SWEET POTATO-GREEN ONION PANCAKES WITH POACHED EGGS, HOLIDAY HAM AND PEPPER JAM
Steps:
- For the pancakes: Combine 4 cups cold water and 1 tablespoon kosher salt in a large bowl and stir until the salt dissolves. Stir in the sweet potato and let sit for 15 minutes. Drain, then dump onto a large piece of cheesecloth and wring out as much water as possible.
- Preheat the oven to 375 degrees F. Whisk together the eggs, onion and some pepper in a large bowl. Add the sweet potato and flour, and mix until combined. Fold in the green onions.
- Heat a few tablespoons each of butter and oil until shimmering in a large nonstick skillet over medium heat. Using a scant 1/4 cup per pancake, add the sweet potato mixture to the pan, leaving some space in between. Flatten slightly and cook until golden brown on both sides, about 3 minutes per side. Drain on paper towels, then transfer the pancakes to a baking sheet and place in the oven for 5 minutes to finish cooking.
- For the eggs: Fill a high-sided skillet halfway with water and bring to a boil over medium-high heat; add the vinegar. Line a plate with paper towels. Break each egg into a little ramekin or cup.
- One at a time, slip the eggs into the water, leaving space between them; adjust the heat to a bare simmer. Cook until the whites are set and the yolks still runny, about 4 minutes. Using a slotted spoon, transfer the eggs to paper towels to blot off the water.
- To serve: Put the pancakes on a serving platter. Top 4 of them with a smear of pepper jelly, a few slices of ham and a poached egg. Season with salt and pepper. Top with another pancake to make sandwiches (see Cook's Note).
KITTENCAL'S CRISPY POTATO AND GREEN ONION PANCAKES (LATKES)
This recipe goes back 30 years or more, my family *loves* these! you can make these ahead of time and then freeze, just cool and place on a large baking sheet to freeze, when frozen stack in a freezer container or pop them into a freezer bag, to reheat and re-crisp, defrost the pancakes then place in a 400 degree oven for about 8 minutes turn over then continue baking until crisp, I strongly suggest to double the recipe these will be half gone before they even make it to the table! I like to add in some cayenne pepper and a bit of garlic powder but that is optional --- yield is only estimated you should get between 20-23 pancakes for this recipe, to make things easier use your processor to grate the potatoes, plan ahead the grated potatoes need to soak for a minimum of 8-24 hours or even up to 2 days to remove some of the starch, the longer soaking time the crispier they will be --- serve with sour cream :)

- Grate the potatoes using a the coarse side if the grater or use a food processor.
- Place into a large bowl and cover with cold water.
- Allow the grated potatoes to soak for at least a minimum of 8 hours or even up to 2 days.
- Using your hands firmly squeeze handfuls of the grated potatoes to remove as much liquid as possible, then place in a large mixing bowl.
- Add in egg, flour, seasoned salt and pepper; mix well with a wooden spoon, then add in the green onions and parsley (if using).
- Heat oil in a heavy skillet over medium heat.
- Place a heaping tablespoonful of the potato mixture into the hot skillet and using a fork, flatten slightly (the edges will be uneven!).
- Sprinkle with more salt if desired.
- Place only a few pancakes in the pan, careful not to over crowd.
- Cook until golden and crisp on both sides adding in more oil if needed).
- Repeat with remaining potato mixture.
- DELICIOUS!
HOISIN CHICKEN WITH QUICK PICKLED VEG AND GREEN ONION PANCAKES
Steps:
- For the pancakes: Combine the flour and salt in a large bowl and make a well in the center. Pour in the boiling water and stir with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured work surface and allow it to cool slightly. Knead the dough until smooth, about 2 minutes, adding more flour if needed. Cover with a clean kitchen towel to rest for 30 minutes.
- For the chicken: Meanwhile, preheat your oven to 375 degrees F (190 degrees C). Place a large nonstick skillet over medium-high heat. Pat the chicken dry with a paper towel. Season with salt and scatter with the five spice. Add the sesame and canola oil to the pan and sear the chicken for 3 to 4 minutes per side, or until golden brown. Remove the chicken from the skillet and transfer to a sheet pan.
- Meanwhile, whisk together the hoisin, soy, vinegar, ginger, garlic and toasted sesame seeds in a small bowl. Drizzle over the chicken then transfer to the oven. Cook for 15 to 18 minutes, or until the glaze has thickened and the internal temperature of the chicken is 165 degrees F (75 degrees C).
- For the pickles: Whisk together the vinegar, honey, fish sauce, soy sauce, sesame oil and sesame seeds in a large bowl. Add the carrots, cucumbers and green onions. Toss to coat and set aside.
- For the pancakes, place a stainless steel or cast-iron skillet over medium-high heat. Lightly dust a work surface with flour. Cut the dough into 16 equal pieces, and cover with a clean kitchen towel to keep moist.
- Slightly flatten a piece of dough into an oval approximately 10 centimeters by 5 centimeters (about 4 by 2 inches) and scatter about a teaspoon of green onions to cover the surface. Roll the dough up starting at one long side to form a tight cylinder. Coil the cylinder into a tight spiral, resembling something like a tiny cinnamon bun and gently press the dough in your hand again to form a small disc. Return the now green onion-filled dough under the towel to rest, while you prepare the other pieces in the same way.
- Roll out a disc into a very thin circle on the floured work surface, approximately 12 to 14 centimeters (5 to 6 inches) round. Lightly oil both sides with sesame oil.
- Add to the heated pan and cook for about 30 seconds per side. Transfer to a plate and cover with a clean kitchen towel to keep warm while you continue to roll and cook the remaining pancakes.
- To serve, slice the chicken into 1 centimeter (about 1/2-inch) thick slices and transfer to a platter along with the pickles and green onion pancakes.

