We love polenta, this is a delicious with green chiles and cheese. This can be made 1 day ahead and refrigerated.Makes 4 main course servings or 8 side dish servings. I got this recipe off of the internet.

2 cups milk
1 cup water
3/4 cup yellow cornmeal (quick cooking) or 3/4 cup polenta (quick cooking)
3 garlic cloves, minced
1 teaspoon salt
pepper
1/2 cup grated parmesan cheese
1 (7 ounce) can whole green chilies (drained)
1 cup canned corn, drained or 1 cup frozen corn
2/3 cup cilantro
2 cups grated monterey jack cheese
1/2 cup whipping cream

Steps:

  • Preheat oven to 400 degrees; Butter an 8x8x2-inch baking dish.
  • Mix milk, Water, cornmeal, garlic, and salt in a heavy saucepan, bring to simmer over medium heat, stirring constantly; cook until polenta is thickened, stirring often, 12 to 15 minutes, add salt and pepper to taste; stir in Parmesan cheese.
  • Pour half of polenta into prepared dish; cover with half of the chilies and half of corn, sprinkle with half of the cilantro and 1 cup Monterey Jack cheese; drizzle with 1/4 cup of cream.
  • REPEAT; Spoon remaining polenta over and cover with remaining chilies, corn, cilantro and cheese, pour the other 1/4 cup cream over top.
  • Bake until polenta puffs and cheese begins to brown, about 25 minutes; cut into squares and serve.

3 medium red bell peppers
3/4 cup polenta (or yellow cornmeal)
3 garlic cloves, minced
2 cups water
1 teaspoon salt
1/2 teaspoon garlic salt
1/4 teaspoon fresh ground pepper
1/2 cup whipping cream
1 (7 ounce) can whole green anaheim chilies, drained and chopped (or buy chopped chilies)
2/3 cup chopped cilantro
2 cups shredded monterey jack cheese
1/2 cup freshly grated parmesan cheese
fresh cilantro

Steps:

  • Cut the bell peppers in half and remove and discard the seeds and membranes. Place the bell pepper cups in a lightly greased 13" x 9" baking dish.
  • Whisk together the polenta and the next 5 ingredients in a large saucepan over medium heat and bring to a boil. Cook, whisking constantly, for 5-7 minutes or until the polenta thickens. Stir in the cream and the next 4 ingredients, blending well.
  • Spoon the mixture into pepper cups and bake at 400F for 25-30 minutes or until the peppers are tender. Garnish with fresh cilantro sprigs, if desired.

3/4 pound green beans, trimmed
1 cup fresh shelled peas (12 to 14 ounces in pods)
4 cups whole milk
2 1/2 cups vegetable broth
1 3/4 cups polenta (coarse cornmeal)*
2 cups thinly sliced leeks (white and pale green parts only; about 2 medium)
1 1/2 cups dry white vermouth
1/4 cup (1/2 stick) chilled butter, cut into 1/2-inch cubes
3 tablespoons heavy whipping cream
3 tablespoons olive oil
1 pound assorted wild mushrooms (such as crimini, small portobello, and shiitake), stemmed, caps cut into wedges
3 large shallots, sliced (about 3/4 cup)
2 tablespoons chopped fresh Italian parsley, divided
2 teaspoons chopped fresh thyme

Steps:

  • Blanch green beans 1 minute in boiling water. Add peas and cook until both beans and peas are crisp-tender, about 3 minutes. Transfer to bowl of ice water to cool. Drain. Cut beans on diagonal into 1-inch pieces. Set beans and peas aside.
  • Bring milk and broth to boil in large saucepan over high heat. Reduce heat to medium. Gradually whisk in polenta. Reduce heat to low. Cook until polenta is very thick, whisking almost constantly, about 10 minutes. Season with salt and pepper. Remove from heat; cover to keep warm.
  • Meanwhile, combine leeks and vermouth in medium saucepan. Boil over medium-high heat until reduced to 1/3 cup, 8 minutes. Remove from heat. Gradually whisk in butter, allowing each addition to melt before adding next. Add cream and whisk over very low heat to blend. Season with salt and pepper. Set aside.
  • Heat oil in large skillet over medium-high heat. Add mushrooms and sauté until almost tender, 5 minutes. Stir in shallots, 1 tablespoon parsley, and thyme. Sauté until mushrooms are very tender, about 5 minutes. Add beans and peas, tossing to coat.
  • Rewarm polenta and spoon into large shallow bowl. Top with green bean mixture and remaining 1 tablespoon parsley. Rewarm leeks over low heat, whisking constantly; spoon evenly over polenta.
  • Sold at some supermarkets and at natural foods stores and Italian markets. If unavailable, substitute an equal amount of regular yellow cornmeal and cook about half as long.

