I've said it many times in my front page and in recipes...I LOVE Green Chilis! Here is another one of my twisted uses for those giant bags of roasted green chilis that fill my freezer from September to December of every year.

1/3 cup scallion, minced
2 garlic cloves, minced
1/3 cup tomatillo, minced
1/2 cup green chili, roasted, seeded, peeled, and minced
1 cup Cotija cheese, fresh grated
1/2 cup ricotta cheese
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cumin
24 wonton wrappers
1/3 cup white onion, diced
1 garlic clove, minced
1 tablespoon butter
1 tablespoon olive oil
1/4 teaspoon cumin
1/4 cup chicken stock
1 cup cream
salt
pepper
2 tablespoons cilantro, chopped
2 tablespoons walnuts, chopped

Steps:

  • Raviolis:.
  • Mix together first 10 ingredients in a large bowl and use as filling for your Raviolis (made from the won ton wrappers).
  • Cook in a pot of salted boiling water for 2-3 minutes.
  • Sauce:.
  • Melt butter and olive oil in a saute pan over medium heat. Add onion and cook until soft, about 3-4 minutes. Add garlic, cook for 1 more minute.
  • Add cumin, chicken stock, cream, salt, & pepper. Increase heat to high, bring to a boil and reduce to a simmer, cook for an additional 3-4 minutes stirring often. Remove from heat.
  • Serve Raviolis with the cream sauce topped with the walnuts and cilantro.
  • Enjoy!

Baked Ravioli is a concoction made out of wanting something Italian and needing to clear some things out of the freezer. I usually keep bags of frozen ravioli on hand to make them fried - which is oh so good.

2 lbs ground beef
1 small onion, diced
2 teaspoons garlic salt
2 (25 ounce) packages frozen cheese ravioli, thawed
2 (14 ounce) jars spaghetti sauce
1 (14 1/2 ounce) can diced tomatoes
1 cup white wine
4 cups mozzarella cheese, shredded
1 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 350F.
  • Crumble the ground beef into a large skillet over medium-high heat. Add onion and garlic salt. Cook and stir until no longer pink. Drain grease, then stir in the spaghetti sauce, wine and tomatoes.
  • Spread 1/3 of the sauce in the bottom of an 9X13 inch baking dish. Arrange 1/2 of the ravioli over the sauce. Sprinkle half of the mozzarella cheese and repeat layers. Sprinkle Parmesan cheese on top. Cover with aluminum foil.
  • Bake for 25 minutes in the preheated oven. Remove foil and bake another 10-20 minutes until bubbly. Rest for 10-15 minutes before serving.

This recipe comes from thatsmyhome.com. It is a nice combination of beef, spinach and ravioli in a sauce that's given a Greek accent with olives and feta cheese.

1 (9 ounce) package cheese ravioli
1 1/4 lbs lean ground beef
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic, undrained
2 cups lightly packed fresh Baby Spinach, plus additional leaves for garnish
1 cup pitted ripe olives
1/2-3/4 cup crumbled feta cheese

Steps:

  • Cook ravioli according to package directions; drain.
  • Meanwhile, brown beef in a deep 12-inch nonstick skillet over medium heat for 6 minutes, or until beef loses its pink color, breaking up into 3/4-inch crumbles.
  • Stir in tomatoes; bring to a boil. Reduce heat, simmer 10 minutes. Stir in ravioli; simmer 3 minutes. Stir in the 2 cups of spinach and olives; cook just until spinach is wilted.
  • Sprinkle with cheese before serving. Garnish with fresh spinach leaves.

WHITE BEAN GREEN CHILI WITH GROUND PORK

I love white chili, I love green chiles, and I love ground pork - so I created this crockpot recipe to combine all flavors!

