated soda)
1 cup chopped nuts

Steps:

  • Pour 1/2 cup boiling water into a mixing bowl.
  • Add jello and stir until dissolved.
  • Add cream cheese, and blend with an electric mixer till light and fluffy.

1 lb lean ground beef, sub. ground turkey
1 small onion, minced
1 cup ketchup
1 tablespoon white vinegar
1 tablespoon brown sugar
2 tablespoons prepared yellow mustard
salt, to taste
pepper, to taste

Steps:

  • In a skillet, over medium heat, sautee onion until slightly translucent. Use cooking spray if desired.
  • Add ground beef or turkey, add salt and pepper.
  • Cook until no longer pink.
  • In the mean time: In your 2 cup measuring vessel, combine ketchup, vinegar, mustard, brown sugar. Stir into meat once it is fully cooked.
  • Simmer 15-20 minutes. Serve hot on soft rolls or buns.
  • Note: you may use 3/4 cup ketchup and 1/4 cup of your favorite BBQ sauce for added zing.

1 (6 ounce) can crushed pineapple, drained
1 (8 ounce) container small curd cottage cheese
1 (12 ounce) container defrosted fat-free cool whip or 1 (12 ounce) container any type whipped topping
1/2 cup chopped pecans

Steps:

  • Drain the pineapple really well. If you don't there is too much juice in the salad and it doesn't chill up well.
  • Put all ingredients together (except pudding).
  • Stir until everything is mixed all together, then add about 1/2 of the pudding mix and stir well.
  • Add other half of pudding mix and stir until all pudding crystals are mixed in with the other ingredients.

1 20 oz can crushed pineapple with juice
1 12 oz cool whip
1/2 bag miniature marshmallows
1 cup chopped pecans

3/4 cup water, boiling
3/4 cup sugar
1 lemon, juice of
1 can evaporated milk, chilled (not condensed)
1 can crushed pineapple, drained
2 graham cracker pie crust

Steps:

  • Mix jello, boiling water, sugar and the juice from 1 lemon together.
  • Stir until sugar is disolved.
  • Let partially set (1 hour) Whip evaporated milk in large mixing bowl.
  • When it begins to form small peaks, add jello and whip again until well mixed.
  • (You can add a couple drops of green food colouring if you like) Fold in drained pineapple.
  • Pour into each of two graham cracker pie shells.
  • Let sit in refrigerator for at least 2 hours prior to serving.

Now it's one of our favorites. we use this as a side dish or dip with tortillas or corn chips. also makes a great meatless maindish on Fridays-I prep the cheese the night before and in the morning mix it all together-just pop it in the oven for an hour when we both get home.

1 16oz. pkg sour cream
2 large can(s) chopped green chilis
bread crumbs, seasoned
butter, cold
montery jack cheese and pepper jack cheese, shredded, no specific amount but a 50/50 ratio

Steps:

  • 1. Mix hominy, green chilis,sour cream and aproximatly 3/4 of cheese mixture(reserve other 1/4 amount for top) stir until well blended together and stiff.
  • 2. spread in butter casserol dish, sprinkle with remaining cheese, and breadcrumbs. Dot top with butter.
  • 3. Bake in 350F oven for 45 minutes
  • 4. then broil for 5-10 minutes until top is browned slightly and nice and bubbly on top.

  • Boil 2 cups water Add 1 cup sugar and continue boiling for ten minutes until sugar dissolves. Put packet of lime jell-o into cake pan and add boiled sugar water. Stir till jell-o granules until dissolved. Add 4 whipped eggs to mixture stir until clear Add pineapple and blend. Refrigerate for 4 hours until set. Top with whipped cream and sprinkle with graham crumbs