CREAMY BAKED POLENTA WITH HERBS AND GREEN ONIONS

This is ultimate comfort food for me! I make this with roasted chicken and veggies and use some of the juices from the chicken to add more flavor. *For some reason, the baking time has been different for me. Sometimes it takes less baking time. It may depend on how coarse the cornmeal is. Just keep watching it and make sure it stays creamy and doesn't get hard. Once you stir in the herb mixture, you can make it more creamy by adding more broth or cream or you can thicken it up by putting it back in the oven for a few minutes. It's very versatile. You can use any herbs you like to go with your meal. This one is definately a keeper in our house. From the April 2001 Bon Appetit, modified by me.

1 1/2 cups yellow cornmeal
2 teaspoons salt (less if using chicken broth)

Steps:

  • Preheat oven to 350. Pour 6 cups water into sprayed 13x9 glass baking dish. Whisk polenta, salt and pepper into water. Bake uncovered about 30 minutes. Could be a little more or less. Make sure it doesn't get hard.
  • Meanwhile, melt butter in small skillet over medium heat. Add green onions and garlic, saute 2 minutes. Stir in parsley, thyme and cream. Season with salt and pepper. Remove from heat.
  • Stir polenta to blend. Stir green onion mixture, cheese and lemon peel into polenta. If liquid isn't completely absorbed, bake a little longer.

375g box polenta
398g can sweetcorn , drained
1 red chilli , deseeded and finely chopped
50g vegetarian Parmesan-style cheese , grated
2 avocados , peeled and chopped into chunks
1 cucumber , chopped into chunks
4 spring onions , sliced
small bunch coriander , leaves roughly chopped
juice 2 limes
4 tbsp olive oil

Steps:

  • Bring 1.5 litres of water to the boil in a large saucepan. While stirring the water constantly with a wooden spoon, tip in the polenta in a steady stream. Lower the heat so the polenta isn't spluttering too much, then cook, stirring occasionally, for 10 mins. Meanwhile, line a 40 x 30cm tray with baking parchment. Stir the corn, chilli and grated cheese into the polenta with 2 tsp salt, then spoon out onto the tray. Spread to a rough rectangle, making sure the polenta is packed tightly and there are no gaps. Cover with another sheet of baking parchment and a flat baking tray, then top with some cans or jars to press and flatten the polenta while you chill it in the fridge for at least 2 hrs, or up to a day.
  • Before barbecuing, mix together the avocado, cucumber, spring onions, coriander, lime and 2 tbsp oil with seasoning.
  • Heat the barbecue (or a griddle pan), trim the edges off the set polenta to neaten, then slice into 12 wedges. Brush both sides of each wedge with a little of the remaining oil and barbecue or griddle for 5 mins on each side until charred and hot through. Serve a couple of wedges per person, topped with a generous spoon of the chunky green salsa.

This is a different and tasty side dish with an Italian flare, thanks to the cooked polenta. Coarsely-ground cornmeal is sometimes labelled "polenta", a little shopping hint if you have trouble finding it at your supermarket. An Italian market will have it if you strike out at your regular grocery story.