- For pancakes:
- Whisk eggs in medium bowl to blend. Whisk in 1 1/2 cups cold water, 1/2 teaspoon salt, gochu garu, and 1/4 teaspoon black pepper. Add flour; whisk until smooth. Mix in shrimp, all onions, and carrot. Let batter stand 1 hour at room temperature.
- For sauce:
- Whisk soy sauce, 2 tablespoons water, lemon juice, sesame oil, and gochu garu in medium bowl; divide among 4 to 6 small dipping bowls.
- Heat 1 tablespoon oil in each of two 10-inch-diameter nonstick skillets over medium heat. Add 1 cup pancake batter to each, spreading to edges of skillet. Cook until edges are firm and bottom is golden brown, about 4 minutes. Using spatula, turn pancakes over. Cook until second side is golden brown and shrimp is cooked through, about 4 more minutes (center will be soft). - Beat the egg and sesame oil together.
- Brush one side of one egg roll wrapper with the egg mixture.
- Sprinkle with 1/4 green onions and 1 tsp sesame seeds.
- Brush one side of another egg roll wrapper and press wet side on top of the other one and press down to seal.
- Repeat for other 3 pancakes.

- Dipping sauce: combine soy sauce, cilantro 1 chopped green onion, vinegar, sugar & sesame seeds. Leave at room temp or refrigerate.
- Pancakes: Beat 1 egg and 2 egg whites together with a fork.
- Whisk in the flour, 1 tbsp oil, and water.
- Batter should be smooth and medium thick.
- Let the batter rest for 20 minutes.
- Cooking the Pancakes:.
- Beat remaining eggs & egg whites.
- Heat 1 tsp oil in a skillet or a large non stick griddle, medium-low heat.
- Pour out approx 1/2 cup batter (6-8" circle).
- Lay 1 fourth of the shrimp on top of the pancake along with 1/4 of the green onions, carrots, zucchini, & chives.
- While the pancake is cooking spoon 1/4 of remaining batter over the pancake to fill the spaces between the veggies. After approx 3-5 minutes when the egg mixture has begun to set flip the pancake. Cook until browned pressing down quite hard with a wide spatula to ensure the batter cooks through. Repeat with remaining batter, shrimp & veggies.
- You may refrigerate the pancakes and serve cold or serve fresh at room temperature. To serve, cut the pancakes into wedges and serve with the dipping sauce on the side.

- 1. Cut the green section of the scallions into 5" to 6" sections. [Pancakes look more lovely when the stalks are somewhat uniform].
- 2. Prepare the batter by combining the flour, water, miso paste, sugar and salt and whisking until smooth.
- 3. Heat vegetable oil in a skillet. Place onion on hot oil in a square that looks like a "picket fence".
- 4. Pour batter evenly over onions. Fry for a few minutes until bottom of pancake is golden brown. Using a large spatula, carefully flip pancake and repeat process.
- 5. Serve hot [with Pajeon Sauce]!
- 6. For Pajeon Sauce, simply combine soy sauce, vinegar, honey, shallots, baby chives and sesame seeds. Enjoy!

