THE BEST TUNA SANDWICH

The Best Tuna Sandwich image

Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 (12 ounce) cans of solid albacore tuna (in water)
1 small green bell pepper (finely diced)
1 small red bell pepper (finely diced)
1 small onion (finely diced)
1 celery (finely diced)
2 medium sized dill pickles (finely diced)
4 tablespoons mayonnaise (heaping, use a regular kitchen tablespoon)

Steps:

  • Drain tuna very well and add to large bowl
  • dice all of the above very small as indicated and add to tuna.
  • I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
  • add a few shakes of black pepper and salt (opt).
  • Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!
  • Hope you enjoy & agree this is one of the best Tuna Sandwiches!

HOT CHILLI & LEMON PASTE

Hot Chilli & Lemon Paste image

This paste is great with everything, I even have it with cheese sandwiches for that hot burst of flavour. This recipe originally came from my husband's aunt who is from Mauritius. This paste is in huge demand from family and friends so I'm sure it will be a hit for you. Remember to cook the chilli in a well ventilated room as the fumes can be strong and always use rubber gloves when preparing chillies.

Provided by Tinks123

Categories     Chutneys

Time 54m

Yield 3-4 Medium jars

Number Of Ingredients 6

500 g hot red chili peppers
3 lemons (preferably thin skinned lemons)
2 garlic cloves
1 cm fresh ginger
vegetable oil
1/2 teaspoon salt

Steps:

  • Wash chillies and remove stalks (Note: Use rubber gloves).
  • Cut chillies in half lengthways.
  • Wash and cut lemons into quarters.
  • Crush garlic and finely chop ginger.
  • Put all above ingredients into food processor and blend in batches until paste consistency is as desired, adding small amounts of oil if dry.
  • In a heavy based pan cover bottom with oil and heat to medium high, when a small amount of paste is dropped into the oil it should sizzle.
  • (Note: only cook chilli in well ventilated area as fumes are strong).
  • Add paste to hot oil, add salt and stir constantly.
  • As soon as paste turns from red to orange (about 3 - 4 mins) remove from heat, stir and allow to cool.
  • Once cool put into sterilised jars and top with oil so that there is a thin layer of oil on top of paste and refrigerate.
  • In cool weather this can be stored in a cupboard.