4 cups chicken stock (using water makes this a vegetarian dish)
1 cup coarsely-ground cornmeal (, finely ground won't work as well)
salt
freshly ground black pepper
1/2 cup grated parmesan cheese
1/4 lb fresh green beans, trimmed
1 tablespoon olive oil
2 cloves garlic, thinly sliced
1 sweet red pepper, thinly sliced

Steps:

  • Over medium heat in a large pot, bring stock to a boil (use water to make this a vegetarian dish).
  • Very slowly, whisk in cornmeal.
  • Lower heat and simmer for 15 minutes, whisking very frequently; polenta will be thick.
  • Season well with salt and pepper and, with a wooden spoon, beat in the cheese.
  • Oil an 8-inch baking dish and pour polenta in; smooth top and set aside to cool.
  • Preheat oven to 400F degrees.
  • Cut polenta into squares and place on an oiled baking sheet.
  • Bake for 15 minutes or until polenta squares are slightly browned.
  • Meanwhile, bring a small pot of water to boil and add beans.
  • Cook for 2 minute; drain; rinse under cold water and set aside.
  • In a skillet over medium-high heat, heat olive oil; when hot, add garlic, red pepper and the beans.
  • Saute until peppers have softened and garlic is golden, about 5 minutes.
  • Season veggies with salt and pepper.
  • Place polenta squares on a serving platter and top with veggies; serve immediately.

Add green onions and saute 2 min. Stir in parsley and thyme, then cream. Season with salt and pepper. Remove from heat. Stir polenta to blend. Stir green onion mixture, cheese and lemon peel into polenta. Continue to bake uncovered until polenta is creamy and liquid is completely absorbed, about 10 min longer. Let stand 5 min.; serve.

ROASTED PORK WITH CARROT GLAZE, POLENTA AND GREEN BEANS



Roasted Pork With Carrot Glaze, Polenta And Green Beans image

2 shallots
2 tablespoons whole-grain mustard
2 8-ounce pork tenderloins
Salt to taste
2 teaspoons coarse black pepper, plus more to taste
1 cup diced green beans
2 cups instant polenta
1 tablespoon minced fresh sage
2 cups carrot consomme (see recipe)

Steps:

  • Preheat the oven to 400 degrees. Wrap the shallots in aluminum foil and roast for 30 minutes. Remove from oven. Press the insides of the shallots out of the skin, and use a fork to mash with the mustard. Rub pork loins with the mustard-shallot mixture and season on all sides with salt and pepper. Place in a roasting pan and roast, turning every 5 minutes, for 20 minutes.
  • Blanch the beans, drain and cool under cold water. Prepare the instant polenta according to the directions on the box. Two minutes before it is through cooking, remove the polenta from the heat. Stir in 2 teaspoons of pepper and the sage, cover and set aside.
  • Remove the pork from the oven and set aside. Place the roasting pan over low heat and add half of the carrot broth, scraping well with a wooden spoon. Add the remaining broth, adjust the seasoning with salt and pepper to taste and simmer until its volume is reduced by half.
  • Meanwhile, place a spoonful of the polenta in the center of 4 plates. Slice the pork into thin disks and fan around the polenta. Add the beans to the carrot broth and ladle over the pork slices and serve.

1 can (14.5-ounce) can black beans (rinsed and drained)
2 pieces Roma tomatoes (cored, seeded and chopped )
1/2 cup chopped red bell pepper
1/4 cup diced red onion
1 piece ripe avocado (pitted, peeled and chopped)
1 tablespoon fresh lime juice
1/2 cup loosely packed fresh cilantro
1 clove garlic (minced)
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon salt
4 cup water
1 teaspoon salt
1 cup polenta (corn grits or stone-ground whole cornmeal)
1 cup shredded sharp cheddar cheese
1 tablespoon butter
1/2 cup medium Hatch flame-roasted green chile (TRY: 505 Southwestern)
1 tablespoon extra-virgin olive oil
1 bag 5 ozpackage coarsely chopped kale
1/4 teaspoon ground black pepper
1/2 cup pepitas (toasted)

Steps:

  • Prepare relish: In a medium bowl, combine beans, tomatoes, bell pepper and red onion. Toss avocado with lime juice; add bean mixture along with cilantro, garlic, oil, vinegar and salt. Gently toss to combine, and set aside at room temperature.
  • In a large saucepan, bring water and 1 teaspoon salt to a boil. Whisk polenta into the boiling water, and decrease heat to low. Simmer on low for about 15 minutes, whisking often until mixture thickens and corn granules are tender. Remove pan from heat, and stir in cheese and butter until melted. Stir in green chile, cover, and set aside.
  • In a large skillet over medium-high heat, heat 1 tablespoon oil. Add kale, and sprinkle with pepper; sauté 3-4 minutes until kale starts to soften.
  • To serve, divide polenta among bowls and top each with a portion of the sautéed kale and Black Bean Relish. Sprinkle with pepitas, and serve warm.

