1 pork tenderloin (1 pound), cut into 1-in. pieces
2 cans (15 ounces each) hominy, rinsed and drained
1 can (4 ounces) chopped green chiles
1/4 teaspoon salt
1/4 teaspoon pepper
4 cups chicken broth, divided
3 tomatillos, husked and chopped
Optional: Sliced avocado, lime wedge, sliced jalapenos, sliced radishes, chopped cilantro and sour cream

Steps:

  • Place first 5 ingredients and 3-3/4 cups broth in a 3- or 4-qt. slow cooker. Puree tomatillos with remaining broth in a blender; stir into pork mixture., Cook, covered, on low until pork is tender, 4-5 hours. If desired, serve with avocado and other toppings.

2 pounds turkey breast tenderloins
non-stick cooking spray
2 (15.5 ounce) cans yellow hominy, drained
2 (7 ounce) cans salsa verde
1 (8 ounce) can chopped green chile peppers
1 (4 ounce) can diced jalapeno peppers
salt and ground black pepper to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate. Coat turkey tenderloins lightly with cooking spray.
  • Cook turkey on the grill until no longer pink in the center and juices run clear, about 5 to 7 minutes per side. Remove turkey from heat and allow to rest for 10 minutes. Slice turkey into 1/2 inch strips.
  • Mix together turkey, hominy, salsa verde, green chiles, and jalapenos in a large stock pot; bring to a boil. Reduce heat to low and simmer until thickened, about 45 minutes. Season with salt and pepper.

PORK AND GREEN CHILE POSOLE

1-2 lb pork loin cut in 1-inch pieces
1 onion, coarsely chopped
5 tomatillo, quartered
28 oz canned white hominy (2 14 oz. cans) drained
1 1/2 c frozen corn
3 Tbsp chopped cilantro (plus more for garnish)
5 c chicken broth, low salt
1 1/2 c chopped green chilies (canned)
3 Tbsp minced garlic
4 tsp red chili powder
2 tsp cayenne pepper
1 Tbsp crushed red pepper
1 Tbsp oregano, dried
2 Tbsp canola oil
coarse salt
black pepper
10 oz cotija cheese (crumbled) for garnish

Steps:

  • 1. In skillet, heat oil to shimmer and add pork, onion, garlic, salt and crushed red pepper. Sauté meat and onion mixture until onions are translucent and the pork juices run clear.
  • 2. Remove contents of skillet to a slow cooker. Deglaze skillet with 1 cup of broth and add this to slow cooker as well.
  • 3. Add tomatillos, 1 can of hominy, cilantro, oregano, broth, green chilies and spices to slow cooker. Turn cooker on medium, giving a stir after about 1 hour. Check for seasoning and add additional as necessary. Reduce to low/warm and cover and heat for an additional 2 hours.
  • 4. 30 minutes before service, raise temp back to high and add last can of hominy and frozen corn. Check for seasoning and add additional as necessary. Ladle into bowls and garnish with fresh cilantro and Cotija cheese. Serve with warm tortillas.

2 cups onions, chopped
1 cup celery, chopped
4 garlic cloves, chopped
1 lb pork tenderloin, cut into 1/2-inch cubes
5 cups reduced-sodium chicken broth (may need more)
2 (15 ounce) cans yellow hominy, drained (can use white instead of yellow)
12 ounces fresh tomatillos, husked, rinsed, and coarsely chopped
2 (7 ounce) cans diced mild green chilies, drained
4 teaspoons ground cumin
4 teaspoons chili powder
1/4 cup chopped fresh cilantro, plus additional (to garnish)

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions, celery, and garlic. Saute wntil soft, about 7 minutes. Sprinkle pork with salt and pepper. Add pork to pot; cook until no longer pink on outside, stirring often, about 3 minutes. Add 5 cups broth and next 5 ingredients.
  • Bring to boil, reduce heat to medium-low, and simmer uncovered until meat is tender, broth is reduced to thick sauce, and flavors blend, stirring occasionally, about 1 hour. Thin with additional broth, if desired. Stir in 1/4 cup cilantro. Season to taste with salt and pepper. Divided among bowls, sprinkle with additional cilantro, and serve.

