Good old fashioned restaurant-style hash browns. Perfect with hot pepper sauce and ketchup!

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

½ cup melted butter
30 ounce bag, shredded hash brown (thawed (can also use the refrigerated shredded potatoes, Simply Potatoes is one brand))
½ cup green onions (chopped)
2 cups shredded cheddar cheese
8 ounces sour cream
2 (10.5 oz) cans cream of chicken soup
1 teaspoon Lawry's seasoning salt
½ teaspoon onion powder
¾ teaspoon garlic powder
¼ teaspoon black pepper
1½ cups plain potato chips (crushed)

Steps:

  • Preheat the oven to 350.
  • In a large bowl mix together all the ingredients (EXCEPT FOR THE POTATO CHIPS), until the ingredients are well combined.
  • Pour into a 9x13 baking pan.
  • Top with the crushed potato chips and cover with foil.
  • Bake for 30 minutes, remove the foil and bake for an additional 20 minutes, until the chips are lightly browned.
  • Let the casserole rest for a few minutes before serving.

SWEET POTATO HASH BROWNS WITH GREEN ONION VINAIGRETTE



Sweet Potato Hash Browns with Green Onion Vinaigrette image

1 cup sliced green onions, green part only
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/2 cup olive oil
2 teaspoons honey
Salt and freshly ground black pepper
1/4 cup canola oil
2 tablespoons unsalted butter
1 medium Spanish onion, halved and thinly sliced
Pinch sugar
Kosher salt and freshly ground black pepper
6 large sweet potatoes, cut into 1-inch dice
1 tablespoon finely chopped fresh thyme leaves

Steps:

  • For the vinaigrette: Combine the onions, vinegar, mustard and a few tablespoons of cold water in a blender and blend until smooth. With the motor running, slowly add the olive oil and continue to blend until emulsified. Add the honey and some salt and pepper and pulse a few more times to combine.
  • For the hash browns: Heat 1 tablespoon of the oil and 1 tablespoon of the butter in a medium saute pan over medium heat. Add the onions and a pinch of sugar and cook, stirring occasionally, until the onions are golden brown and caramelized, about 30 minutes. Season with salt and pepper.
  • While the onions are caramelizing, put potatoes in a medium pot of cold, salted water. Bring the water to a boil and cook until nearly tender but a knife inserted into the centers still meets a little resistance, 10 to 12 minutes. Drain through a colander and then drain on paper towels.
  • Heat the remaining butter and oil on a cast-iron griddle or in a skillet over medium-high heat. Add the potatoes and cook, pressing firmly with a spatula, until the underside is golden brown, about 5 minutes. Add the caramelized onions and a drizzle of the green onion vinaigrette and toss to coat. Transfer the hash to a platter and drizzle with the remaining green onion vinaigrette.

1-1/2 cups half-and-half cream
1 container (8 ounces) spreadable chive and onion cream cheese
2 tablespoons dried minced onion
1 teaspoon salt
1/2 teaspoon pepper
2 packages (20 ounces each) refrigerated shredded hash brown potatoes
2 cups shredded Swiss cheese
3 tablespoons minced fresh chives, divided
2 tablespoons butter, cubed

Steps:

  • Preheat oven to 375°. In a Dutch oven, combine the first five ingredients; cook and stir over medium heat until blended. Stir in potatoes., In a greased 13x9-in. or 3-qt. baking dish, layer a third of the hash brown mixture and 2/3 cup Swiss cheese; sprinkle with 1 tablespoon chives. Repeat layers. Top with remaining hash brown mixture and cheese; dot with butter., Bake, covered, 35 minutes. Bake, uncovered, 10-20 minutes longer or until edges begin to brown and potatoes are heated through. Let stand 10 minutes before serving. Sprinkle with remaining chives.

Hash browns are almost always on our breakfast menu. Served with warm homemade applesauce along side eggs with either bacon or ham it is the best breakfast. We have it for dinner at least once a month.

2 lb potatoes, quartered
2 Tbsp bacon drippings
2 Tbsp butter, unsalted
1 medium onion, chopped
2 Tbsp fresh parsely, chopped
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper

Steps:

  • 1. Boil potatoes, drain and cool. Dice and set aside.
  • 2. Melt drippings and butter in a cast-iron skillet over medium-high hear. Add potatoes stir until coated with butter mixture. Cook potatoes about 10 minutes, turning occasionally.
  • 3. Add onion and remaining ingredients, stirring gently. Cook an additional 10-15 minutes or until potatoes are brown on all sides.
  • 4. NOTE: I cook the potatoes the night before if we are having a big breakfast with a group and just dice in the morning and proceed. If I am using new potatoes, I don't even bother to peel them.

1/2 cup duck fat
1 onion, finely diced
Kosher salt
1 1/2 pounds russet potatoes, peeled and cut into 1/2-inch dice
1/2 bunch chopped chives

Steps:

  • Add the duck fat to a large, straight-sided pan over medium heat. Add the onions, season with salt, to taste, and saute until the onions are soft, translucent and are very aromatic, about 8 to 10 minutes.
  • Add the potatoes and toss to coat with the duck fat and combine with the onions. Season with salt, to taste. Shake to spread the potatoes into an even layer and press down gently with a spatula to the bottom of the pan. Let the potatoes brown on the bottom, shaking frequently to prevent sticking. Toss the potatoes several more times, press them down again to allow for maximum browning. Don t worry if the potatoes lose their perfect square shape, that s how they roll. When the potatoes are cooked through, about 12 to 15 minutes, taste for seasoning and adjust, if needed (they will). Remove them from the pan to a serving bowl and sprinkle with chopped chives.
  • That s a yummy potato!

SOUR CREAM AND ONION HASH BROWNS



Sour Cream and Onion Hash Browns image

1 tablespoon canola oil
2 white onions, thinly sliced
Kosher salt and freshly ground black pepper
8 Idaho potatoes, peeled and shredded
1/2 cup extra-virgin olive oil
1 cup sour cream
1 cup chopped scallions

Steps:

  • Heat a skillet over medium heat and add the canola oil. Add the onions, season with a pinch of salt and cook, stirring frequently, until the onions are golden brown, 15 to 20 minutes.
  • Meanwhile, season the potatoes with salt and pepper and let sit for 5 minutes. Drain out the excess moisture.
  • Set individual cast-iron pans over medium heat until very hot. Add some olive oil to each pan and a handful of the potatoes. Cook until golden brown and crispy, about 5 minutes. Flip and add more oil if necessary. Cook until golden brown on the second side and cooked through. Repeat with the remaining potatoes.
  • Top each hash brown with some caramelized onions and a dollop of sour cream and chopped scallions.

1 green onion, chopped
1 (16 ounce) package hash brown potatoes
2 cups shredded Cheddar cheese
6 eggs, lightly beaten
1 cup milk
1 (2.64 ounce) package country gravy mix
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x11-inch baking dish.
  • Cook and stir breakfast sausage in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Mix green onion into sausage and spread mixture over bottom of the prepared baking dish. Spread hash brown potatoes in a layer over sausage; top with Cheddar cheese.
  • Whisk eggs, milk, and gravy mix together in a bowl until smooth; pour over casserole. Season with paprika.
  • Bake in the preheated oven until a knife inserted into the center of the casserole comes out clean, about 1 hour. Let stand 10 minutes to firm up before serving.