MAKE-AHEAD POLENTA WITH GREEN ONIONS AND RICOTTA



Make-Ahead Polenta with Green Onions and Ricotta image

Even the picky eaters will love this easy polenta recipe that can be made ahead of time-perfect for special occasions!

1/4 cup olive oil
3 green onions, finely chopped (3 tablespoons)
4 cups whole milk
4 cups water
2 teaspoons kosher (coarse) salt
2 cups yellow cornmeal
Freshly cracked black pepper
1 cup shredded Parmesan cheese (4 oz)
1/4 cup finely chopped fresh chives
2 cups whole-milk ricotta cheese
2 eggs

Steps:

  • Spray 13x9-inch (3-quart) broiler-proof baking dish with cooking spray. (Do not use a glass baking dish if you want to broil the ricotta topping; glass baking dishes can break under the broiler.)
  • In 4-quart Dutch oven, heat oil over medium heat. Add green onions; cook 5 minutes, stirring occasionally. Add milk, water and 1 1/2 teaspoons of the salt; heat to boiling, stirring occasionally.
  • Still over medium heat, slowly add cornmeal, stirring constantly with whisk until mixture thickens, 5 to 10 minutes. (If mixture starts to bubble and spatter, reduce heat to medium-low.) Remove from heat. Stir in pepper, Parmesan cheese and half of the chives. If desired, taste and adjust seasonings.
  • Pour into baking dish; spread evenly. Cool slightly, about 10 minutes. Cover loosely with foil; refrigerate at least 8 hours or overnight.
  • For ricotta topping, in medium bowl, stir together ricotta cheese, remaining 1/2 teaspoon salt, remaining half of the chives and the eggs. Cover; refrigerate until ready to use. (This can also be made a day ahead or the day of.)
  • Heat oven to 400°F. Spread ricotta topping evenly over top of polenta.
  • Bake about 40 minutes or until thoroughly heated. (If using a broiler-proof dish and you'd like to brown the top, you can set it under the broiler for a few minutes.) Cool slightly before serving.

1/2 onion, diced
3 cloves garlic, minced
1 bunch kale, stems removed and cut into 1/2-inch strips
Salt and freshly cracked black pepper
5 cups water
2 1/2 cups heavy cream
1 1/2 cups polenta
6 tablespoons butter
4 tablespoons grated Parmesan

Steps:

  • In a large saute pan, heat the olive oil over medium heat. Add the onions and saute until translucent, about 3 minutes. Add the garlic and kale, season with salt and pepper, to taste, and cook until wilted. Set aside to cool.
  • Once the mixture has cooled, add to a food processor and process until very smooth. Add a little water, if necessary, to help make a smooth mixture.
  • In another large pot, bring 5 cups of water and 2 cups heavy cream to a boil over medium heat. Whisk in the polenta and stir constantly until the polenta is creamy, about 20 minutes. If the mixture becomes too thick, add a little more water or cream.
  • Stir in the butter and season with salt and pepper, to taste. Fold in the kale and the Parmesan and adjust the seasoning, if necessary. Turn out into a serving bowl and serve.

1 1/2-2 quarts chicken stock (preferably homemade)
5 cups water
2 -3 teaspoons salt
2 1/3 cups polenta (finely ground yellow cornmeal)
1/2 cup green onion, minced
5 tablespoons unsalted butter
1/4 cup Italian parsley, minced
fresh ground pepper

Steps:

  • Bring 1 quart stock, 5 cups water and 2 teaspoons salt to boil in heavy 8-quart saucepan.
  • Whisk in cornmeal in thin stream,adjusting heat to maintain slow bubbles.
  • Stir polenta constantly with wooden spoon until sheets fall from lifted spoon, adding more stock if necessary to maintain creamy consistancy, about 30 minutes.
  • (Can be prepared 2 hours ahead. Cover surface with plastic and let stand at room temperature. Rewarm over low heat, stirring constantly. Thin with stock if necessary.).
  • Stir in green onion, butter,parsley, and pepper.
  • Taste and adjust seasoning.
  • Serve immediately.