1 lb white beans, soaked overnight rinsed, and strained
1 lb ground pork
1/2 lb green chili
2 garlic cloves, peeled and finely minuced
1/2 onion, chopped
1 (8 ounce) can chicken broth
1 tablespoon cumin
1 tablespoon garlic powder
1 tablespoon chili powder
1 tablespoon paprika
1 tablespoon black pepper
1 teaspoon salt

Steps:

  • Brown ground pork and strain grease (although when I've been in a hurry, I've skipped this step and put it in the crock pot raw and it didn't ultimately hurt the flavor at all).
  • Rinse and strain beans
  • Combine all ingredients in crockpot, adding however much water the bag of beans directs (include the chicken broth in this measurement)
  • *Note - you can use canned green chiles (if so, use about 3 cans) or fresh Hatch green chiles, when in season!
  • Stir ingredients, set crockpot to high, let simmer on high for about 30 minutes.
  • Turn crockpot to low, let cook as long as needed, I usually do about 8 hours, although it'd be ready to eat around 6 hours.

1 tablespoon vegetable oil
1 medium onion, chopped
1 lb lean ground beef
1 1/2 teaspoons dried oregano
3 tablespoons chili powder
1 teaspoon salt
2 (16 ounce) cans chili beans (pinto beans packed in chili sauce)
1 (28 ounce) can crushed tomatoes
25 ounces frozen cheese ravioli (or so)
4 ounces grated sharp cheddar cheese

Steps:

  • Heat vegetable oil in a wide deep skillet or dutch oven.
  • Add onion, and cook over medium-high heat for 5 mins until onion is translucent.
  • Add ground beef and, using a large spoon or fork to break up, cook until the meat is browned.
  • Add next 5 ingredients, rinsing out each can with a few tablespoons of water and adding the water to the pot.
  • Cook for 15-20 minutes to let the flavors blend.
  • Salt to taste.
  • As the chili simmers, bring a large pot of water to boil and salt the water.
  • When the water boils, add the frozen ravioli, and when the water returns to a boil, lower heat to simmer.
  • Cook 4 or 5 mins until ravioli is cooked through.
  • Place in serving bowls with chili over the top, sprinkled with grated cheese.

EASY CHEESE RAVIOLI

I use Buitoni Low Fat 4 cheese ravioli found in the refrigerated section. I put 1 T olive oil in the instructions, but just use the smallest amount as you can to sucessfully saute your veggies and coat your ravioli. This is quick and easy.

9 ounces low-fat cheese ravioli
3 fresh garlic cloves, minced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 roma tomato, chopped
1 tablespoon extra light olive oil
1/4 cup parmesan cheese, grated
fresh ground black pepper

Steps:

  • Boil and drain ravioli.
  • Meanwhile heat small amount of olive oil in pan.
  • Saute the peppers for a few minutes, then add garlic and saute until all is done to your liking.
  • Remove from heat and toss with cooked ravioli. Add tomatoes and toss til mixed.
  • Put on serving plate and top with grated parmesan and fresh ground black pepper.

1 cup frozen baby peas, thawed
1 small shallot, finely chopped
1 1/2 teaspoons olive oil
3 tablespoons freshly grated aged monterey jack cheese or 3 tablespoons parmesan cheese
3 tablespoons fine fresh breadcrumbs
pasta dough or wonton wrapper
1/3 cup rice vinegar
1/8 cup dry white wine
1 teaspoon heavy cream
1/3 cup unsalted butter, cubed and chilled
1/4 teaspoon truffle oil (optional)

Steps:

  • Force peas through the fine disk of a food mill into a bowl to remove skins.
  • Cook shallot in oil in a small skillet over moderately low heat, stirring occasionally, until softened. Remove from heat and stir into pea puree with cheese and crumbs. Season filling with salt and pepper.
  • Fill ravioli with a level teaspoon of filling in each. Transfer to a baking sheet lined with a dry kitchen towel. Ravioli may be made up to this point 1 day ahead, covered and refrigerated or they can be frozen.
  • To make the sauce: Simmer the vinegar and wine over medium heat and reduce until it forms a light syrup (watch carefully toward the end as it tends to burn). Add the cream and reduce heat to low. Whisk in butter pieces one at a time, until emulsified. Add truffle oil, if using. Salt to taste. Set aside and keep warm until ravioli are cooked.
  • Cook ravioli in a large pot of boiling salted water until al dente, 2 to 3 minutes, then drain. Toss with sauce then serve immediately.