1 poblano chile
1/2 pound fresh tomatillos, husks removed
2 serrano chiles, stemmed, quartered, and seeded
1/2 medium yellow onion, diced medium
4 garlic cloves, chopped
1 cup roughly chopped fresh cilantro, plus more for serving
1/2 cup roughly chopped fresh parsley
1 ounce baby spinach leaves (1 cup)
1 teaspoon ground cumin
1 teaspoon dried oregano (preferably Mexican)
1/4 teaspoon ground allspice
6 cups low-sodium vegetable or chicken broth
2 cans (15 ounces each) hominy, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2 tablespoons fresh lime juice
Coarse salt
Grated Monterey Jack cheese, for serving

Steps:

  • Heat broiler with rack in top position. Broil poblano until charred, about 5 minutes per side. Transfer to a paper sack or zip-top plastic bag, close it tightly, and let steam 20 minutes. Rub poblano with paper towels to remove skin. Stem, seed, and place in a blender.
  • In a large pot of boiling water, cook tomatillos until soft, about 5 minutes; drain. Add tomatillos to blender, along with serranos, onion, garlic, cilantro, parsley, spinach, cumin, oregano, allspice, and 2 cups broth. Blend until smooth.
  • Pour tomatillo mixture into a large pot; stir in 4 cups broth, hominy, and black beans. Bring to a boil over high; reduce heat to low and simmer, uncovered, until slightly thickened, 45 minutes. To serve, stir in lime juice, season with salt, and sprinkle with cheese and cilantro.

1 large yellow onion, cut
into wedges
3 large poblano chiles
1 serrano chile
1 1/2 lbs. tomatillos, husks
removed, rinsed
4 unpeeled garlic cloves
2 dried ancho chiles, stemmed
and seeded
About 1 cup salted, roasted pumpkin seeds(pepitas) divided
2 cans(29 oz each) white
hominy, rinsed and drained
5-6 vegetable broth
About 5 tsp dried oregano, divided
1 large zucchini, cut into large dice
Accompaniments: corn tortillas, cilantro leaves, thinly sliced green onions, and crumbled cotija cheese

Steps:

  • 1.Preheat broiler with oven rack 3 inches from heat source. Set yellow onion, poblanos, serrano. tomatillos, and garlic on a rimmed baking sheet. Broil, turning, until vegetables are browned to blackened all over, 15 to 30 minutes, moving them to a bowl as browned. Let cool. 2.Toast ancho chiles in a large pot over medium heat until fragrant, pressing down with tongs and turning occasionally, about 3 minutes. Turn off heat. 3.Peel and seed poblanos and serrano. Peel garlic. Whirl serrano, garlic, onion, tomatillos and any juices, and 1/2 cup pumpkin seeds in a food processor until very smooth, Pour into pot with whole anchos(they'll fall apart as they cook) Coarsely chop poblanos and add to pot. 4.Stir in hominy, 5 cups broth, tsp oregano and the cumin. Cover, bring to a boil over high heat, then reduce heat and simmer, stirring occasionally, until cumin flavor is mellow, about 45 minutes. Discard any large pieces of ancho chile. 5. Stir zucchini into posole and simmer just until tender, about 5 minutes. Stir in more broth if you'd like a thinner soup. 6. Ladle posole into bowls and serve with remaining pumpkin seeds and oregano and other accompaniments to taste.

Yield Serves a big bowl of each to at least 10-12.

Number Of Ingredients 14

For both dishes:
4 lbs. cubed beef (or pork or chicken)
4 large chopped onions
Corn oil to saute
6 cloves minced garlic
3T Mexican oregano
Water to cover
2t beef boullion granules to enrich stock (or chicken-flavored granules, if that's the meat you're using)
Garlic salt and black pepper to taste
For posole:
One package frozen or dried posole (hominy) or 3 cans hominy, extremely well-rinsed, if other types aren't available.
At least 5T powdered red chile (preferably Hatch, available in mild, medium or hot)
For Green Chile Stew:
At least 4 c. fire-roasted fresh or frozen green chile, chopped coarsely. (Hatch super-hot is my pick, but suit yourself. Canned chiles are acceptable only in dire emergencies, such as when I lived in Sicily.)

Steps:

  • In large Dutch oven, saute cubed beef or pork (or, if you're making the chicken version, boil the bird and shred the meat, reserving the stock). In second large Dutch oven, saute onions and garlic until golden. Divide contents equally among the two pans. Add oregano, water and bouillon granules to both and bring to boil. To the posole pan, add posole and red chile. To the green chile pan, add green chile (Additional vegetables such as chopped potato and carrot can also be included, if you like, but I'm a purist about my Bowl of Green.) Cover both pans and reduce heat Simmer until meat is tender and flavors blend, stirring occasionally and adding more water as necessary. Adjust seasonings before serving. If some in your group like their posole mild, go easy on the chile -- but give the wild ones extra Red Sauce to ladle in. Simply whisk more powdered red chile with hot stock from the pot, mixing to the consistency of thick enchilada sauce.