- Make your favourite recipe or pancake mix without adding the liquids. I used two cups of dry mix from a box.
- Add the cheese and onions.
- Add the liquids, using slightly more liquid than is required (about 1/4 cup more milk/water), and stir just until dry ingredients are moistened. Be sure to scrape the bottom as you mix or there will more than likely be dry stuff not mixed in - if you wait to find out and stir after, you risk the pancakes being dense from overstirring, which causes gluten to form. This should make enough batter for 7-8 pancakes (about 3-4 cups total). The mixture will be thick and lumpy, but this is a good thing!
- Scoop about 1/3 cup at a time into a non-stick or oiled frying pan set on medium-low heat.
- Cook pancakes, flipping over every few minutes. A good way to tell when a pancake is ready to flip is by the appearance of bubbles towards the middle of the batter. With this mix, the batter is too thick to wait that long and the pancakes should be flipped at the appearance of a few bubbles. It never hurts to do an "edge" check by lifting up the side of a pancake with a spatula to check the colour. A golden-brown signals that the cake can be flipped!
- Garnish with your favourite savoury topping and enjoy!

DUCK CONFIT WITH GREEN ONION PANCAKES AND HOISIN MAPLE SYRUP
Steps:
- For the confit duck legs: Crush the peppercorns and cloves with the side of a knife and rub, along with the salt, onto the duck legs. Press the garlic slices onto each duck leg. Break the bay leaves in half and press a half onto each piece of duck. Place the duck into a nonreactive container, cover it with plastic wrap and refrigerate overnight.
- Preheat the oven to 180 degrees F.
- Rinse the duck under cold water and pat dry. Place the duck legs in a 6-quart stockpot and completely submerge them in duck fat. Bring to a simmer over medium-high heat on the stovetop and then place uncovered in the oven. Cook until the legs are completely tender and have settled on the bottom of the pot and the fat has become clear, 6 to 10 hours.
- Remove the duck legs from the oven and let them cool to room temperature in the pot.
- Preheat the oven to 425 degrees F.
- Once cooled, remove the legs from the fat and place them in a baking pan in the oven, with the skin-side down. Roast until the legs are warmed through and the skin is crispy, 15 to 20 minutes.
- For the green onion pancakes and hoisin maple syrup: Combine the flour salt and baking soda in a large mixing bowl. Then gently fold the buttermilk and eggs into the dry ingredients. Heat a frying pan to medium-high heat and scoop the batter onto the pan. Cook until golden brown on both sides. Top with top with chopped green onions.
- For the hoisin maple syrup: Warm 1 part hoisin with 3 parts maple syrup in a small saucepan.
- For the arugula salad: Mix the sesame oil and lemon juice in a large bowl and toss with the arugula.
- To assemble, stack 2 green onion pancakes on a plate, top with duck confit and eggs any style if desired. Drizzle your pancakes and duck confit with the hoisin maple syrup and top with a handful of dressed arugula. Garnish with sesame seeds.
WASABI CRAB ON GREEN ONION PANCAKES
Steps:
- In a medium bowl, combine the crabmeat, wasabi mayonnaise, lemon juice, soy sauce, and chives. Cover with plastic wrap and refrigerate for 1 hour.
- For the Green Onion Pancakes: Using a pastry brush, lightly coat 1 side of each tortilla with the beaten egg. Sprinkle each of 2 tortillas, egg sides facing up, with 1 tablespoon sliced green onions. Take remaining 2 tortillas, egg sides facing down, and place on top of green onion sprinkled tortillas. Press firmly together.
- With a 2-inch round cutter (or empty tomato paste can with top and bottom removed), carefully cut 8 to 10 rounds from each tortilla sandwich. Place green onion pancakes in a dry, nonstick skillet over medium heat. Toast pancakes until golden brown on each side. Remove to a plate and set aside.
- To serve, spoon a small amount of crab mixture on top of each pancake. Garnish with chopped chives or a very small amount of prepared wasabi.
GREEN ONION PANCAKES

- Sift the all-purpose flour into a big bowl and then add the salt into the flour. Combine well and set aside. Bring the water to a boil. Slowly add the water to the flour and knead the dough until it's no longer sticky and the surface becomes smooth, about 10 minutes. If the dough is to dry, add 1 tablespoon of water to the dough. Cover the dough with a damp cloth and let it rest for 30 minutes. Add the green onion into the dough. How to make the green onion pancakes: On a flat and floured surface divide the dough into 8 equal-sized pieces. Roll each piece of dough into a ball using your palm. Working with one dough ball at a time, roll the dough to a thin disc using a rolling pin. Dust the rolling pin with some all-purpose flour as you go. Brush the surface of the disc with the oil. Roll the dough into a cylinder. Coil it up like a snail. Dust the rolling pin with the flour and roll the dough until flat, measuring about 6 inches (15 cm) in diameter. Set the dough aside on a baking sheet. Repeat for the rest of the dough. Add about 1/4 inch (6 mm) of oil into a stir-fry pan or skillet over moderately high heat. Transfer a piece of pancake into the pan or skillet. Shallow fry each side of the pancake to a light golden brown, about 1 minute. Flip the pancake over and shallow fry the other side. Add more oil, repeat the same for the remaining pancakes and serve immediately.
